This is from the George Foreman Great Grilling Recipe book. Being soy intolerant, I can never eat regular veggie burgers. These are a snap to throw together, especially if you have left over brown rice. I love the carrot, curry and walnut together...really delicious!

2 eggs
1/3 cup plain yogurt
2 teaspoons Worcestershire sauce
2 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon ground red pepper (cayenne pepper)
1 1/3 cups cooked couscous or 1 1/3 cups brown rice
1/2 cup finely chopped walnuts
1/2 cup grated carrot
1/2 cup minced green onion
1/3 cup fine dry breadcrumb
4 whole grain buns

Steps:

  • Preheat grill 5 minutes.
  • Combine eggs, yogurt, worcestershire sauce, curry, salt, red pepper in large bowl.
  • Beat with an electric mixer until blended.
  • Stir in couscous or rice, walnuts, carrot, green onions and breadcrumbs.
  • Shape into 4 one inch thick patties.
  • Place on grill and cook 7-8 minutes or until hot and cooked through.
  • Serve on buns and garnish as desired.

1 cup plain yogurt (preferably Greek-style)
3 tablespoons chopped of fresh mint
2 tablespoons chopped fresh cilantro
1 1/4 teaspoons finely grated lime peel
coarse kosher salt
4 tablespoons olive oil, divided
1 1/4 cups chopped onions
2 tablespoons minced peeled fresh ginger
2 teaspoons coarse kosher salt, divided
2 teaspoons Madras curry powder
1 3/4 lbs ground lamb
3 tablespoons chopped fresh cilantro
1 1/2 teaspoons cracked black pepper, divided
3 medium zucchini, cut lengthwise into 1/4-inch-thick slices (about 12 ounces)
6 green onions, trimmed
1 fresh poblano chile
6 pita breads
1 large tomatoes, thinly sliced

Steps:

  • For raita:
  • Mix yogurt, mint, cilantro, and lime peel in small bowl. Season to taste with coarse salt and pepper. Cover; chill until cold, at least 30 minutes and up to 4 hours.
  • For burgers and vegetables:.
  • Heat 2 tablespoons oil in large skillet over medium heat. Add onion, ginger, and 1/2 teaspoon coarse salt. Sauté until onion is tender, about 8 minutes. Mix in curry powder and stir 30 seconds. Remove from heat. Cool onion mixture to room temperature, at least 15 minutes.
  • Place lamb in large bowl. Add onion mixture, 1 teaspoon coarse salt, cilantro, and 1 teaspoon cracked pepper. Blend mixture gently; shape into six 1/2-inch-thick patties.
  • Prepare barbecue (medium-high heat). Combine zucchini, green onions, and chile in another large bowl. Add 2 tablespoons oil, 1/2 teaspoon coarse salt, and 1/2 teaspoon cracked pepper; toss to coat. Place vegetables and burgers on grill. Cook until grill marks appear, about 4 minutes. Turn vegetables and burgers over. Cook vegetables until tender, about 3 minutes. Cook burgers to desired doneness, about 4 minutes for medium-rare. Cut zucchini and green onions crosswise into 2-inch-long pieces. Cut chile into thin strips.
  • Place breads on plates; top with burgers and tomato slices. Mound vegetables on burgers; spoon dollop of raita over. Fold bread up around burgers and serve with remaining raita.

1/3 cup dried red lentils, uncooked, sorted and rinsed
1/4 cup brown rice, uncooked, can also use basmati rice
1 tablespoon olive oil
1 lb fresh mushrooms, sliced
1 medium onion, chopped
3/4 cup parmesan cheese, grated
1/2 cup walnut halves, finely chopped
1/4 cup fresh cilantro, chopped
2 eggs
1/2 teaspoon black pepper
6 hamburger buns with sesame seeds, toasted, can also use toasted pita bread halves
mayonnaise, to taste
red onion, Sliced, to taste
lettuce, Shredded, garnish
tomatoes, Sliced, garnish

Steps:

  • In a medium saucepan place lentils and cover with one inch of water. Bring to a boil, reduce heat to low and simmer covered for 25 to 35 minutes or until tender. Drain the lentils, rinse, and set aside. Cook the rice according to the package directions and set this aside also.
  • Using a heavy large skillet heat the oil over medium heat. Add the mushrooms and chopped onion cooking and stirring for 20 to 25 minutes or until mushrooms are brown. In a large bowl combine the mushroom and onion mixture with the cheese, walnuts, lentils, rice, cliantro, eggs and pepper, mix together well. Cover the bowl and chill.
  • Preheat broiler and grease a 15 x 10 inch jelly roll pan with oil. Take lentil mixture out of refrigerator and shape into six 1/2 inch thick patties. Place patties on oiled jelly roll pan and broil four inches away from heat source for 3 to 4 minutes on each side, turning once, or until golden brown. Serve immediately on buns topped with mayo, red onion, lettuce, and tomatoes.

I haven't actually tried this; but it actually looked and sounded good. If I don't post it, I'll loose it! Burger without the meat. The recipe comes from Light and Tasty February/March 2002.

1/2 cup uncooked brown rice
1/2 cup uncooked bulgur
1 tablespoon sodium-free seasoning
1/4 teaspoon poultry seasoning
2 cups water
2 cups finely chopped fresh mushrooms
3/4 cup old fashioned oats
1 cup shredded part-skim mozzarella cheese (4 oz)
1/4 cup shredded low-fat cheddar cheese
1/3 cup finely chopped onion
1/2 cup fat-free cottage cheese
1/4 cup egg substitute
2 tablespoons minced fresh parsley
1 teaspoon salt
1/2 teaspoon dried basil
1/8 teaspoon celery seed
3 teaspoons canola oil, divided
12 hamburger buns
lettuce leaf
tomatoes, slices

Steps:

  • Combine the first 5 ingredients in a large saucepan.
  • Bring to a boil, reduce heat, cover and simmer for 30 to 40 minutes or until rice is tender.
  • Remove from heat and cool completely, refrigerate.
  • Combine the mushrooms, oats, mozzarella, cheese cheddar cheese and onion.
  • In a food processor, process the cottage cheese and egg substitute until smooth.
  • Add mushroom mixture, parsley, salt, basil, celery seed and chilled rice mixture.
  • Using 1/2 cup of mixture, shape into 12 patties.
  • In a non-stick skillet, cook four patties in 1 teaspoon of oil for 5 minutes on each side or until browned and crisp.
  • Repeat with remaining patties and oil.
  • Serve on hamburger rolls with lettuce and tomato slices.
  • Please note the preparation time includes cooking and cooling rice.
  • The cooking time is for the burgers only.
