CUBAN BLACK BEANS WITH CILANTRO AND LIME



Cuban Black Beans with Cilantro and Lime image

A quick and easy version of the Cuban Black beans! I'm sautéing up jalapeños, onions, and garlic and then simmering the beans until they are tender and topping them with cilantro and lime! So, so delicious!

Number Of Ingredients 11

1 tablespoon oil
1 medium red onion, diced
1-2 jalapeños, seeded + ribs removed then diced
4-5 cloves garlic, minced
2 (15 ounce cans) black beans, rinsed and drained
1 cup warm water
1 teaspoon salt
1 teaspoon ground cumin
½-1 teaspoon chipotle chili powder (optional)
2-3 tablespoons cilantro
3 tablespoons lime juice (or more!)

Steps:

  • Heat the oil in a stockpot or dutch oven over medium-high heat. Sauté the onions and jalapeños for 4-5 minutes or until they turn translucent. Add the garlic and continue to cook for 30 seconds.
  • Add the black beans, warm water, salt, cumin, and chili powder and bring to a boil. When boiling, reduce the heat so that it simmers. Allow to cook for 10-15 minutes or until most of the water evaporates leaving a thick sort of broth. At this point, if you'd like to thicken the beans a bit more you can remove about ½ - 1 cup of beans and mash them (using a potato masher or a wooden spoon) to make a thick sort of paste but this is optional. Add the beans back into the pot and stir. Top with fresh cilantro and lime juice stir to combine.

a 16- to 19-ounce can black beans, rinsed and drained
2 tablespoons fresh orange juice
1 tablespoon chopped fresh coriander

Steps:

  • In a small saucepan cook onion in oil over moderately high heat, stirring occasionally, until softened and browned lightly. Add cumin and cook, stirring, 1 minute. Stir in beans and orange juice and cook until beans are heated through and most liquid is evaporated. Stir in coriander.

1 1/2 tablespoons minced garlic (about 2 large cloves)
1 1/4 teaspoons cumin seeds
1 tablespoon olive oil
two 14- to 16-ounce cans black beans, rinsed and drained well
1/4 cup fresh orange juice
1 cup packed fresh mint leaves, washed well, spun dry, and chopped

Steps:

  • In a small heavy saucepan cook onion, garlic, and cumin seeds with salt and pepper to taste in oil over moderate heat, stirring, until onion is pale golden, about 5 minutes. Remove pan from heat and cool onion completely.
  • In a bowl toss onion with beans, orange juice, and salt and pepper to taste. Add mint and toss gently.

The velvety combination of beans and coconut milk is found in a number of African and Caribbean dishes, like Nigerian frejon and Haitian sos pwa nwa. In this recipe, black beans are simmered in coconut milk with a healthy dose of fresh ginger, then finished with lime juice. The result is a light vegan main or side dish. Finish with crushed plantain chips seasoned with lime zest for sweetness and crunch, or top with coconut flakes or tortilla chips, which are also excellent

2 (15-ounce) cans black beans
2 tablespoons coconut oil or extra-virgin olive oil
1 1/2 teaspoons ground cumin or coriander
1 (3-inch piece) fresh ginger, peeled and finely grated (about 3 tablespoons)
1 (13-ounce) can full-fat coconut milk
Kosher salt and black pepper
1/2 cup plantain chips or toasted coconut flakes
1 teaspoon lime zest plus 2 tablespoons juice (from 1 lime)
Hot sauce, for serving (optional)

Steps:

  • Rinse 1 can of black beans, and set aside. In a large saucepan, heat the coconut oil over medium. Add the cumin and half of the ginger and cook until fragrant, stirring constantly, 1 to 2 minutes. Add the rinsed black beans and the remaining whole can of black beans (including the liquid), and the coconut milk; season generously with salt and pepper.
  • Bring to a boil over medium-high, then reduce heat to a simmer and cook, stirring occasionally, until the beans are soft and the mixture is flavorful, 15 to 20 minutes. (If you want a thicker consistency, smash some of beans with the back of a spoon as the mixture cooks, and simmer longer.)
  • Meanwhile, in a small bowl, crumble the plantain chips into bite-size pieces. Add the lime zest and a few generous grinds of black pepper, and stir to combine.
  • Remove the beans from the heat. Stir in the remaining ginger and season with salt and pepper to taste. Stir in the lime juice a little at a time until the beans taste bright but the coconut flavor is still rich. Top with the seasoned plantain chips and serve with hot sauce for more kick.

1 cup chicken broth
1 1/2 teaspoons sea salt

Steps:

  • Drain and rinse black beans.
  • In a medium saucepan, heat olive oil over medium heat and saute garlic and cumin until fragrant.
  • Add black beans, broth and salt.
  • Reduce heat to medium-low, stirring frequently until beans are heated through.
  • OR, after sauteeing the garlic and cumin, you can place everything in a crockpot on low heat for a couple of hours.
  • If desired, stir in the cilantro just prior to serving.

This can be a main meal over rice or a unique side dish. Canned beans may be used but are not as good as cooked dried beans in my opinion. A bit of hot pepper may be used to add some spice to the dish. Prep time does not include time to cook the beans.

2 lbs boneless chicken
1 teaspoon cumin
1/4 teaspoon cayenne pepper
2 tablespoons olive oil
1/2 cup red onion, chopped
1 jalapeno pepper, seeded and minced
3 cups black beans (about 2 cans)
1 1/4 cups cherry tomatoes, cut in halve
2 green onions, thinly sliced
2 tablespoons coarsely chopped fresh cilantro
2 teaspoons red wine vinegar

Steps:

  • Place chicken between 2 sheets of wax paper.
  • Pound with mallet to 1/2 inch thickness.
  • Combine cumin with cayenne pepper and rub over chicken.
  • Heat oil in a large skillet over medium heat.
  • Sauté chicken for 4 minutes per side.
  • Remove to a cutting board.
  • Return to skillet with pan drippings to med heat.
  • Add onion and jalapeño; cook, stirring 1 minute.
  • Add the beans, tomatoes and 3 tbsp water.
  • Cook 1-2 minutes until ingredients are heated.
  • Remove from heat and toss with scallions, cilantro & vinegar.
  • Slice chicken and arrange on top of beans.
  • Enjoy, yum.

1 quart cold water, or as needed
1 onion, chopped
1 green bell pepper, chopped
5 cloves garlic, chopped
2 bay leaves
1 tablespoon salt
1 tablespoon ground cumin
1 tablespoon dried oregano
½ cup white cooking wine
¼ cup distilled white vinegar
¼ cup olive oil

Steps:

  • In a medium stockpot, combine soaked beans (see Editor's Note), water, onion, green pepper, garlic, bay leaves, salt, cumin and oregano. Bring to a boil over medium-high heat; reduce heat to low. Simmer, covered, until beans are tender, about 1 hour. Stir occasionally and add water as necessary so that the beans don't dry out or scorch.
  • When beans are tender, stir in wine, vinegar, and olive oil.
