CURRIED BROWN RICE AND PEAS
My mom use to make this when we were vegetarians, it came from the New Vegetarian Cuisine cookbook. (IBN:0-87596-168-1) However, I did modify the recipe as I'm not allowed to have certain ingredients due to being pregnant. I will include those but will put optional beside them. Either way tastes great! And is very easy to make, and leaves the house smelling like curry yum!

Steps:
- Preheat oven to 350.
- In an oven proof 3-quart sauce pan over medium heat, warm the oil. Add the leeks and curry powder; cook, stirring frequently, for 2 minutes or until the leeks are tender.
- Stir in the rice and mix until coated with oil.
- Pour in the stock, peas, cilantro, soy sauce and hot pepper sauce; bring to a boil.
- Cover the pan and place in the oven. Bake for 40 to 50 minutes, or until the rice is tender and the liquid has been absorbed. Let stand for 10 minutes. Fluff with fork before serving.

CURRIED BROWN RICE WITH TOMATOES AND PEAS

- Heat the butter in a medium nonstick skillet over medium-high heat until foaming. Add the onion and cook, stirring occasionally, until translucent, about 3 minutes. Add the curry powder, ginger, garlic and 1/4 teaspoon salt. Cook until fragrant, about 1 minute. Add the tomatoes and cook until heated through, about 2 minutes. Set aside. Adjust an oven rack to the middle position and heat oven to 375 degrees F. Spread the rice in an 8-inch-square glass baking dish. In a covered medium saucepan over high heat, bring the vegetable broth to a boil. Once boiling stir in 1/4 teaspoon salt and pour the broth over the rice. Stir the tomato mixture into the rice and spread the mixture evenly in the baking dish. Cover the baking dish with a double layer of foil. Bake the rice until tender, about 1 hour and 10 minutes. Remove the baking dish from the oven and uncover. Stir in the peas, then cover the dish with a kitchen towel. Let the rice stand for 5 minutes. Uncover and let the rice stand another 5 minutes before serving.
PRAWN, PEA & TOMATO CURRY

- Heat the oil in frying pan, then fry the onions over a medium heat until soft and beginning to brown, about 5 mins. Meanwhile, reserve 8 of the tomato wedges, then whizz the remainder in a food processor with the ginger and garlic.
- Add the curry paste to the pan for 30 secs. Stir through the tomato mix and remaining tomato wedges, then bubble over a high heat for 5 mins, stirring so the sauce doesn't catch. Mix in the prawns and peas; simmer until prawns are pink and cooked through. Scatter with coriander, then serve with rice.

Steps:
- Mix all ingredients together and put into a buttered casserole dish with a tight fitting lid.
- Bake at 180 C 1 to 1 1/4 hours, stirring after 30 minutes.
- This can be all mixed together and left to stand until you are ready to cook it.
- If fresh tomatoes are not available or convenient use canned, replace some to the water with the juice from the can. (I think it has a better flavour using canned).

- Heat 1 tbsp olive oil in a large pan and add 2 finely sliced onions. Cook until softened, about 10 mins.
- Add 2 crushed garlic cloves, 1 tsp garam masala, 1 tsp turmeric and 1 tsp ground coriander, then stir to combine. Cook for 1-2 mins, then pour in a 400g can of plum tomatoes, break up with a wooden spoon and simmer for 10 mins.
- Pour in a 400ml can of coconut milk and season. Bring to the boil and simmer for a further 10-15 mins until the sauce has thickened.
- Tip in a drained and rinsed 400g can of chickpeas and 2 quartered large tomatoes, and warm through. Scatter over roughly chopped coriander from ½ small pack and serve with fluffy rice.
