SESAME CHICKEN NOODLES

Forget soggy lunchbox sandwiches and whip up a tasty and healthy chicken and noodle salad for lunch using our pre-made roast chicken recipe

1 tbsp tahini
1 lime , juiced
2 tsp soy sauce
2 roasted garlic cloves
1 tsp sesame oil
½ tsp chilli flakes , plus extra to serve
200g cooked rice noodles
200g leftover roast chicken
1 roasted aubergine
1 carrot , grated
½ cucumber , seeds removed and cut into half moons
½ small pack mint , roughly chopped

Steps:

  • Whisk together the tahini, lime juice, soy sauce, flesh from the roasted garlic, sesame oil and chilli flakes in a large bowl, adding enough water to make a creamy dressing.
  • Add the noodles, leftover roast chicken, aubergine and carrot and toss everything to combine, then gently fold through the cucumber and mint. Divide between two containers, then sprinkle over a few extra chilli flakes to serve.

I love Mirj's Funky Chicken with Sesame Noodles. I decided to use the noodles as my inspiration for this recipe. It's really similar but totally different. We liked it and I hope others will too! Cook time is the time it takes to make the pasta. *UPDATE* Since posting this, I tried adding about 1/2 teaspoon of red pepper flakes and it turned out wonderfully so I decided to add it as a suggestion.

1 lb angel hair pasta
1/2 cup toasted sesame oil
1/3 cup soy sauce
1/3 cup honey
3 cloves garlic, minced fine
4 green onions, sliced
2 teaspoons toasted sesame seeds
1 lb stir fry vegetables, steamed (I used broccoli, carrots, water chestnuts and red peppers)

Steps:

  • In a large pot, cook your angel hair pasta until almost al dente; drain well, put in a bowl and set aside.
  • In a small tupperware container with a lid, mix sesame oil, soy sauce, honey, garlic and sesame seeds.
  • Put the lid on the container and shake, shake, shake it like a polaroid picture.
  • Pour the sauce over the angel hair and toss well; the heat of the pasta will cook the garlic a bit so it won't be totally raw.
  • Mix in the green onions and stir fry veggies.
  • Serve.

Coarse salt
1 pound thin spaghetti
1/2 cup smooth peanut butter, preferably natural
1 to 2 garlic cloves
1/2 teaspoon red-pepper flakes
1/3 cup soy sauce
1/3 cup rice vinegar
2 tablespoons toasted sesame oil
1 English cucumber, peeled and halved lengthwise
2 medium carrots, peeled and shredded

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain, and transfer to a large bowl.
  • Meanwhile, make peanut sauce: In a blender or food processor, blend peanut butter, garlic, pepper flakes, soy sauce, vinegar, and sesame oil until smooth.
  • Cut cucumber crosswise into thirds; cut each piece lengthwise into 1/4-inch slices. Stack slices; cut lengthwise into very thin strips. Transfer pasta to a large bowl; toss with sauce, cucumber, and carrots. Serve at room temperature.

Toss in your favorite veggies for a multifaceted vegetarian meal or serve it alongside grilled chicken or flank steak.

1/4 cup light soy sauce
1/4 cup Asian sesame oil
1 tablespoon peanut or vegetable oil
1 tablespoon honey
1/2 tablespoon chili garlic sauce
1/4 cup white sesame seeds, lightly toasted, or black sesame seeds, untoasted
1/3 cup green onions (white and light green parts only), thinly sliced on a diagonal
1 garlic clove, minced
1 (1-inch) piece fresh ginger, peeled and minced
Optional extras: thinly sliced mushrooms such as black, shiitake, or cremini; blanched and slivered pea pods; thinly sliced red bell peppers; julienned carrots
1 pound fresh Chinese egg noodles, cooked and drained

Steps:

  • In a large bowl, whisk together the soy sauce, sesame oil, peanut oil, honey, chili garlic sauce, sesame seeds, onions, garlic, and ginger along with any garnishes you may want to use. Add the noodles and toss to coat evenly.
  • The NOODLES may be prepared ahead and refrigerated, covered, up to 24 hours. Toss well before serving.

1/3 cup warm water
2 tablespoons toasted sesame oil

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Drain, and rinse with cold water. In a large bowl, combine with snow peas and red pepper; set aside.
  • In a blender, combine peanut butter, garlic, jalapeno, soy sauce, rice vinegar, water, sesame oil, and 1/4 teaspoon salt; puree until smooth. Pour over reserved pasta; toss to coat. Serve chilled or at room temperature.

1 tablespoon canola oil
2 garlic cloves, minced

1 tablespoon honey (optional)
5 -7 tablespoons hot water
salt and pepper, to taste
2 scallions, chopped (optional)

1 lime, cut into wedges

Steps:

  • Cook spaghetti according to package directions.
  • saute garlic and hot pepper in oil for 1-2 minutes.
  • Mix in tahini and peanut butter, then whisk in warm water until the sauce is a creamy consistency (depending on the peanut butter you use and personal preference).
  • Taste and add pepper, salt or more red pepper or hot sauce as desired.
  • Toss with pasta and garnish with scallions, cilantro, cucumber then serve with lime wedges.
