1/2 bunch curly endive (also called chicory), large, tough stems removed and cut into bite-size pieces
1 Belgian endive, cut into spears
1 small red onion, thinly sliced
2 to 3 tablespoons red wine vinegar
2 to 3 tablespoons high quality extra-virgin olive oil
Kosher salt

Steps:

  • In a large salad bowl, toss together both endives and the onion. Sprinkle with the vinegar, oil and salt and toss again. If a little more oil or vinegar is needed, do so in small increments and taste as you go. The salad should be well seasoned and dressed but not soggy.
  • Voila!

My husband loves his mom's endive dressing, so I asked her to share the recipe with me. When I make this salad, I usually serve it with boiled potatoes and sliced smoked ham.

1/2 pound bacon strips, diced
1 medium onion, chopped
2 tablespoons sugar
1-1/2 teaspoons cornstarch
1/2 teaspoon salt
2 tablespoons cider vinegar
1 cup milk
1 egg, lightly beaten
3 bunches curly endive, torn (about 12 cups)
3 hard-boiled large eggs, sliced

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Set bacon aside. Saute the onion in the drippings until tender. Add the sugar, cornstarch, salt and vinegar; stir until smooth. Gradually stir in the milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. , Stir a small amount of hot mixture into egg; return all to the pan; stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat., In a large salad bowl, combine the endive, hard-boiled eggs and reserved bacon. Add desired amount of warm dressing; toss to coat. Refrigerate leftover dressing.

2 tablespoons chopped shallots
1 tablespoon Dijon mustard
1/4 cup white wine vinegar
Salt
Freshly ground black pepper
1/2 cup olive oil
1 head chicory, cut into bite-size pieces, well washed and dried
1 cup fresh croutons

Steps:

  • Place bacon in a hot skillet over low heat. Cook completely to render fat. Remove lardons from skillet and reserve on paper towels. From the skillet remove 2 tablespoons of rendered fat to a bowl. Add shallots to fat. Stir in mustard and vinegar. Season with salt and pepper. Whisk in oil until dressing is emulsified.
  • Toss chicory pieces with bacon, vinaigrette and croutons.

1 1/2 tbsp olive oil
1 clove garlic
1/2 tbsp wine vinegar
1 tsp Dijon mustard
1 pinch salt

Steps:

  • Tear the lettuce leaves into bite-size pieces and put them in a salad bowl.
  • Set aside.
  • Heat a nonstick pan over medium heat.
  • Chop the bacon and add it to the pan.
  • Fry until browned, then remove it and set it aside on a paper towel to absorb the excess fat.
  • Pour the olive oil into the pan over low heat.
  • Finely chop the garlic and add it to the pan.
  • Cook 1 min with stirring, then pour in the vinegar and mustard.
  • Warm through and season to taste.
  • Pour the dressing over the salad, then add the bacon.

RECIPE: GRILLED PEAR AND ENDIVE SALAD WITH WARM SHALLOT VINAIGRETTE



Recipe: Grilled Pear and Endive Salad with Warm Shallot Vinaigrette image

When you combine pears brushed with butter and maple syrup drenched in a warm shallot vinaigrette you won't even know that endive has a bitter taste to it!

  • Prep Time: 10 minutes Cook Time: 20 minutes Yield: 4 servings Bring a small pot to a boil and heat a medium skillet over medium-low heat. While waiting for the water to boil and skillet to heat up, prep the veggies: Chop the shallot into small pieces; peel the pears, slice them in half lengthwise, remove seeds, and set aside; wash the curly endive and remove the bottom white part of the stem; slice radicchio in half and then into smaller pieces; and add endive and radicchio to a large bowl or 4 separate bowls. The water should now be boiling. Place the sliced pears into the boiling water and boil for 4 minutes until slightly soft. While waiting for the pears to boil, cook bacon on the heated skillet until very crispy - approximately 6 minutes on each side. Once done, place on paper towel to absorb grease. Keep the skillet on the heat and add the chopped shallot - you can use the bacon drippings or wipe clean and add 1 tsp butter. Cook and stir shallot until translucent. Heat a grill plate (or regular pan) on medium heat. Slice the boiled pears into thin slices. Melt 2 tsp butter and stir in 1 tsp maple syrup. Brush both sides of the pears and place on heated grill plate and grill lightly for 2 minutes each side until you can see grill marks. Using a food processor or blender, mix the dressing ingredients with the shallot to try and combine all the ingredients. It may still be a bit lumpy - but combine as best you can. Dressing can be warm or cold but will be warm if you serve immediately. Pour dressing over salad mixture and toss. Top with crumbled bacon, goats cheese, and grilled pear. Enjoy!

1 tablespoon all purpose flour
3 tablespoons plus 1 teaspoon apple cider vinegar
1 large egg
1 cup canned vegetable broth, low-salt chicken broth or water
6 bacon slices, cut into 1-inch piece
1 large head curly endive or other bitter lettuce (such as escarole), torn into bite-size pieces

Steps:

  • Combine sugar and flour in small bowl. Gradually whisk in vinegar, then egg. Whisk in broth.
  • Cook bacon in heavy large skillet over medium heat until crisp and brown. Whisk in vinegar mixture. Stir until dressing comes to simmer and thickens. Season dressing to taste with salt and pepper. (Can be prepared 1 hour ahead. Let stand at room temperature. Rewarm over low heat before continuing.)
  • Place endive in large bowl. Toss with enough dressing to coat. Serve, passing remaining dressing separately.

3.3 lbs./1.5 kg. potatoes (floury)
1/2 lbs./250 g. endive (curly)
10.5 oz./300 g. bacon (smoked)
2 cups/475 ml. milk
2 tbsp. butter
Pinch of nutmeg (freshly grated)
Salt and white pepper to taste

Steps:

  • Wash and peel the potatoes and cut into similarly sized pieces for even cooking. In a large soup pot, boil the potatoes in salted water for 20 minutes.
  • Meanwhile, wash the head of curly endive thoroughly under cool running water to get rid of all soil - you wouldn't want that gritty texture in your finished dish. Trim any coarse stems and discard any brown leaves. Spin the salad leaves dry using a salad spinner. With a sharp knife, cut the curly endive into thin strips.
  • Fry the bacon in a frying pan, until just crispy. Drain on kitchen paper and crumble into small pieces. Warm the milk in a small saucepan.
  • Drain, shake and dry the potatoes with kitchen towels before mashing with a potato masher or ricer. Working quickly, add the warm milk and butter. Season to taste with nutmeg, salt and white pepper.
  • Mix the raw curly endive through the cooked mashed potato mixture. Add the bacon, mix again, and serve piping hot. Tips:
