Even if someone dislikes broccoli, they will surely love to have it. This curry is incredibly appetizing that only takes 30 minutes to prepare fully. I tasted this broccoli curry dish many times and decided to add it to my cookbook...

1 pound broccoli
2 tablespoons coconut oil
1 small onion chopped
3 cloves garlic minced
1 teaspoon ginger minced
2 tablespoons curry powder
1/2 teaspoon cumin powder
1 (14-ounce) can coconut milk
3/4 teaspoon salt
1/4 teaspoon Cayenne pepper

Steps:

  • At first, wash the broccoli, cut it into florets, and set it aside.
  • Heat the oil in a nonstick pot or saucepan over medium-high temperature. Add chopped onions, minced garlic, and grated ginger and stir it for 3 minutes to soften the mixture.
  • Add some curry powder, cumin and cook it until you get fragrant. It will take continuous stirring for about 1 minute.
  • Stir in broccoli and mix it with spices. Add coconut milk to make it to a simmer.
  • Cover the saucepan and cook it until the broccoli florets are tender and juicy. It will take at least 8 minutes to cook perfectly.
  • Serve immediately over rice, or quinoa

1 tablespoon Olive Oil
1 medium Onion (, finely minced)
4 Garlic Cloves (, see note 1)
2 tablespoons Mild Curry Powder
1 teaspoon Ground Ginger
1.5 cups Vegetable Broth (, see note 2)
1 can Coconut Milk ((14-ounce/400 milliliters), see note 3)
2 cups Cooked Lentils ((380 grams), see note 4)
6 cups Raw Broccoli Florets
1 teaspoon Salt
1/8 teaspoon Black Pepper
A Drizzle of Lemon Juice

Steps:

  • In a large pot (see note 5), heat the oil. Add finely minced onion and sauté for about 2 minutes. Add minced garlic and stir until the garlic releases its aroma.
  • Add curry powder, ginger and stir for a few seconds before adding broth, coconut milk, lentils, broccoli florets and salt and pepper. Stir well. Bring to a boil. Reduce the heat and simmer on low for about 10-15 minutes.
  • Add a drizzle of lemon juice, taste and serve!
  • Enjoy with rice or naan bread!

3 tablespoons ghee or vegetable oil
70 grams grated coconut
3 tablespoons roasted sesame seeds
1 inch ginger - finely grated
3 cloves garlic, smashed and finely chopped
70 grams roasted peanuts
1 teaspoon red chilli powder
1 teaspoon turmeric
1 finely chopped onion
3 tomatoes roughly chopped
2 green chilli pepper finely chopped
400ml coconut milk
500grams (1 pound) broccoli
Salt and pepper

Steps:

  • Heat some water and steam the broccoli florets until just cooked. You should just be able to stick a fork into the side of the florets but there should be some resistance. Set aside.
  • Now heat a large frying pan or wok over medium heat and add half the ghee or oil. Throw in the ginger, coconut, sesame seeds, peanuts, chilli powder and turmeric and cook for about three minutes stirring the ingredients about the pan with a spatula.
  • Add the rest of the ghee if needed and throw in the onions, tomatoes and chopped chilli peppers.
  • Cook until the onion is transparent and just beginning to turn a light brown.
  • Add the garlic and cook for a further minute.
  • Throw in the broccoli florets with the coconut milk and heat through. You want the broccoli to be tender but not mushy.
  • Add salt and pepper to taste and serve immediately.
  • As you can see, this broccoli curry can be made in minutes. Teamed with a little saffron rice or chewy home made naan bread it is the perfect mid week family meal or side or main dish for an exotic dinner party.

1 cup fresh orange juice
3 tablespoons fresh lemon juice
1 teaspoon butter
1 tablespoon curry powder
fresh ground black pepper

Steps:

  • Pour 2" of water into a large pot. Place a collapsible steamer in the pot, cover, and bring water to a boil. Place the broccoli florets in steamer, cover and steam 5 minutes, or till tender-crisp.
  • Meanwhile, in a large nonstick skillet, bring the orange and lemon juices to a boil over medium high heat. Reduce the juices down to 1/4 cup. Turn down heat to low and stir in butter and curry powder. Stir in the cooked broccoli florets and heat through.
  • Move to a serving dish and season to taste with pepper to taste. Serve immediately and enjoy!

