POACHED EGGS CURRY | EGG DROP CURRY RECIPE
This Poached Eggs Curry or Egg Drop Curry is perhaps, the easiest Egg Curry recipe that you will ever come across. Here, a gravy of onion, tomato, ginger and garlic is prepared and in the end, little wells are made where each egg is dropped and allowed to cook. Fascinating right? No need to boil eggs beforehand and no need to peel eggs. A simple one-pan egg curry recipe that can be served with both rice as well as rotis or chapattis.

Steps:
- Using a food processor or a normal grinder, grind the onion, ginger, garlic and tomatoes into a coarse mix. A few chunky pieces will give a body and texture to the gravy. However, if you prefer your gravy to be smooth, you can turn this mix into a smooth paste
- Now, take a frying pan. The biggest you have. The more they spread, the better will be your chances to have fully spread poached eggs
- Heat some mustard oil and drop the whole spices in it. For more flavour, half crush them in a mortar pestle. Ass they sizzle, drop the ground paste into the oil and stir.
- As it continues to saute, add the powdered spices and cook till it reduces and starts releasing bubbles of oil at the edges
- Now we will make the gravy by adding some water to it. Give it a good stir and let it simmer.
- Crack an egg separately in a bowl. Make a small well in the gravy and drop the egg in it gently, ensuring the yolk is intact. Similarly, repeat for the rest of the eggs
- Once all the eggs are in, cover the frying pan with its lid and let it simmer on low heat for 4-5 minutes. Once done, you will see that the eggs have taken a shape of a perfectly done sunny side up.
- To finish, drizzle some ghee and sprinkle some finely chopped coriander leaves
- Serve hot
CURRIED POACHED EGGS

Steps:
- Fill medium saucepan with about 3 inches of water.
- Stir in coriander, curry powder, cumin, turmeric, salt and pepper.
- Bring to a boil.
- Reduce heat to a gentle simmer.
- Break one egg into a small dish.
- Gently slip egg into water.
- Repeat with remaining eggs.
- Cook in barely simmering water for 3 to 5 minutes.
- Remove eggs with a slotted spoon and drain well.
- Serve immediately on crisp buttered toast.
CURRIED DEVILED EGGS
Steps:
- Put the cold eggs (straight from the refrigerator) in the bottom of a medium saucepan and cover with cold water. Bring the water to a boil and remove the pan from the heat. Cover the pan and let stand for 12 minutes.
- Drain the eggs and rinse with cold water. Let the eggs cool a bit, and then peel while they are still warm (they are much easier to peel this way). After you peel them, you can then store them, covered, in the refrigerator.
- Mix together the mayonnaise, mustard, vinegar, curry powder, mustard powder, cayenne and paprika. Season with salt.
- Slice the eggs in half lengthwise. Spoon out the cooked yolks and transfer to the bowl with the mayonnaise mixture. Mash together with the tongs of a fork until smooth. Alternatively, you can press the yolks through a fine sieve over the bowl and stir together.
- Spoon the filling into the egg whites, or you can put the filling into a re-sealable bag, cut one end off and pipe it in. Garnish with paprika and chives before serving.
CURRIED EGGS ON TOAST
This is a traditional Danish Smorgasbord dish. It is very versatile I sometimes put a layer of steamed spinach in a casserole, leave out the toast,put boiled eggs onto the spinach, pour in the sauce and broil for 5-10 minutes

- Saute the carrot and onion in the butter for 15 minutes.
- Use low heat you do not want to brown the veggies.
- Add flour and curry.
- Stir and heat to a smooth paste.
- Gradually add all the remaining ingredients starting with the consomme, stirring all the while to prevent any lumps.
- Simmer approx 8 minutes. Keep hot while you are poaching the eggs.
- Poach the eggs (or use hard boiled eggs cut in half lengthwise).
- Place eggs on toast and pour over the sauce.

- Cook the rice following pack instructions, then drain and set aside. Meanwhile, heat 1 tbsp of the oil in a non-stick frying pan and cook the onion and garlic for 5 mins. Toss the fish pieces with the curry powder and remaining oil. Add to the pan. Cook for another 5 mins, stirring carefully and turning the fish.
- Add the rice to the pan and turn up the heat, then stir well (the fish will break up a little). Cook for 1-2 mins, then stir in the lemon and parsley. Turn the heat down as low as it will go, and put on a lid.
- Bring a pan of water to the boil, turn down the heat and poach the eggs. Season the kedgeree and divide between plates, topping each with a poached egg.

- Hard boil the eggs, using your favorite method. Cool slightly and peel. Cut them in half lengthwise.
- Melt the butter in a frying pan and saute the onion and garlic, until onion is just soft.
- Stir in the curry powder, tomato paste, water, lemon juice, salt and pepper. Allow the mixture to cook over a low heat until it is just bubbling.
- Add egg halves to onion mixture and stir gently, until reheated through. Add a little more water if sauce gets too thick.

Steps:
- Cut shelled eggs in half.
- Put shallots and butter in pan and gently cook until shallots are soft and clear (not coloured).
- Sprinkle on the flour and curry powder and cook 3 minutes, stirring constantly.
- Gradually stir in milk and cook about 8 minutes or until it is a smooth and thick sauce. Add more milk if sauce is too thick. (Consistancy should be that of thick pouring cream).
- Add mustard and lime juice and salt and pepper to taste. Add eggs and heat through, be very careful not to break eggs.
- Serve.
- TIP~ When making sauce to avoid a lumpy texture, add liquid all at once if cold, gradually if hot and stirring consantly.

- Heat the oil in a non-stick sauté pan, add the garlic, pepper, chilli and the whites from the spring onions, and fry for 5 mins over a medium-high heat. Meanwhile, put a large pan of water on to boil.
- Add the spices, tomatoes, most of the coriander and the chickpeas to the sauté pan and cook for 1-2 mins more. Stir in the bouillon powder and enough liquid from the chickpeas to moisten everything, and leave to simmer gently.
- Once the water is at a rolling boil, crack in your eggs and poach for 2 mins, then remove with a slotted spoon. Stir the spring onion tops into the chickpeas, then very lightly crush a few of the chickpeas with a fork or potato masher. Spoon the chickpea mixture onto plates, scatter with the reserved coriander and top with the eggs. Serve with an extra sprinkle of cumin, if you like.
