CURRY UDON
A great Japanese winter noodle soup dish! My absolute favorite meal while living in Japan. Add udon to the curry broth all at once, or to each serving bowl.

Steps:
- Place carrots and onion in a microwave-safe bowl; add water. Cover and microwave on high until tender, about 4 minutes.
- Heat oil in a large pot over medium heat. Whisk in 1/2 cup plus 2 tablespoons flour to form a paste, 1 to 2 minutes. Stir in curry powder. Whisk in hot vegetable stock slowly until incorporated and smooth, about 3 minutes. Stir steamed carrots and onion, soy sauce, and maple syrup into the curry broth.
- Bring a large pot of water to a boil. Cook udon noodles in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 10 to 12 minutes. Drain. Add noodles to curry broth.

Steps:
- Cut chicken into bite-sized pieces. Slice onion and carrot into thin long pieces. Heat a deep pan and saute the chicken, onion, and carrot. Salt the ingredients. Add in the pan and simmer until ingredients are soften. Add curry roux in the soup and bring to a boil. Add potatostarch and water mixture in the soup to thicken. Add udon noodles in the curry soup and heat. Add soy sauce in the udon soup and sprinkle chopped green onion over it.
- For serving: Stir sprouts into beaten eggs and pour over hot oil and serve over a bowl of curry udon.

CURRY UDON
Japanese curry? Actually, curry has been a part of Japanese cuisine for more than a hundred years. The Japanese navy adopted it in the nineteenth century from their British counterparts, who ate it on ships. Soon, eating curry on Friday became a Japanese naval tradition. And not just for sailors. Japanese citizens fell in love with curry, too, especially kids. I should know-I was one of them. When I was growing up, I was crazy about curry. Now my own kids adore it, especially in this dish. You can use any cut of beef that you like. If you want to go upscale, try rib eye, but even beef scraps work just fine.

- Set a large sauté or wide-bottomed pan over high heat and add 1 1/2 tablespoons of the oil. When the oil is hot, about 30 seconds, add the onions and salsify. Cook for 1 minute, then decrease the heat to medium and cook, stirring often, until the onions are soft, approximately 45 seconds longer. Add the curry powder and continue cooking, stirring often, until it has been absorbed, about 30 seconds.
- Pour the broth over the vegetables and increase the heat to high. Add the curry sauce mix and stir until dissolved, about 2 minutes. Stir in the milk and heat for 1 minute. Stir in the beef and cook over medium heat until the meat is cooked through, 2 1/2 to 3 minutes.
- Place a large pot of water over high heat and bring to a boil. Add the noodles and cook, following package instructions. Drain well. Divide the noodles among 4 bowls. Into each bowl pour one-fourth of the curry broth and the beef and garnish with the scallions and mitsuba leaves.

- In a 2 quart saucepan, heat the oil. Add the flour and cook, stirring for a minute over low heat. Add the curry powder and cook another minute. Whisk in the hot vegetable stock all at once: it will thicken almost instantaneously. Add the soy sauce and syrup and cook until thick enough to coat the back of a wooden spoon.
- Cook the udon noodles in a large pot of boiling water. When al dente, drain well, rinse and place into 4 large bowls. Fill each bowl with curry sauce, top with scallions and serve immediately.
