BEST PAVE POTATOES
Steps:
- Cook thin-sliced smoked bacon in batches until fried, but not yet crispy, and set aside. Peel and thinly slice russet potatoes using a sharp knife or mandolin. Line the base and sides of a 9 by 13-inch baking dish with parchment, allowing the parchment to hang over the sides, and cover the bottom with two layers of sliced potatoes. Drizzle with some of the heavy cream, thyme, Parmesan, and a sprinkle of salt. Cover with a layer of bacon.
- Top with another two layers of potatoes. Continue layering the cream, thyme, Parmesan, salt, then bacon and potatoes. Continue to repeat layers in this order, finishing with two layers of potato and topping it off with cream, thyme, Parmesan, salt, and melted butter.
- Fold in the tops of the parchment paper and cover with plastic wrap. Place a smaller baking pan on top (it should fit into the first pan to rest on top of the potatoes) and add a heavy weight, such as cans. Allow to rest for 20 minutes.
- Preheat the oven to 350°F and remove the smaller pan and weights along with the plastic wrap. Cover the top with foil and bake for 1 hour, until the potatoes are tender. Remove the foil and set it aside. Bake for another 20 minutes to brown the top of the potatoes.
- Add the foil back to the baking pan and top with the smaller baking pan and weights for a second time. Chill in the refrigerator overnight. This step is crucial for the potato pave to keep their shape, so don't skip out on chilling it!
- When ready to make the next day, preheat the oven to 425°F and line two baking sheets with parchment paper.
- Remove the potatoes to a large cutting board and use a knife to trim the edges.
- Cut the remaining potato pave into small squares.
- Skewer each one from top to bottom with a toothpick to keep the potatoes together.
- Transfer each skewer to the prepared lined baking sheets, making sure they are on their sides and not touching each other. Bake in preheated oven until lightly golden, 10 minutes or so. Gently flip and bake another 10-15 minutes until crisp and golden. Rest on paper towels to drain excess oil. Serve sprinkled with fresh thyme and hot sauce, and enjoy!

- Boil the potatoes until tender, about 15 minutes. Drain and return to the hot pot. Mash with the milk or half-n-half. Stir in the cheese and mustard and combine, and then season with salt and pepper.
SCALLOPED YUKON GOLD AND SWEET POTATO GRATIN WITH FRESH HERBS
Two kinds of potatoes are thinly sliced and combined with cream, butter, cheese, and a mixture of herbs.

- Fill large bowl with cold water. Working with 1 Yukon Gold potato at a time, peel, then cut into 1/8-inch-thick rounds and place in bowl with water. Repeat with sweet potatoes. Combine cream, butter, and garlic in medium saucepan; bring to simmer. Remove from heat. Mix all herbs in small bowl. Mix sea salt and black pepper in another small bowl.
- Butter 13x9x2-inch glass baking dish. Drain potatoes, then pat dry with kitchen towels. Transfer half of potatoes to prepared baking dish. Use hands to distribute and spread evenly. Sprinkle with half of salt-pepper mixture, then half of herb mixture. Sprinkle with half of cheese. Repeat with remaining potatoes, salt-pepper mixture, herb mixture, and cheese. Pour cream mixture over gratin, pressing lightly to submerge potato mixture as much as possible. DO AHEAD: Can be made 6 hours ahead. Cover with plastic wrap and chill. Remove plastic wrap before baking.
- Preheat oven to 400°F. Cover gratin tightly with foil. Bake 30 minutes. Uncover; bake until top of gratin is golden and most of liquid is absorbed, about 25 minutes longer. Let stand 10 minutes; serve.
GRUYERE POTATO GRATIN
This is a traditional Swiss recipe from my Grossmutter.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish with the softened butter.
- Toss the potato slices and chopped onions with salt and pepper, and spread 1/3 of the mixture into the prepared baking dish. Sprinkle half of the Gruyere cheese over the potatoes, then add another layer of potatoes. Sprinkle on the remaining cheese followed by the remaining potatoes. Mix together the water and wine, and pour into dish. Cover the baking dish with aluminum foil.
- Bake in preheated oven until the potatoes are tender, about 1 hour 15 minutes. Once tender, remove the foil, and pour the cream evenly over the potatoes. Bake uncovered for an additional 15 minutes to brown the top and thicken the cream.

