CURRIED CAULIFLOWER AND CARROTS

2 teaspoons curry powder
1 teaspoon cumin
Kosher salt and freshly ground pepper
1/3 cup olive oil, plus more for topping
1 medium head cauliflower, cut into florets
2 carrots, peeled and cut into 1-inch chunks
1 red onion, cut into eighths
1 tablespoon finely chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • Whisk together the curry powder, cumin, salt, pepper and olive oil in a medium bowl.
  • Spread the cauliflower, carrots, and onion in a single layer on a large baking sheet-lined with tin foil. Drizzle with the dressing and toss so it is thoroughly coated.
  • Roast the vegetables in the oven until tender and browned, about 40 minutes, stirring halfway through cooking. Remove to a serving bowl and sprinkle with parsley and a drizzle of olive oil on top. Serve hot or at room temperature.

1 medium Uncooked red onion(s) sliced lengthwise
1.75 Tbsp Ginger root fresh, grated
1.5 Tbsp Minced garlic
2 tsp Curry powder
0.25 tsp Cayenne pepper
10 oz Frozen green peas defrosted
1 cup(s) Frozen cauliflower florets defrosted
1 cup(s) Frozen sliced carrots defrosted
2 medium Plum tomato(es) diced
1 tsp Kosher salt or to taste
0.5 cup(s) Fat free reduced sodium vegetable broth or water
10 item(s) Dry roasted salted cashews roughly chopped (about 2 Tbsp)
0.5 medium Fresh lime(s) quartered

Steps:

  • Heat oil in a large skillet over medium heat; add onion and cook, stirring frequently, 5 minutes. Add ginger and garlic; cook, stirring, 1 minute. Add curry powder and cayenne; cook, stirring, 1 minute. Add peas, cauliflower, carrots, tomatoes and salt; mix well.
  • Add broth and bring to a boil over high heat; reduce heat to medium-low, cover, and simmer until heated through, about 5 minutes. Serve sprinkled with cashews and a drizzle of fresh lime juice.
  • Serving size: about 1 cup vegetable mixture and 1/2 tbsp cashews

2 tbsp vegetable oil
1 tsp cumin seeds
1-2 red chillies , deseeded and chopped
1 clove
1 small cinnamon stick
1 bay leaf
1 onion , finely chopped
½ tsp ground turmeric
2 garlic cloves , finely chopped
400g can chickpeas , rinsed and drained
1 tsp paprika
1 tsp ground coriander
2 small tomatoes , chopped
1 tbsp chopped coriander

Steps:

  • Heat the oil in a heavy-bottomed pan. Fry the cumin, chillies, clove, cinnamon and bay leaf together until the cumin starts to crackle. Tip in the onion, turmeric and a pinch of salt. Cook for 2 mins until starting to soften, then add the garlic.
  • Continue cooking 4-5 mins until the onion is soft, then add chickpeas, paprika, black pepper and ground coriander. Give everything a good stir so the chickpeas are well coated in the spices.
  • Add the tomatoes and 2 tbsp water. Cook on a medium heat until tomatoes are soft and the sauce is thick and pulpy. Take off the heat and sprinkle on the coriander.

3 tablespoons coconut (or your preferred cooking oil) or 3 tablespoons grapeseed oil (or your preferred cooking oil)
4 -5 large carrots, peeled and thinly sliced diagonally
1 medium onion, diced
1 large head cauliflower, trimmed and cut into 1-inch florets
1 tablespoon plus 2 tsp. your favorite curry powder or 1 tablespoon curry paste
1/4 teaspoon crushed red pepper flakes (or to taste, if your curry powder needs some kick)
1 1/2 cups vegetables or 1 1/2 cups chicken broth
1 (15 ounce) can chickpeas, drained (garbanzo beans)
1/2 teaspoon salt
1 (15 ounce) can coconut milk
zest and juice from one lime
2 tablespoons chopped of fresh mint (optional)

Steps:

  • In a large skillet heat the oil to medium-high heat. Add sliced carrots, onions, and cauliflower pieces; saute, stirring frequently, until the onions become translucent.
  • Stir in curry powder and crushed red pepper flakes (if using), and cook for 1 minute. Add broth, chickpeas, and salt; bring to a boil, then reduce heat to medium-low, cover, and simmer for about 5 minutes.
  • Add coconut milk and lime zest/juice. Let it simmer, uncovered for a couple of minutes. Stir in mint.
  • Serve on hot rice with yogurt on top.

4 ounces whole onion or 3 ounces chopped, ready-cut onion (1 cup)
1 teaspoon olive oil
1 large clove garlic
Fresh or frozen ginger to yield 1 tablespoon, coarsely grated
1 pound whole cauliflower or 8 ounces ready-cut cauliflowerettes (3 to 3 1/2 cups)
12 ounces potatoes
1/2 teaspoon ground coriander
1/2 teaspoon fennel seed
1 teaspoon ground cumin
1/2 teaspoon turmeric
1/4 teaspoon hot red pepper
1 1/2 cups water
1/2 cup no-salt-added canned tomato puree
1 cup peas
1/8 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Chop whole onion.
  • Heat nonstick pan large enough to hold all the ingredients over high heat. Reduce heat to medium high; add oil, and stir in onion.
  • Saute onion until it begins to brown and soften.
  • Meanwhile, mince garlic and grate ginger, and add to onion as it cooks.
  • Trim whole cauliflower, and cut head into bite-size pieces. Scrub potatoes, and cut into julienne strips.
  • Stir the coriander, fennel, cumin, turmeric and hot red pepper into the onion, and cook for 30 seconds.
  • Add the cauliflower, potatoes, water and tomato puree. Reduce heat to simmer; cover, and continue to cook until the vegetables are tender, about 5 minutes.
  • A minute before the cauliflower and potatoes are done, stir in the peas, salt and pepper. Cover, and cook another minute.

It's a cheap hearty indian curry uses ingredients commonly on-hand in the pantry, and came out so rich and delicious, I had to share it.

2 tablespoons olive oil
1 tablespoon hot curry powder
2 garlic cloves, minced
2 large onions, thinly sliced
8 ounces carrots, thinly sliced
1 1/4 cups frozen peas
1 teaspoon salt
1 teaspoon ground coriander
1 teaspoon turmeric
4 medium potatoes, peeled and cut into 1-inch chunks
1 (8 ounce) can coconut milk
1 cup water (or more as needed)

Steps:

  • In a large, heavy-bottomed skillet, heat the oil over medium heat. When hot, add the hot curry powder and stir it around for 30 seconds. Add the onions to the pan and saute until they are tender and a bit golden. When you're there, add the carrots, potatoes, and minced garlic. Give it all a good stir, and then add about a half cup each of water and coconut milk. Stir in the turmeric, salt, and coriander. Reduce the heat to low and cover it. Check every so often to stir the pot and check the moisture level. When the moisture is almost all absorbed, add more coconut milk and water, in equal parts. Continue to cook, stir, and add liquid until the vegetables are very tender and the curry is nice and thick. At this point, taste it to check that the spice levels are where you like them. When you're there, stir in the peas and the rest of the coconut milk (and water if necessary), and cook it for.