2 inches piece fresh ginger root (peeled and minced)
1/2 small yellow onion (halved and thinly sliced)
1 teaspoon cumin seeds
2 teaspoons curry powder
1/2 teaspoon kosher salt
1 pound broccoli florets

Steps:

  • Trim broccoli into evenly sized florets.
  • Peel ginger and mince.
  • Halve onion and thinly slice.
  • Measure all spices, coconut flakes and oil.
  • Heat a large skillet over medium heat. Once hot add coconut flakes. Cook, stirring constantly, for 3 to 4 minutes, until edges begin to brown and coconut is fragrant. Remove from pan and set aside.
  • Place skillet back on burner and add cooking oil. Once hot, add minced ginger, sliced onion, cumin seeds, curry powder and salt. Cook, stirring constantly for 1 to 2 minutes.
  • Add broccoli florets and 2 tablespoons of water to pan. Stir to coat, cover, raise heat to medium high and cook 3 to 4 minutes until broccoli is tender.

2 cups broccoli florets
1 1/2 pounds boneless, skinless chicken breasts, cut into 2-inch pieces
Two 10 1/2-ounce cans cream of mushroom soup
1 cup mayonnaise
Juice of 1 lemon
1 teaspoon curry powder
1 cup shredded Cheddar
1 cup dried breadcrumbs

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2 to 3 quart baking dish.
  • Steam the broccoli in a large microwave-safe bowl with a splash of water, covered, until crisp-tender, 2-4 minutes. Alternatively, steam it in a saucepan with water over medium-high heat. Drain and set aside.
  • Fill a large high-sided skillet with about 1 inch water and bring to a boil. Add the chicken and cool until just opaque, about 5 minutes. Drain the chicken and pat dry with paper towels.

1 cup uncooked brown basmati rice
1 tablespoon coconut oil
One 8-ounce package tempeh
2 tablespoons toasted sesame oil
1 tablespoon minced garlic
1 tablespoon peeled and minced fresh ginger
1 medium yellow onion, thinly sliced
2 3/4 cups coconut milk
2 tablespoons agave nectar
1 1/2 tablespoons nama shoyu or tamari
1 1/2 teaspoons curry powder
1/2 teaspoon ground cumin
1/2 teaspoon turmeric powder
1/4 teaspoon crushed red pepper flakes
2 cups fresh broccoli florets
1 1/2 teaspoons chopped fresh cilantro
Fresh cilantro leaves, to garnish
Black sesame seeds, to garnish

Steps:

  • For the rice: Thoroughly rinse the rice in a fine mesh colander. Combine the rice with 2 cups filtered water in a medium saucepan. Set the heat to high and bring to a full boil. Then reduce to a low heat and simmer. Cover the pan and cook until all the water is absorbed and the rice is tender and fluffy, 35 to 40 minutes. Remove the rice from the heat and allow it to sit covered for another 10 minutes.
  • For the tempeh: In a medium saute pan or skillet, warm up the coconut oil. Gently grill the tempeh until golden brown, 5 to 7 minutes on each side. Remove it from the pan and dice into 1/2- to 1-inch cubes.
  • For the curry: Place the sesame oil in a 3-quart saucepan over medium-high heat. Add the garlic, ginger and onion and stir frequently, cooking for 5 minutes. Add the grilled tempeh, coconut milk, agave nectar, nama shoyu, curry powder, cumin, turmeric, red pepper flakes and broccoli. Reduce to a low heat and simmer for 15 minutes more. Add the chopped cilantro last. Spoon the curry mixture over the cooked brown rice and garnish with cilantro leaves and black sesame seeds.

2 teaspoons ground coriander
2 teaspoons smoked paprika

1 pound skinless, boneless chicken breasts
1 pound fresh broccoli
2 tablespoons unsalted butter
1 tablespoon olive oil
2 cloves garlic, crushed
1 (14 ounce) can full-fat coconut milk
2 tablespoons ketchup
½ cup chicken broth
¼ cup thinly sliced green onion

Steps:

  • Mix cumin, coriander, paprika, turmeric, black pepper, salt, and cayenne together in a small bowl for the spice blend.
  • Coat chicken breasts generously on both sides with about 1/2 of the spice blend and refrigerate, 2 to 12 hours. Reserve remaining spice blend until needed.
  • Cut broccoli florets off the stems. Slice the stems into strips, and then into 1/4-inch cubes, and reserve. Cut the florets into 1-inch pieces and set aside.
  • Heat butter and olive oil in a deep skillet or saucepan over medium-high heat. Add the chicken breasts and brown well, about 3 minutes on each side. Transfer onto a plate and let cool enough to handle, about 10 minutes.

