Chicken Curry Pasta with juicy chicken, onions, tomatoes, and mixed veggies in a flavorfully seasoned curry sauce. This is a delicious, no-guilt dinner that is rich and creamy thanks to a healthy coconut-based curry sauce.

Steps:
- Mix all the seasoning in a small bowl. Use half to season the chicken. Keep the other half aside for later.
- Place the chicken strips in a large bowl and coat thoroughly with the seasoning.
- Heat olive oil in a large skillet over medium heat. In that, cook and brown the seasoned chicken till cooked and browned to perfection; about 8 minutes. Drain from the skillet and set aside.
- In the same skillet, sauté onions till golden brown; about 3 minutes. To that, add garlic-ginger paste and sauté for a minute till nicely fragrant.
- Add chopped tomatoes and sauté till cooked and nicely broken down; about 5 minutes. To that, add the coconut milk, broccoli and the rest of the seasoning, and mix well. Cover and simmer for 10 minutes.
- Meanwhile, bring water to a boil in a large pot and season generously with salt. Add Pasta and boil for 8 to 9 minutes or according to the instructions on the package. Drain in a colander.
- Add cooked chicken and cooked pasta to the broccoli sauce and mix well. Add coriander leaves, mix well and serve hot or warm.

- Heat a small skillet over medium heat. Add the chickpea flour and cook, stirring frequently, until the flour darkens slightly and smells fragrant, about five minutes. Remove the pan from the heat and pour the toasted chickpea flour into a bowl to cool.
- Heat a nonstick skillet over medium-high heat. Add the red bell peppers and curry leaves and cook for 2 minutes, stirring constantly. Mix in the cubed chicken and cook, stirring frequently, until no longer pink, about 5 minutes. Stir in the ginger-garlic paste and fry for 30 seconds.
- Combine the turmeric, cayenne pepper, and chickpea flour. Sprinkle the spice mixture over the chicken mixture and cook, stirring constantly, for 2 minutes. Pour in 1/4 cup of water to prevent the spices from sticking to the bottom of the pan. Dissolve the coconut powder in 1 cup of water. Pour it over the chicken mixture and reduce the heat to low. Stir the mixture occasionally while you prepare the pasta.
- Fill a large pot with well-salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
- Transfer the hot spaghetti to a serving bowl and pour the chicken mixture over the pasta. Garnish with sliced green chilies, cilantro, and lemon slices.

EASY CHICKEN CURRY
Recipe video above. This is a Western style curry, and it's the easiest chicken curry I know how to make with the least ingredients possible without sacrificing tastiness! Very mild, not spicy at all (assuming curry powder is mild).

- Heat oil in a skillet over medium high heat. Cook garlic, ginger and onion for 3 minutes until onion is translucent.
- Add chicken and cook until it it changes from pink to white.
- Add curry powder and cook for 2 minutes.
- Add coconut milk and chicken stock. Stir, lower heat to medium and cook, simmering rapidly, for 10 minutes until sauce reduces and thickens.
- Add peas and salt. Cook for a further 2 minutes, then taste to see if it needs more salt. Garnish with coriander.
- Serve over rice, noodles or mashed potato!

CURRIED CHICKEN PASTA SALAD

- Boil chicken to cook. Boil pasta in chicken broth. Dice/shred chicken. Drain pasta.Mix together mayonnaise, sour cream, heavy cream, curry powder, sugar, salt, and pepper. Whisk together until well combined. Combine chicken, drained pasta, sliced celery, raisins, and almonds in a large bowl. Pour curry dressing over the top. Fold together with a rubber spatula. Make sure it's all combined, then add more of whatever it needs. Make sure the sweet/savory balance is right for you! (I like mine a little sweet.)Chill for several hours. Serve with juicy grapes on the side.

CURRY CHICKEN AND PASTA
If you like pasta, this is a great alternative to traditional Italian. This recipe is from rossipasta.com. They have all the hard to find flavored pastas (I used curry linguini). The version below was made to my liking which increased the curry and veggies. You can prepare the chicken however you like (whole cut up, boneless, grilled, smoked etc.). I had some whole smoked beer can chicken so I de-boned and cubed 1 pound.

- Start preparation for pasta.
- Cook chicken to your liking in olive oil or If you will be using cooked chicken as I did you will add it later.
- Add vegetables, almonds and sesame oil and cook for 3 minutes over medium heat.
- Add curry powder and mix well.
- Add olive oil (unless you used it to cook chicken) and cooked chicken, mix well.
- Let the mixture simmer thoroughly for about 10 minutes.
- Toss with warm pasta and serve.

COCONUT CURRY THAI CHICKEN
Steps:
- For the sauce: In a medium bowl, combine all of the sauce ingredients, whisk until thoroughly combined and set aside.
- For the chicken: Cook the whole wheat linguine al dente according to box directions. Drain and rinse under cold water and spray lightly with olive oil cooking spray so it does not stick and set aside.
- Coat a large nonstick skillet with cooking spray and add onions. Cook until translucent and beginning to brown, about 5 to 10 minutes. Add the chicken, season with salt and pepper and stir in curry powder. Saute chicken until lightly brown. Add the peanut butter and allow it to melt to coat the chicken.
- Add the roasted red peppers, water chestnuts and scallions and season with salt and pepper as you like. Saute for a few minutes just to release flavor.
- Pour the coconut curry sauce over the chicken and vegetables and stir gently. Cook just until warmed through and thickened a bit, about 3 to 5 minutes. Season with salt and pepper, as needed. Garnish with chopped mint and cilantro. Serve with lime wedges, if desired.
- SUZY'S SERVING OPTIONS: (Serves four or more ? can be doubled easily)
- Family Style ? Put linguine in a large deep platter or decorative bowl and pour mixture over the top. Toss gently with tongs. Garnish with fresh lime juice, and chopped scallions or herbs.
- Low Carb Diets ? On a large dinner plate place Boston lettuce leaves in a fan covering the entire plate. Place 1/4 of the chicken mixture on top and drizzle with fresh lime juice and garnish with scallions. The sauce will form a natural salad dressing for the lettuce.
- Individual Plates: Each serving is 2 oz. dry pasta and 1/4 of the chicken mixture. Garnish it with fresh lime juice, a lime wedge and scallions or herbs. Serve it on a small exotic plate for added presentation.
- NOTE: You may substitute shrimp or tofu for the chicken and it is equally delicious!!

- In a large kettle of boiling salted water cook the pasta for 10 minutes, or until it is tender, refresh it in a colander under cold water, and drain it well. In a large bowl combine the pasta, the chicken, the tomatoes, the scallions, and the basil.

- Gather the ingredients.
- Chop the parsley. Slice the green onions thinly. Finely mince the garlic.
- Pat the chicken breasts dry and lightly sprinkle them all over with salt and pepper. Dredge each of them in flour to coat both sides.
- In a large skillet or sauté pan, heat the oil and butter over medium heat. Add the chicken breasts and cook for about 4 to 5 minutes on each side, until lightly browned. Add the chicken broth, wine, parsley, green onions, garlic, and curry powder. Bring to a boil; reduce the heat to medium-low and simmer, uncovered, for 5 minutes.
- Cover the pan and simmer for 5 to 10 minutes longer.
- Stir in the cream and add salt to taste. Heat through.
- Remove the chicken and sauce to a serving dish.
- Serve chicken breasts over hot cooked rice with some of the sauce.
