- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tablespoon drippings. Set bacon aside. Saute the onion in the drippings until tender. Add the sugar, cornstarch, salt and vinegar; stir until smooth. Gradually stir in the milk until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat. , Stir a small amount of hot mixture into egg; return all to the pan; stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat., In a large salad bowl, combine the endive, hard-boiled eggs and reserved bacon. Add desired amount of warm dressing; toss to coat. Refrigerate leftover dressing.

RECIPE: GRILLED PEAR AND ENDIVE SALAD WITH WARM SHALLOT VINAIGRETTE
When you combine pears brushed with butter and maple syrup drenched in a warm shallot vinaigrette you won't even know that endive has a bitter taste to it!

- Prep Time: 10 minutes Cook Time: 20 minutes Yield: 4 servings Bring a small pot to a boil and heat a medium skillet over medium-low heat. While waiting for the water to boil and skillet to heat up, prep the veggies: Chop the shallot into small pieces; peel the pears, slice them in half lengthwise, remove seeds, and set aside; wash the curly endive and remove the bottom white part of the stem; slice radicchio in half and then into smaller pieces; and add endive and radicchio to a large bowl or 4 separate bowls. The water should now be boiling. Place the sliced pears into the boiling water and boil for 4 minutes until slightly soft. While waiting for the pears to boil, cook bacon on the heated skillet until very crispy - approximately 6 minutes on each side. Once done, place on paper towel to absorb grease. Keep the skillet on the heat and add the chopped shallot - you can use the bacon drippings or wipe clean and add 1 tsp butter. Cook and stir shallot until translucent. Heat a grill plate (or regular pan) on medium heat. Slice the boiled pears into thin slices. Melt 2 tsp butter and stir in 1 tsp maple syrup. Brush both sides of the pears and place on heated grill plate and grill lightly for 2 minutes each side until you can see grill marks. - Combine sugar and flour in small bowl. Gradually whisk in vinegar, then egg. Whisk in broth.
- Cook bacon in heavy large skillet over medium heat until crisp and brown. Whisk in vinegar mixture. Stir until dressing comes to simmer and thickens. Season dressing to taste with salt and pepper. (Can be prepared 1 hour ahead. Let stand at room temperature. Rewarm over low heat before continuing.)

DUTCH POTATO PURéE WITH CURLY ENDIVE & BACON

- Wash and peel the potatoes and cut into similarly sized pieces for even cooking. In a large soup pot, boil the potatoes in salted water for 20 minutes.
- Meanwhile, wash the head of curly endive thoroughly under cool running water to get rid of all soil - you wouldn't want that gritty texture in your finished dish. Trim any coarse stems and discard any brown leaves. Spin the salad leaves dry using a salad spinner. With a sharp knife, cut the curly endive into thin strips.
- Fry the bacon in a frying pan, until just crispy. Drain on kitchen paper and crumble into small pieces. Warm the milk in a small saucepan.
- Drain, shake and dry the potatoes with kitchen towels before mashing with a potato masher or ricer. Working quickly, add the warm milk and butter. Season to taste with nutmeg, salt and white pepper.
- Mix the raw curly endive through the cooked mashed potato mixture. Add the bacon, mix again, and serve piping hot. Tips:

- Remove the dark green outer leaves of the frisee. Separate the frisee into individual leaves and dry well. Cut the bacon into 1/3-inch pieces; warm the olive oil in a small heavy pan, over medium heat, add the bacon pieces and cook until brown but not crisp. Remove from the pan and pour off the fat from the pan and reserve.
- For the dressing, mix the ingredients, whisking in the olive oil and bacon fat, taste for seasoning.
- Fill a heavy saucepan with 4 cups of water and add the vinegar, Heat to just below a simmer and add in the eggs, cracked from their shells. Poach for 3 1/2 to 4 minutes. Use a slotted spoon to remove them from the water and keep warm.
