Salad:
3/4 ounce dried wakame seaweed, cut into 1-inch pieces
2 cucumbers, peeled, seeded, and diced
Dressing:
2 tablespoons apple cider vinegar
1 1/2 tablespoons coconut aminos
1 tablespoon extra-virgin olive oil
Juice of 1/2 small lemon
1/2-inch piece of fresh ginger, peeled and grated
Pinch of fine sea salt

Steps:

  • In a bowl, soak the wakame in warm water for 5 to 10 minutes. Drain in a colander. Combine the seaweed and cucumber in a bowl. In another bowl, whisk together the vinegar, coconut aminos, olive oil, lemon juice, ginger, and salt. Toss the vegetables with 2 tablespoons dressing. Taste and add more dressing if desired.

1/2 cup wakame seaweed, hiziki or 1/2 cup arame seaweed
1 medium japanese cucumber (or English cucumber)
2 tablespoons rice vinegar
1/2 teaspoon sugar (optional)
1 teaspoon soy sauce

Steps:

  • Bring a small pot of water to a boil.
  • While the water is coming to a boil, soak the seaweed in cool water for 10 minutes.
  • Put the seaweed into the boiling water, remove immediately, then plunge into the cold water.
  • Dry the seaweed, trim any rough parts, and chop.
  • Meanwhile, cut the cucumber in half length-wise. If there are lots of seeds, scrape them out. Slice as thinly as possible.
  • Mix the cucumber and seaweed.
  • Combine the remaining ingredients and pour over the vegetables.
  • Chill up to 2 hours before serving.

1 1/2 pounds Kirby cucumbers, sliced paper thin
2 1/4 tablespoons salt
1/4 cup fuero wakame (dried green seaweed strips), reconstituted in 1 cup water
1/2 cup Sunomono Su Konbudasi (vinegar-and-kelp sauce; see note)
2 to 4 teaspoons sugar
6 lemon slices
1 tablespoon sesame seeds, toasted

Steps:

  • In a bowl, thoroughly mix the cucumbers with the salt by hand for about 2 minutes and let them sit for 10 minutes. Fill the bowl with cold water and strain.
  • Strain the seaweed. In a clean bowl, combine the vinegar sauce and sugar to taste. Toss in the cucumbers and the seaweed until well combined with the sauce.
  • Serve mounded on individual plates with a slice of lemon and sprinkled with sesame seeds.

3/8 cup miso (soybean paste)
1 cup sesame oil
6 cups shredded dashi kombu (kelp)

Steps:

  • Through the feed opening of a running blender, add, 1 at a time, vinegar, salt and miso, then leaving the blender running, add the oil in a slow thin stream. Toss the dashi kombu enough dressing to coat and let sit for 1 hour.

By crushing our cucumber before we cut it, we produce flavors that un-smashed cukes can't. When you crush the cells in a vegetable, as opposed to cutting cleanly through them, certain compounds get mixed together, which can result in a significantly different flavor. In cucumbers this is a good thing--onions, not so much. But this salad is one of my all-time favorite cold summer side dishes. The only decision you're going to have to make is how long to let the cucumbers marinate--half an hour or so or not at all.

1 teaspoon white sugar
1 ½ teaspoons kosher salt, plus more as needed
2 cloves garlic, finely crushed
2 tablespoons seasoned rice vinegar
1 teaspoon soy sauce

Red pepper flakes to taste
2 teaspoons toasted sesame seeds

Steps:

  • Wrap each cucumber in plastic wrap to minimize splattering. Place on a work surface and pound with a flat object (like a meat pounder) until cucumbers crack and are slightly flattened. Remove from plastic. Cut cucumbers in half; halve each side lengthwise. Slice into 1- to 1 1/2 -inch wide slices. Transfer to a strainer set over a bowl.
  • Sprinkle cucumber with sugar and salt; mix until well combined. Refrigerate bowl and strainer for 30 to 60 minutes so cucumber pieces can drain into the bowl.
  • Place garlic, seasoned rice vinegar, soy sauce, sesame oil, and red pepper flakes in a large bowl. Whisk together thoroughly.
  • Transfer drained cucumbers into bowl with dressing. Toss to coat. Cover with plastic wrap; refrigerate for about 30 minutes to allow flavors to mingle.
  • Place cucumbers in serving bowl and sprinkle with sesame seeds.

