1/4 cup light cream cheese
1/4 cup nonfat plain Greek yogurt
2 to 3 tablespoons confectioners' sugar
1/2 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1/4 cup virgin coconut oil, plus more for greasing tray
1/4 cup confectioners' sugar

Steps:

  • Chill a clean ice cube tray in the freezer. For the cheesecake filling: In a food processor, mix together the cream cheese, yogurt, confectioners' sugar and vanilla until smooth. Pour into a large resealable plastic bag and set aside. Clean out the food processor bowl for the chocolate covering.
  • For the chocolate covering: In a food processor, mix together the cocoa powder, coconut oil and confectioners' sugar until smooth.
  • Using a pastry brush, grease the chilled ice cube tray with coconut oil. Spoon the chocolate shell mixture into each compartment, tilting the tray around to coat the sides. Cut a small corner off the bottom of the bag of filling and squeeze into each chocolate mold. Spoon more chocolate over the filling to cover. Freeze for 4 to 5 hours, or overnight.
  • Before removing the cheesecakes, set the frozen tray on the counter for 2 to 3 minutes to start defrosting. Remove as you would ice cubes, by twisting the tray, or running the underside of the tray under warm water for a few seconds. Serve immediately.

85g plain flour
50g butter , chopped
50g mature gruyère , grated
25g fresh parmesan (or vegetarian alternative), finely grated
2 eggs , well beaten
1l vegetable oil , for deep frying

Steps:

  • Sift the flour and a little salt into a bowl. Set a non-stick pan on the heat with 150ml cold water and the chopped butter. Bring to the boil, stirring until the butter melts. Tip in all the flour and, using a wooden spoon, beat hard until the mix becomes smooth and starts to leave the side of the pan.
  • Remove from the heat, beat in the gruyère and half the parmesan and cool for 5 mins. Gradually beat in the eggs until you have a smooth, thick, but spoonable mix - you may not need all the egg. Can be set aside now for 2 hrs without chilling.
  • When ready to serve, heat the oil in a deep-fat frying pan to around 180C. Using 2 teaspoons scoop up neat dollops and carefully drop into the hot oil. Fry 6-8 dollops a time for 3-4 mins until golden and crisp - dunk the dollops under to brown evenly. Reheat the oil as necessary. Drain on paper towels, sprinkle with the rest of the parmesan. Serve hot.

3/4 cup shredded sharp cheddar cheese
1 teaspoon curry powder
1 jar (9 ounces) mango chutney
1/2 cup sweetened shredded coconut
1/3 cup chopped pecans, toasted
2 green onions, chopped
1/4 cup dried currants
Assorted crackers

Steps:

  • Place the cream cheese, cheddar cheese and curry powder in a small food processor; cover and pulse until blended. , Spread onto a 10-in. round serving platter. Spoon chutney over top; sprinkle with coconut, pecans, green onions and dried currants. Chill until serving. Serve with crackers.

Steps:

  • In large bowl, beat all ingredients except peanuts, apples and pears with electric mixer on medium speed 2 to 3 minutes until well mixed and fluffy.

Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

2 lbs sharp cheddar cheese, shredded
2 cups unsalted butter, softened
5 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 (8 ounce) jar small pimento-stuffed green olives, well drained (optional)
raw pecan halves (optional)

Steps:

  • Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
  • Roll dough into 1 inch balls and place on an un-greased baking sheet.
  • If using olives, form each ball around 1 olive.
  • If using pecans, press 1 pecan half onto each ball.
  • Can bake them right now (see instructions below) or freeze for later.
  • Place in trays in freezer for 30 minutes.
  • Remove from freezer and place in freezer bags or container.
  • Seal and freeze.
  • Can bake them straight from freezer.
  • Preheat oven to 425°F.
  • Place cheese balls 3 inches apart on an un-greased baking sheet.
  • Bake 15-17 minutes if frozen, 13-15 minutes if thawed.

½ cup pitted green olives, chopped
1 tablespoon chopped green onion, or to taste
1 ½ cups shredded Cheddar cheese
½ teaspoon salt
½ teaspoon curry powder
6 English muffins, split in half

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, combine olives, green onions, cheese, salt and curry powder. Spread this mixture on top of the sliced muffins. Arrange muffins on a cookie sheet.

2 tablespoons fresh lemon juice
1 tablespoon apricot preserves
3/4 teaspoon curry powder
three 5-inch pita loaves

Steps:

  • Chop walnuts and in a small skillet cook in oil over moderate heat, stirring, until lightly toasted. Cool nuts slightly.
  • Preheat broiler.
  • Coarsely grate apple and finely chop dates. In a bowl stir together all ingredients except pitas until combined well.
  • Horizontally split pitas and arrange, cut sides down, on a large baking sheet. Broil pitas about 4 inches from heat until golden and crisp, 1 1/2 to 2 minutes. Remove baking sheet from oven and turn pitas over. Divide Cheddar mixture among pitas, spreading evenly. Broil pitas until cheese mixture begins to bubble, about 2 minutes. 5 celery ribs, chopped

Steps:

  • Preheat oven to 400°. Flatten bread slices with a rolling pin; brush tops with butter. Set aside., In a large skillet, cook beef and celery over medium heat until beef is no longer pink and celery is tender, 8-10 minutes, breaking beef into crumbles; drain. Stir in bread crumbs, curry powder and garlic salt., Spoon beef mixture evenly among bread slices. Roll up bread slices; secure with toothpicks. Place on a greased baking sheet. Bake until golden brown, 12-15 minutes. When cool enough to handle, discard toothpicks and cut each roll-up crosswise into 3 slices.
