VINEGAR AND SUGAR CUCUMBER
My mom makes this during the summer when we have cookouts. I always loved cucumbers this way and it tastes even better the next day!

Steps:
- In a large bowl mix first 3 ingredients.
- Peel and slice cucumbers and onion and add to vinegar/water/sugar mix.
- Cover and refrigerate for 1 hour before serving.
- If all the cucumbers and onions are eaten reserve the vinegar/water/sugar mix and add fresh cucumbers and onion.
- My servings are an estimate, as I can eat the whole bowl myself :) The cooking time is actually the refrigeration time.
CUCUMBERS IN VINEGAR
It's good!! Not really a recipe, more of an idea. I like eating these (on occasion) with lunch. They are extremely quick and easy to make. The natural cucumber flavor is promident with a hint of vinegary tang.

Steps:
- Chop up cucumber, place in a bowl or small container with a lid.
- Add vinegar, stir to coat the cucumber in vinegar, or gently shake the container with lid.
- Enjoy immedately or put in the fridge or pack in an insulated lunch kit with an ice pack for a few hours with your lunch.
- Note - this recipe is best cold.

CUCUMBERS IN VINEGAR
Wonderful snack for anyone who likes vinegar, onions and garlic! This recipe is only for one cucumber, adjust quantity as desired.

Steps:
- Put cucumbers, garlic, and onion in a bowl.
- Pour in vinegar and water until covering cucumbers, at a 3-1 ratio between vinegar and water.
- (3parts vinegar for every part water).
- Allow to marinate overnight before serving.
CUCUMBER VINEGAR SAUCE
This is THE classic sauce in which to dip many Thai or Vietnamese snacks, especially fried or roasted foods such as corn cakes, garden rolls, spring rolls, etc. One of my daughters makes this all the time and I finally wheedled the recipe out of her.

Steps:
- Combine the first three ingredients in a small pan over medium heat and heat gently until sugar is dissolved and chili paste is thoroughly mixed.
- Remove from heat and pour into a bowl.
- Allow mixture to cool to room temperature.
- Stir in the coriander and the cucumber and serve immediately.
- Or, store in a well-sealed container in the refrigerator for as long as four days.
CUCUMBER YOGURT SAUCE
Steps:
- Drain the yogurt in a cheesecloth-lined strainer set over a bowl for 1 hour.
- In a bowl, combine all ingredients. Serve as a salad dressing or as an accompaniment with spicy foods, such as vegetable curry.
CUCUMBER SALAD
Steps:
- If Japanese cucumbers are not available, English cucumbers can be substituted. The English cucumbers need to be peeled, cut lengthwise, seeded and sliced into thin half moons. In a large bowl, combine cucumbers and salt and mix well. Add sugar, soy sauce, rice wine vinegar and sesame oil and mix well. Sprinkle with sesame seeds and mix. Let marinate for 20 minutes before serving. Adjust seasonings before serving.
MARINATED CUCUMBER SALAD

- Line a fine mesh strainer with two layers of cheesecloth. Place yogurt in strainer over a bowl.