GRUYERE SCALLOPED POTATOES
A delicious scalloped potatoes recipe. Use a shallow casserole dish. If you need a faster cooking time, parboil the potatoes for a few minutes.

- Preheat oven to 350°F; butter a large casserole dish with 1 1/2 Tbsp of butter. If you use a casserole dish that is about 9x13, you'll have more surface area, more of the potatoes will brown, and the cooking time will be faster.
- Layer the bottom of the casserole dish with 1/3 of the potato slices.
- Sprinkle with salt and pepper.
- Layer on 1/2 of the sliced onions and 1/2 cup of the Gruyere cheese.
- Layer on 1/2 of the bacon, 1/2 of the parsley and chives.
- Sprinkle with a little Parmesan.
- Repeat by layering on 1/3 of the potato slices, sprinkle again with salt and pepper.
- Layer on the remaining sliced onions, 1/2 cup of the Gruyere cheese, the remaining bacon, parsley and chives.
- Sprinkle with a little Parmesan.
- Top the casserole with the remaining potato slices. Add the half and half. Dot the potatoes with the remaining 1 1/2 Tbsp of butter.
- Cover the casserole with aluminum foil and bake in the oven for one hour. After an hour, remove from the oven, remove the foil, sprinkle on the remaining cheese.
- Return to the oven for an additional 30-40 minutes.
- When done, the potatoes should be tender, but not mushy, and the liquid should be mostly absorbed.
- Note: For a faster cooking time, you can parboil the sliced potatoes for 8 minutes first, patting them dry, before layering them in the casserole pan. In this case the total oven cooking time is about 35-45 minutes.
GRUYERE POTATOES
I really like the flavor imparted from the beef broth, instead of more dairy from cream or milk, as is usually found with scalloped potatoes.

- Preheat oven to 425 degrees. Butter inside of 2-quart casserole dish with 2 T. butter.
- Start bringing broth to a boil after all of your ingredients are ready to go.
- Pat dry half of potatoes. Overlap slices on bottom of baking dish. Sprinkle with some pepper, half of onion slices, and half of both cheeses. Dot with the rest of the butter.
- Repeat layering for a second layer. Last layer isn't topped with butter, though.
- Pour boiling broth over the potatoes.
- Bake for 55-60 min or until done (potatoes are tender, top is brown and broth is absorbed).
- Great on Day 2 also.

- Preheat oven to 325°. Cut 1 garlic clove in half and rub the inside of a 3-qt. shallow baking dish with cut sides. Smear butter all over inside of dish. Bring shallots, cream, salt, pepper, 1 Tbsp. thyme, and remaining 4 garlic cloves to a simmer in a small saucepan over low heat; cook until shallots and garlic are very soft, 15–20 minutes. Let cool slightly. Transfer to a blender; blend until smooth.
- Arrange potato slices in prepared dish, fanning out a handful at a time and placing in dish at an angle (this ensures every scoop will have tender potatoes from the bottom and crisp edges from the top). Shingle as you work until bottom of dish is covered. Tuck smaller slices into any gaps to fill. Pour cream mixture over potatoes and cover dish tightly with foil. Bake potatoes until tender and creamy, 60–75 minutes. Let cool.
- Place rack in highest position; heat broiler. Remove foil and top potatoes with Gruyère and Parmesan. Broil until cheese is bubbling and top of gratin is golden brown, 5–10 minutes. Serve topped with more thyme leaves.
- Do Ahead: Gratin can be baked 1 day ahead. Cover and chill. Bring to room temperature before broiling.
