AUTHENTIC GREEK TZATZIKI

Authentic Greek Tzatziki image

This is a lovely, cool, refreshing Greek tzatziki dip that I first tasted and fell in love with in the Greek Islands. It is lovely with hot toasted pita bread and veggies or lamb kebabs! The key is strain the liquid from the cucumber very well so the dip stays creamy and not watery and to always use thick, full-fat Greek yogurt. Low-fat versions won't cut it. Enjoy!

Time 20m

Yield 6

Number Of Ingredients 6

4 tablespoons olive oil
2 tablespoons red wine vinegar
1 clove garlic, minced, or more to taste
1 large cucumber
salt to taste
1 (17.6 ounce) container full fat plain Greek yogurt (such as FAGE Total®)

Steps:

  • Stir together olive oil, vinegar, and garlic in a bowl and let sit while you prepare the cucumber.
  • Peel cucumber and cut in half lengthways; scrape out all the seeds. Grate cucumber with a cheese grater into a sieve set over a bowl. Sprinkle with salt. Strain out as much liquid as possible by pressing down in the sieve with the palm of your hand. Alternately you can wring cucumber out in a clean tea towel. Add cucumber and yogurt to the garlic mixture. Mix until well combined and season with salt to taste.

GREEK TZATZIKI SAUCE

Greek Tzatziki Sauce image

This is a delicious sauce that can be used in many Greek recipes. We like to use it when making gyros, or other Mediterranean recipes that are wrapped in pitas. It tastes just like the sauce we've had in restaurants such as "Hell's" in Tarpon Springs in Florida. It's a funny name, but the restaurant is known for having some of the best Greek food and Greek pastries in Florida.

Categories     < 30 Mins

Time 20m

Yield 4 serving(s)

Number Of Ingredients 8

8 ounces plain yogurt (or Greek yogurt, if your store carries it)
1/2 medium cucumbers, peeled, seeded and finely chopped or 1/2 peeled grated cucumber
2 ounces sour cream
1 small pinch salt
1 1/2 tablespoons extra virgin olive oil
1 teaspoon red wine vinegar
2 mint leaves, finely minced or 1/4 teaspoon dried mint
1 small garlic clove, finely minced

Steps:

  • Place yogurt in a coffee filter or piece of cheesecloth, and place in a strainer over a dish. Let drain for 2-4 hours in the refrigerator. If using Greek yogurt you do not need to drain it, as it is already a thick consistency.
  • Meanwhile, put the chopped or grated cucumber in a tea towel and squeeze to remove liquid. Discard liquid. Sprinkle with 1 teaspoon salt and mix into the cucumber. Set aside 20 minutes. Rinse a little to wash out the extra salt, if you want to. Then squeeze again to express as much liquid as possible.
  • Draining the yogurt and cucumber make for a thick and authentic consistency of tzatziki sauce.
  • Combine the drained yogurt and cucumber, sour cream, pinch of salt, olive oil, red wine vinegar, mint and garlic. Note: we love garlic, so I tried adding more once. It made for an overpowering and almost bitter taste, so now I stick to only 1 clove.
  • Place sauce in the refrigerator for 1 hour or more to meld flavors. Stir before serving. The sauce can be stored in the refrigerator for up to one week. Makes 1 1/4 cups.

TZATZIKI

Tzatziki image

Provided by Ina Garten

Categories     appetizer

Time 19m

Yield 2 1/2 cups

Number Of Ingredients 10

1 pound (1 pint) plain yogurt (whole milk or low fat)
1 hothouse cucumber, unpeeled and seeded
1 tablespoon plus 1/2 teaspoon kosher salt
1/2 cup sour cream
1 tablespoon Champagne vinegar or white wine vinegar
2 tablespoons freshly squeezed lemon juice (1 lemon)
1 tablespoon good olive oil
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced fresh dill
Pinch freshly ground black pepper

Steps:

  • Place the yogurt in a cheesecloth or paper towel-lined sieve and set it over a bowl. Grate the cucumber and toss it with 1 tablespoon of kosher salt; place it in another sieve, and set it over another bowl. Place both bowls in the refrigerator for 3 to 4 hours so the yogurt and cucumber can drain.
  • Transfer the thickened yogurt to a large bowl. Squeeze as much liquid from the cucumber as you can and add the cucumber to the yogurt. Mix in the sour cream, vinegar, lemon juice, olive oil, garlic, dill, 1/2 teaspoon salt, and pepper. You can serve it immediately, but I prefer to allow the tzatziki to sit in the refrigerator for a few hours for the flavors to blend. Serve chilled or at room temperature.

TZATZIKI SAUCE-- GREEK CUCUMBER/YOGURT SAUCE

Tzatziki Sauce-- Greek Cucumber/Yogurt Sauce image

This is the cool and creamy sauce that usually is served as a condiment on Greek Gyro sandwiches. The recipe calls for the thicker, Greek Yogurt, also called, "Greek Cheese". If you can't find this type of yogurt, you can use plain, regular yogurt from the grocery store. But in order to get the sauce to the desired thicker consistency, you need to suspend the yogurt in a cheesecloth for a couple of hours to drain some of the water off. If you don't mind it moderately runny, you can just make it as is and it is still delicious, just a little more messy. Make this with Recipezaar recipe #285900, Gyros- An Authentic Recipe For Making Them At Home Enjoy!

