GRILLED CHERRY TOMATO CHUTNEY
Steps:
- Prepare a charcoal grill for direct grilling, high heat.
- Toss the tomatoes with oil and season with salt and pepper. Transfer to a grill basket and grill until charred and slightly soft, tossing occasionally, about 5 minutes
- Combine the vinegar, sugar, coriander and cumin seeds in a small saucepan and bring to a boil. Reduce the heat and simmer until thickened to a glaze, about 10 minutes. Let cool slightly, then pour over the tomatoes. Toss, mashing the tomatoes slightly. Add the herbs and the zest, toss again, taste and season.

Steps:
- Halve the tomatoes, remove the seeds, chop the flesh and place in a sieve over a bowl so the excess juices can drain away.
- Put the onion and coriander into a bowl. Heat the oil and fry the cumin seeds for about 30 seconds then tip them into the bowl. Mix in the tomatoes, cover and chill.
- To serve, add some salt (see tip below) and serve.

SOUTHERN GREEN TOMATO CHUTNEY
This is a delicious and versitile condiment. I find it especially good with grilled pork loin. This is a great way to use your green tomatoes in the garden at the end of the season. I found this in a cookbook I got at the library called THE COUNTRY STORE. (Unfortunately I did not write down the author's name.) Cooking time does not include processing time.

- Quarter the tomatoes and place them in a large pot.
- Quarter, core and chop the unpeeled apples and add them to the tomatoes.
- Chop the onions and add them to the tomatoes with all the other ingredients.
- Heat gently, stirring until all the sugar has dissolved.
- Bring to a boil and simmer uncovered, stirring occasionally, for one and half hours until the chutney has thickened.
- Pour the chutney into warm, sterilized jars.
- Seal (canning process) immediately.

A few words from the authors: "Naan, the yeasted flatbreads of central Asia, are traditionally baked in wood-fired tandoors, large vertical ceramic ovens that get superhot - hot enough to sear the surface of bread in seconds. Although home cooks try to duplicate the effects of a tandoor by lining the floor of a conventional oven with ceramic tiles, the heat is never the same. We think a grill gives more authentic results, especially a charcoal grill." I think he's more than likely right.

Steps:
- Mix together the yeast and 1/4 cup of the warm water in a large bowl until the yeast is dissolved.
- Mix together the yogurt, cumin and remaining 1/2 cup water in a medium bowl and add to the yeast mixture, stirring until well blended. Add the bread flour and stir vigorously for 2 minutes. Cover loosely with plastic wrap and set aside at room temperature until bubbly, about 30 minutes.
- Stir in the oil, sugar and salt and enough of the whole-wheat flour to make a kneadable dough. Knead on a clean work surface, using additional flour to keep the dough from sticking, until the dough is smooth and elastic, between 5 and 10 minutes.
- Wash out the large bowl and coat it lightly with oil. Turn the dough in the oiled bowl to coat with the oil. Cover with plastic wrap and let rise at room temperature until doubled in bulk, about 1 hour. While the dough is rising, prepare the chutney.
- Light a grill for direct medium-high heat, about 425ºF.
- Divide the dough into four pieces. Roll each into a ball and flatten into a 1/2-inch-thick disk. Cover with a kitchen towel and let rest for 5 minutes. Lightly flour a clean work surface and roll each disk of dough into an oval about 9 inches long and 1/4 inch thick. Coat each bread with oil and stack on a plate to transport to the grill--a spray bottle works best. Careful not to deflate excessively.
- Brush the grill grate and coat with oil. Put the dough on the grill so the disks are evenly spaced, cover and cook until grill-marked and charred in spots on the bottom and puffed on top, about 2 minutes. Turn with tongs and cook on the other side until browned and spotted with char, about 1 minute. Remove to a plate, brush with butter and sprinkle with the cracked and toasted cumin. Serve with the chutney.
- To Make the Grilled Tomato Chutney: Light a grill for direct medium-high heat, about 400°F.
- Soak two or three bamboo skewers in water for at least 30 minutes. Thread the garlic cloves, ginger slices and onion slices on the skewers and coat with a thin film of oil. Brush the grill grate and coat with oil.
- Grill the skewers until the vegetables are lightly charred on all sides, about 5 minutes total.
- At the same time, place the tomato and jalapeno chiles over the fire and char on all sides, turning every 3 to 4 minutes. Remove the stems, and discard the chile seeds if you want the chutney to be milder.
- Chop the garlic, ginger, onion, tomatoes, and chiles finely and combine with the cumin, salt, black pepper, cilantro, and mint. Store in the refrigerator in a tightly closed container for up to 2 weeks. Makes 1 1/4 cups.
- NOTE: "TOASTING AND CRACKING WHOLE SPICES" You will need to toast about 2 tablespoons cumin seeds to prepare the ground toasted cumin and cracked cumin for the bread and chutney. Toast the seeds (or any whole spice) by heating a small, heavy skillet (such as cast-iron) until very hot. Add the seeds, remove from the heat, and stir until the seeds are aromatic and lightly colored, about 1 minute. You can use the same heavy pan (after it has cooled down) to crack or crush the seeds by carefully pounding them on a solid flat surface (like a butcher block) with the bottom of the pan.

- Make your dough: Whisk 3⅔ cups (416 g) all-purpose flour, 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt, 1 Tbsp. sugar, and one ¼-oz. envelope active dry yeast (about 2¼ tsp.) in a large bowl to combine. Add ½ cup plain whole-milk Greek yogurt and 1 cup warm tap water (about 95°) and stir with a wooden spoon, adding more water by the tablespoonful if needed, until all of the flour is moistened and mixture comes together in a shaggy mass, about 1 minute. (The dough will not be smooth at this point; you just don’t want any spots of dry flour remaining.) Cover with a plate and let sit at room temperature 15 minutes.
- Melt 1 Tbsp. ghee or unsalted butter in a small saucepan; remove from heat. Knead dough in bowl until it comes together into a smooth mass, about 2 minutes. Transfer dough to a clean surface (don’t flour) and continue kneading until smooth and elastic, 8–10 minutes more. (The dough will feel very sticky at first and grow smooth and soft as you go. Avoid adding more flour if possible.) Roll dough against work surface to form into a ball and return to bowl. Coat dough all over with reserved melted ghee and turn seam side down; reserve saucepan. Cover bowl tightly with a silicone lid or plastic wrap. Let dough sit in a warm, dry spot until doubled in volume, 1–1½ hours (or chill until doubled in volume, 12–16 hours).
- Meanwhile, make the fresh tomato sauce. Grate 1 large tomato on the large holes of a box grater over a medium bowl.
- Melt 2 Tbsp. ghee or unsalted butter in reserved saucepan over medium-high. Add 2 tsp. nigella seeds and cook, stirring, until fragrant and sizzling, about 30 seconds. Scrape ghee and nigella seeds into grated tomato; season with kosher salt. Reserve saucepan. Transfer half of tomato mixture to a small bowl.
