PUMPKIN FLAX QUICKBREAD
This is a moist, dense quick bread suitable for breakfast or even Thanksgiving. It is a vegan version, containing no animal products.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x5 inch loaf pan.
- Whisk together flax seed meal and water. Mix in sugar, pumpkin and apple sauce.
- In a large bowl, stir together all-purpose flour, whole wheat flour, baking soda, cinnamon, salt, baking powder, nutmeg, and cloves. Add flour mixture to pumpkin mixture; stir until smooth. Pour batter into prepared pan.
- Bake in preheated oven for 65 to 70 minutes, until a toothpick inserted into center of the loaf comes out clean.

EASY FLAXSEED BREAD (GLUTEN-FREE, DAIRY-FREE)
This easy flaxseed bread is soft and tender with a deliciously moist crumb. Just slightly sweet with the perfect hint of cinnamon, this quick bread is perfect for an easy breakfast or snack whenever you're hungry. Totally gluten-free, dairy-free and yeast-free too, but no one would care! Bake a loaf or two and enjoy homemade bread anytime!

- Preheat the oven to 350F and grease an 8″ x 4″ metal loaf pan.
- In a large bowl, beat the oil and sugar until combined.
- Add the eggs and milk and whisk to get a pale yellow liquid mixture.
- In a medium bowl, whisk the gluten-free all-purpose flour, flaxseed meal, baking powder, salt, and cinnamon to combine.
- Sift the dry ingredients into the bowl with the wet ingredients and mix well to get a homogeneous batter (the batter will be rather liquid).
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 55 minutes until the loaf is golden brown on top and a toothpick inserted in the middle comes out clean.
- Allow the loaf to cool for at least 5 minutes in the pan before removing it and then cooling it completely on a wire rack before slicing.

- Preheat the oven to 350 degrees and line a 1-pound loaf pan with parchment paper and set it aside.
- Pulse 1 cup of the pumpkin seeds in a food processor or blender until finely chopped. It should be medium-coarse flour consistency (as shown in the images).
- In a large mixing bowl combine the pumpkin seed flour with the remaining pumpkin seeds, psyllium husks, sunflower seeds, flax seeds, chia seeds, salt and maple syrup (or stevia).

- Mix the first four dry ingredients (use BAKING SODA not baking powder - video caption is incorrect!) in a large mixing bowl. Set aside.
- Set the oven to 150° C / 300° F fan forced (or 170° C / 340° F no fan) and grease a 1kg / 2lb baking tin with a bit of oil. I also recommend lining the tin with a piece of baking paper as this bread tends to stick.
- This is an optional step, but recommended! Heat up a medium size pan on a low-medium heat. Once hot, add almonds to it. Dry roast the almonds for a few minutes until fragrant and lightly browned on both sides - move them around the pan frequently so that they don't burn. Remove the almonds from the pan and place them on a chopping board. Add pumpkin and sunflower seeds to the pan and dry roast them together, stirring frequently.
- Chop toasted almonds up roughly and if using dates, prunes or apricots rather than cranberries, remove the stones (dates) and chop them into smaller pieces too.