1 pound flank steak, very thinly sliced across the grain
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
2 tablespoons light or dark brown sugar
1 tablespoon curry powder
1/2 cup low-sodium chicken or beef broth or water
2 tablespoons low-sodium soy sauce

Steps:

  • Place broccoli in a large microwave-safe glass baking dish. Add 1/2 cup water, wrap tightly with plastic, and microwave on high for 8 to 10 minutes, or until just done. Set aside.
  • Place rice and remaining 3 1/2 cups water in an 8-cup glass measuring cup or microwave-safe bowl. (Rice doubles in size during cooking, so choose a container large enough to accommodate it when cooked. ) Microwave uncovered on high for 10 minutes. Microwave uncovered on medium-low for 15 minutes more. Or use the rice setting on your microwave if you have one. Do not stir at any time during the cooking process. Season with salt to taste.   • Heat peanut oil in a large nonstick pan over medium-high heat until hot but not smoking. Add onion and cook, stirring often, until crispy and just wilted, 3 to 4 minutes. Add beef and cook, stirring often, 3 to 4 minutes. Add garlic, ginger, brown sugar, curry powder, broth or water, and soy sauce. Bring to a boil, then reduce heat to a steady simmer. Cook, stirring often, until sauce has thickened slightly. Add broccoli and cook until just heated through. Serve immediately with rice.

Easy. One Dish. Fast. An adjusted version of the recipe found in an old edition of Better Homes and Gardens New Cook Book. My family recently turned vegetarian and this has become one of our staples. Unless you use an extremely potent curry powder (or increase amount), the recipe won't come out spicy.

6 cups chopped broccoli (or 1 16oz. package frozen cut broccoli)
1 cup sliced carrot
1/2 large yellow onion, chopped
1/2 large red pepper, diced
2 garlic cloves, minced
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup shredded sharp cheddar cheese
2 tablespoons milk
1 teaspoon curry powder
saltine
salt
pepper

Steps:

  • Place fresh Broccoli and Carrots, covered, in a steamer and cook for 8-10 minutes, or until tender-crisp. If using frozen broccoli and carrots, cook according to package instructions.
  • Drain Vegetables well.
  • In a 2 quart casserole dish, combine Onion, Red Pepper, Garlic, Soup, Cheese, Milk, and Curry Powder. Mix in Broccoli and Carrots.
  • Season with Salt and Pepper to taste.
  • Begin crushing Saltines, one at a time, over the casserole. Continue crushing and spreading until top is covered well.
  • Bake, uncovered, at 350 degrees for 30 to 35 minutes.
  • Remove from oven and place under Broiler set to Low for 2 minutes, or until Saltines become just a little brown (as a note, they burn fast, so keep an eye on them!).

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

You can freeze it up to 6 months. If frozen, bake uncovered for 1 hour.

1 bunch broccoli, cut into chunks - or more to taste
1 (3 pound) cooked rotisserie chicken, meat removed from bones and chopped

1 teaspoon curry powder
salt and ground black pepper to taste

2 to 3 garlic cloves, minced
2 teaspoons minced fresh gingerroot

¼ cup mayonnaise
¼ cup apple cider vinegar
2 tablespoons Madras curry powder
1 tablespoon honey
½ teaspoon onion powder
salt and ground black pepper to taste
6 cups chopped broccoli
1 ¼ cups dried currants
½ cup roasted sunflower seeds

Steps:

  • Whisk Greek yogurt, mayonnaise, vinegar, curry powder, honey, onion powder, salt, and pepper together in a bowl. Taste and adjust seasonings to your flavor preference.

3 tablespoons butter
1 medium onion, chopped
2 tablespoons flour
2 teaspoons curry powder
1/2 teaspoon cumin
2 (14 1/2 ounce) cans chicken broth
1 cup water
1 small head of broccoli, coarsely chopped
1/4 teaspoon ground black pepper
1 cup light cream

Steps:

  • In a pot, melt the butter over medium heat, then add onion and cook, stirring frequently, until softened (about 3-5 minutes).
  • Add flour, curry powder, and cumin, and cook for about a minute, again stirring.
  • Whisk in chicken broth and water. Bring to a boil, whisking until smooth.
  • Add broccoli and ground black pepper. Reduce heat to medium-low, cover and cook for about 5 minutes.
  • Using a slotted spood, remove the vegetables and put them in a blender, along with 1 cup of the liquid. Blend until smooth.
  • Return blended mixture to the pot. Stir in the cream and cook for another couple of minutes to heat through, then serve.

2 slices wholemeal sourdough
1 tbsp natural yogurt
1 tbsp pomegranate seeds

Steps:

  • Heat oven to 200C/180C/gas 6. Mix together the spices and oil, then toss with the broccoli and some seasoning on a baking tray. Roast for 12-15 mins until tender.
  • Meanwhile, bring a small pan of water to the boil, lower in the eggs and boil for 6-8 mins, depending on how you like them, then immediately rinse under cold water, peel and halve. Toast the bread, then spread with the yogurt. Top each slice with the roasted broccoli and an egg, then scatter over the pomegranate seeds.