Seaweed has amazing properties! Sea vegetables are virtually fat-free, low calorie and are one of the richest sources of minerals in the vegetable kingdom. According to Seibin and Teruko Arasaki, authors of Vegetables from the Sea, "All of the minerals required by human beings, including calcium, sodium, magnesium, potassium, iodine, iron, and zinc are present in sufficient amounts. In addition, there are many trace elements in seaweeds." They also contain vitamins as vitamin A (in the form of beta-carotene), B1, B2, B6, niacin, vitamin C, pantothenic acid, and folic acid. Analysis has shown trace amounts of vitamin B12, which rarely occurs in land vegetables. Sea vegetables have been shown to cleanse the body of toxic pollutants. Seaweed feeds the shafts and the ducts of the scalp to help improve the health of the hair. It has been said that the thick, black, lustrous hair of the Japanese is partly due to their regular diet of brown sea vegetables such as arame. Research has shown that minerals are important to healthy hair growth, and arame has a high mineral content. Other health benefits, according to Carlson Wade's book Health Secrets from the Orient, include regulating the hormones, enriching the bloodstream, assisting in metabolism, promoting a youthful skin color, and helping to warm the body to promote mental youthfulness. 2 tbsp sesame oil
1 tbsp cracked black pepper
1 tbsp sunflower oil
400g yellowfin tuna steaks
3 cucumber , peeled, halved, deseeded and cut into ribbons or spiralised
1 mooli (or use extra breakfast radishes, see below), peeled and cut into ribbons or spiralised
8 breakfast radish , trimmed and finely sliced
small piece ginger , peeled and cut into thin matchsticks
2 tbsp sushi ginger , finely chopped (optional)
2 sheets nori , cut into strips
3 tbsp mirin
2 limes , juiced
large bunch coriander , chopped
1 red chilli , deseeded and chopped
1 tbsp coriander seeds , toasted and lightly crushed, to serve
4 tbsp natural yogurt
1 tsp soy sauce
1 tsp wasabi , or to taste
1 lime , juiced

Steps:

  • Whisk the soy sauce, sesame oil and pepper together in a shallow dish. Heat the sunflower oil in a non-stick frying pan. Sear the steaks on both sides until cooked to your liking. Transfer to the dish with the marinade, then chill for 1 hr. Turn the steaks, then continue to chill until ready to assemble.
  • Tip all the veg into a large serving bowl with both types of ginger and the nori. Drizzle over the mirin and lime juice, then add the coriander and chilli. Toss and rest for 20 mins.
  • Make the dressing by whisking everything together. To serve, slice the tuna and arrange over the salad, then sprinkle over the coriander seeds and drizzle over the dressing.

1/2 pound thin-skinned cucumber
4 ounces konyaku, shredded (optional)
1/2 to 1 pound cooked chicken or cooked shrimp (optional)
1/4 cup minced shallot, scallion or red onion
2 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon mirin
1 tablespoon sesame oil
1/4 teaspoon cayenne, or to taste
Salt, if necessary
1 tablespoon toasted sesame seeds (optional)

Steps:

  • Rinse seaweed, and soak it in at least 10 times its volume of water.
  • Wash and dice cucumber; do not peel unless necessary. When seaweed is tender, 5 minutes later, add konyaku if you are using it, then drain and squeeze mixture to remove excess water. Pick through seaweed to sort out hard bits; chop if pieces are large. Combine cucumber and seaweed; shred or chop chicken or shrimp if necessary, and add to bowl.
  • Add all remaining ingredients except sesame seeds, and toss; taste, and add salt or other seasonings as necessary; serve garnished with the sesame seeds.
