Chicken Curry Pasta with juicy chicken, onions, tomatoes, and mixed veggies in a flavorfully seasoned curry sauce. This is a delicious, no-guilt dinner that is rich and creamy thanks to a healthy coconut-based curry sauce.

1 pound Chicken Breast or Boneless-Skinless Chicken Thighs (Cut into Strips) (cut into bite size pieces)
1 cup mixed veggies (frozen or fresh)
1 medium Onion (cut into thin strips)
3 ripe Roma tomatoes (finely diced)
4 tbsp Olive oil (extra virgin)
1 tsp Garlic-ginger paste
1 tsp Coriander powder
1 tsp Salt
1 tsp Cumin powder
1/2 tsp Black pepper
1 1/2 tsp Curry powder
1/2 tsp Chili powder OR Chili flakes
1 can Coconut milk (250 ml)
3 cups Fusili pasta (OR any pasta of choice)
Water (for cooking pasta)

Steps:

  • Mix all the seasoning in a small bowl. Use half to season the chicken. Keep the other half aside for later.
  • Place the chicken strips in a large bowl and coat thoroughly with the seasoning.
  • Heat olive oil in a large skillet over medium heat. In that, cook and brown the seasoned chicken till cooked and browned to perfection; about 8 minutes. Drain from the skillet and set aside.
  • In the same skillet, sauté onions till golden brown; about 3 minutes. To that, add garlic-ginger paste and sauté for a minute till nicely fragrant.
  • Add chopped tomatoes and sauté till cooked and nicely broken down; about 5 minutes. To that, add the coconut milk, broccoli and the rest of the seasoning, and mix well. Cover and simmer for 10 minutes.
  • Meanwhile, bring water to a boil in a large pot and season generously with salt. Add Pasta and boil for 8 to 9 minutes or according to the instructions on the package. Drain in a colander.
  • Add cooked chicken and cooked pasta to the broccoli sauce and mix well. Add coriander leaves, mix well and serve hot or warm.

¼ cup chickpea flour (besan)
4 red bell peppers, seeded and diced
3 fresh curry leaves
1 pound cubed skinless, boneless chicken
1 tablespoon ginger garlic paste
1 teaspoon ground turmeric
2 teaspoons hot paprika
¼ cup water
1 (2 ounce) package coconut milk powder
1 cup water
1 (16 ounce) package spaghetti
3 green chile peppers, sliced into thin rings
½ cup chopped fresh cilantro
1 lemon, cut into thin slices

Steps:

  • Heat a small skillet over medium heat. Add the chickpea flour and cook, stirring frequently, until the flour darkens slightly and smells fragrant, about five minutes. Remove the pan from the heat and pour the toasted chickpea flour into a bowl to cool.
  • Heat a nonstick skillet over medium-high heat. Add the red bell peppers and curry leaves and cook for 2 minutes, stirring constantly. Mix in the cubed chicken and cook, stirring frequently, until no longer pink, about 5 minutes. Stir in the ginger-garlic paste and fry for 30 seconds.
  • Combine the turmeric, cayenne pepper, and chickpea flour. Sprinkle the spice mixture over the chicken mixture and cook, stirring constantly, for 2 minutes. Pour in 1/4 cup of water to prevent the spices from sticking to the bottom of the pan. Dissolve the coconut powder in 1 cup of water. Pour it over the chicken mixture and reduce the heat to low. Stir the mixture occasionally while you prepare the pasta.
  • Fill a large pot with well-salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
  • Transfer the hot spaghetti to a serving bowl and pour the chicken mixture over the pasta. Garnish with sliced green chilies, cilantro, and lemon slices.

2 garlic cloves (, minced)
2 tsp ginger (, grated)
1/2 onion (, finely chopped)
500g / 1lb chicken thighs, sliced ((Note 1))
2.5 tbsp curry powder ((Note 2))
270 ml / 1.25 cups coconut milk (, full fat (9 oz) (Note 3))
1.5 cups (375 ml) chicken stock low sodium
1/2 tsp salt
3/4 cup frozen peas
1/4 cup coriander / cilantro leaves (, chopped)

Steps:

  • Heat oil in a skillet over medium high heat. Cook garlic, ginger and onion for 3 minutes until onion is translucent.
  • Add chicken and cook until it it changes from pink to white.
  • Add curry powder and cook for 2 minutes.
  • Add coconut milk and chicken stock. Stir, lower heat to medium and cook, simmering rapidly, for 10 minutes until sauce reduces and thickens.
  • Add peas and salt. Cook for a further 2 minutes, then taste to see if it needs more salt. Garnish with coriander.
  • Serve over rice, noodles or mashed potato!