Categories     Sauces

Time 3h

Yield 3 1/2 Cups, 12 serving(s)

Number Of Ingredients 7

3 cups Greek yogurt (also called Yogurt Cheese, see below for alternative)
3 tablespoons lemon juice (or juice of one lemon)
1 garlic clove, minced
1 large English cucumber, diced (the long, skinny ones)
1 tablespoon salt (for salting cucumbers)
1 tablespoon fresh dill (or both, depending on preference) or 1 tablespoon of fresh mint, chopped (or both, depending on preference)
salt & freshly ground black pepper

Steps:

  • Peel cucumbers and dice. Put them in a colander and sprinkle with the tablespoon of salt (draws water out). Cover with a plate and sit something heavy on top. Let sit for 30 minute Drain well and wipe dry with a paper towel.
  • In food processor or blender, add cucumbers, garlic, lemon juice, dill and/or mint, and a few grinds of black pepper. Process until well blended, then stir into yogurt. Taste before adding any extra salt, then salt if needed. Place in refrigerator for at least two hours before serving so flavors can blend.
  • This will keep for a few days in the refrigerator, but you will need to drain off any water and stir each time you use it.
  • ** If you can't find the thicker Greek Yogurt Cheese, you can use regular, plain yogurt that is either full fat or low fat. To thicken, spoon yogurt into cheese cloth that has been quadrupled. Draw the corners of the cloth up and tie together. Suspend above a bowl for 2 hours so that water can drip out. The consistency of the yogurt should be like that of sour cream.
  • You can skip this draining process, if you want, but you will have a moderately messier, runnier result.

TZATZIKI

Tzatziki image

Make and share this Tzatziki recipe from Food.com.

Provided by evelynathens

Categories     Greek

Time 10m

Yield 1 1/2 pints, 12 serving(s)

Number Of Ingredients 7

1 pint sour cream (or Greek-style super thick yoghurt)
1 English cucumber, peeled, grated on a box grater, salted lightly for 5 minutes and squeezed between the hands to remov (the long, thin, almost seedless kind)
3 garlic cloves, mashed to a paste
1/3 cup olive oil
1 tablespoon red wine vinegar
1 tablespoon minced fresh dill (optional)
salt

Steps:

  • Just mix everything up together until it is all blended and the oil has emulsified into the yoghurt/sour cream. Taste for seasoning, and add salt if you think necessary. Put in a resealable container.
  • Allow to 'sit' in the refrigerator for at least 2-3 hours before using to allow the flavors to come out.
  • This wonderful meze (we do not think of it as a sauce here- it is a thick 'salata') is used to counterpoint rich, bbq'd meats (like souvlaki/shish kebab), but can be used in more diverse ways.
  • Place a small plate full on your dinner table for people to scoop up small amounts onto their bread (preferably crisp-baked pita).
  • Fry up some zucchini or eggplant slices (dredge in flour and fried in olive oil) and serve with a dollop of tzatziki on top.
  • Use as a salad dressing.
  • A dip for crudites.
  • Note: If I have time, I often lightly salt the grated cucumber and put in a colander to drain, then squeeze out water as per usual. This eliminates even more water.

Now I just need to figure out gyros so that I can have it on that. Cooking time is for the chilling it is not necessary but I like mine served cold.

  • Sprinkle with the paprika powder.
  • Cover and place in the refrigerator for at least 2 hours for the flavours to fully develop.

WHAT TO EAT AND SERVE WITH TZATZIKI SAUCE – MELANIE COOKS

  • Sauce For Meat. Tzatziki sauce goes great with all kinds of meat – chicken, beef, pork and lamb. It’s especially good with grilled meat! The most popular way to eat tzatziki sauce is with gyros!
  • Sauce For Fish. Tzatziki sauce also tastes really good with fish. My favorite fish to eat with the tzatziki sauce is white fish!
  • Sauce For Felafel. Felafel and tzatziki together taste like they were made for each other! Dip the felafel balls in tzatziki, and soon there’ll be no more felafel left :)
  • On The Burgers. You can use tzatziki as a topping for the burger patties. Tzatziki tastes delicious on both the regular meat burgers and the veggie burgers.
  • On The Sandwiches. Who needs mayo when you got tzatziki! For a new twist on traditional deli sandwiches, spread the tzatziki sauce instead of mayo.
  • In The Pita Wraps. Mix the pita filling with the tzatziki sauce to make it moist and flavorful! Tzatziki sauce will enhance any pita wrap sandwiches, such as grilled chicken pita or the felafil pita wrap.
  • Add To Mashed Potatoes. Here’s a unusual use for a tzatziki sauce – I bet you haven’t heard of this one :) When you make mashed potatoes, add the tzatziki sauce to the potatoes while you are mashing them.
  • Topping On A Baked Potato. Use the tzatziki sauce as a baked potato topping instead of sour cream!
  • Salad Dressing. Tzatziki sauce can be used as a delicious salad dressing! Use the tzatziki as any other white salad dressing. Mix the tzatziki sauce with the crispy greens for a delicious healthy salad.
  • Vegetable Dip. Serve the tzatziki sauce as a vegetable dip. You can dip any kinds of veggies, such as carrot sticks, celery, broccoli, cauliflower and cucumber slices.

  • Sprinkle 1 tablespoon salt over the cucumber and allow water to drain in a colander over a bowl for 30 minutes. If needed, you can rinse and dry the cucumber to get rid of some of the salt, but most of it will rinse off from the water that comes out of the cucumber anyway.
  • In a medium bowl, combine all ingredients except cucumber and dill. Stir together, then stir in cucumber and dill and refrigerate for 1 hour.