6 oz. weight Dry Pasta, Cooked And Drained
4 whole Ribs Celery, Thinly Sliced - Leaves Included (use Interior Ribs)
3/4 c. Golden Raisins
3/4 c. Slivered Almonds
1/2 c. Mayonnaise
1/2 c. Sour Cream
1 c. Heavy Cream
3 tbsp. Curry Powder, More Or Less To Taste
1 tbsp. Sugar, More Or Less To Taste
1 tsp. Kosher Salt
Freshly Ground Black Pepper

Steps:

  • Boil chicken to cook. Boil pasta in chicken broth. Dice/shred chicken. Drain pasta.Mix together mayonnaise, sour cream, heavy cream, curry powder, sugar, salt, and pepper. Whisk together until well combined. Combine chicken, drained pasta, sliced celery, raisins, and almonds in a large bowl. Pour curry dressing over the top. Fold together with a rubber spatula. Make sure it's all combined, then add more of whatever it needs. Make sure the sweet/savory balance is right for you! (I like mine a little sweet.)Chill for several hours. Serve with juicy grapes on the side.

1 (8 ounce) package pasta shells
1 cup reduced-calorie mayonnaise
1 cup fat-free plain yogurt

100 ml heavy cream

Steps:

  • Put the pasta in boiling water and cook for the minutes it requires (10 to 12 usually).
  • Heat oil in a skillet, when hot put in the garlic.
  • After the garlic is starting to brown, add chicken and curry, stir.
  • After the chicken is cooked, add heavy cream.

If you like pasta, this is a great alternative to traditional Italian. This recipe is from rossipasta.com. They have all the hard to find flavored pastas (I used curry linguini). The version below was made to my liking which increased the curry and veggies. You can prepare the chicken however you like (whole cut up, boneless, grilled, smoked etc.). I had some whole smoked beer can chicken so I de-boned and cubed 1 pound.

1 lb cooked chicken, then cubed (or whole)
1/2 cup almonds (sliced)

1 tablespoon olive oil

Steps:

  • Start preparation for pasta.
  • Cook chicken to your liking in olive oil or If you will be using cooked chicken as I did you will add it later.

1 tablespoon Thai curry paste
2 tablespoons curry powder
2 teaspoons minced fresh ginger
3 cloves garlic, minced
Dash cayenne pepper
Kosher salt and freshly ground black pepper
8 ounces high-fiber whole wheat linguine, (recommended: DeCecco)
Olive oil cooking spray
1 vidalia onion, chopped
1 pound boneless skinless chicken breast, fat removed, cut into small pieces
Kosher salt and freshly ground black pepper
2 tablespoons curry powder
2 tablespoons peanut butter
1 cup thinly sliced roasted red peppers
1 cup thinly sliced water chestnuts
1 cup scallions, white and green parts, thinly sliced
Chopped fresh mint and cilantro leaves, for garnish
Lime wedges, for serving

Steps:

  • For the sauce: In a medium bowl, combine all of the sauce ingredients, whisk until thoroughly combined and set aside.
  • For the chicken: Cook the whole wheat linguine al dente according to box directions. Drain and rinse under cold water and spray lightly with olive oil cooking spray so it does not stick and set aside.
  • Coat a large nonstick skillet with cooking spray and add onions. Cook until translucent and beginning to brown, about 5 to 10 minutes. Add the chicken, season with salt and pepper and stir in curry powder. Saute chicken until lightly brown. Add the peanut butter and allow it to melt to coat the chicken.
  • Add the roasted red peppers, water chestnuts and scallions and season with salt and pepper as you like. Saute for a few minutes just to release flavor.
  • Pour the coconut curry sauce over the chicken and vegetables and stir gently. Cook just until warmed through and thickened a bit, about 3 to 5 minutes. Season with salt and pepper, as needed. Garnish with chopped mint and cilantro. Serve with lime wedges, if desired.
  • SUZY'S SERVING OPTIONS: (Serves four or more ? can be doubled easily)
  • Family Style ? Put linguine in a large deep platter or decorative bowl and pour mixture over the top. Toss gently with tongs. Garnish with fresh lime juice, and chopped scallions or herbs.
  • Low Carb Diets ? On a large dinner plate place Boston lettuce leaves in a fan covering the entire plate. Place 1/4 of the chicken mixture on top and drizzle with fresh lime juice and garnish with scallions. The sauce will form a natural salad dressing for the lettuce.
  • Individual Plates: Each serving is 2 oz. dry pasta and 1/4 of the chicken mixture. Garnish it with fresh lime juice, a lime wedge and scallions or herbs. Serve it on a small exotic plate for added presentation.
  • NOTE: You may substitute shrimp or tofu for the chicken and it is equally delicious!!

1 tablespoon finely chopped drained bottled mango chutney, or to taste

Steps:

  • In a large kettle of boiling salted water cook the pasta for 10 minutes, or until it is tender, refresh it in a colander under cold water, and drain it well. In a large bowl combine the pasta, the chicken, the tomatoes, the scallions, and the basil.
  • Make the dressing:
  • In a skillet cook the garlic and the gingerroot in the butter over moderately low heat, stirring, until the garlic is softened, add the cream, and cook the mixture, whisking, until it is thickened slightly. Whisk in the vinegar, the curry powder, the red pepper flakes, and the chutney.
  • Add the dressing to the pasta mixture, tossing the salad to combine it well, and season the salad with salt and pepper.

1 cup unsalted or low-sodium chicken stock
1/2 cup dry white wine

Steps:

  • Gather the ingredients.
  • Chop the parsley. Slice the green onions thinly. Finely mince the garlic.
