Steps:
- I wash and score the cucumber with a fork along the entire lenth of the cucumber, all the way around, to make a design Slice thinly and set aside.
- Combine cream cheese, Good Seasonings Italian mix and Tabasco sauce.
- Spread cream cheese mixture, generously on each slice of cocktail bread, place slice of cucumber and sprinkle the top with dill.
CUCUMBER CREAM CHEESE SPREAD
A creamy, yet light and refreshing spread that is perfect to use on crackers, baguettes, bagels or on top of vegetable slices.

Steps:
- Add cucumber to food processor bowl.
- Cut the roots off green onions and place in food processor.
- Cover and process until coarsely chopped - be sure to not over process. You want chunks not puree/liquid.
- Add cream cheese, Worcestershire sauce and salt to the bowl and cover and process until smooth. Transfer mixture to a serving bowl.
- Cover and refrigerate overnight to allow the flavors to meld.

Steps:
- Trim away roots from base of green onion, place in food processor. Add cucumber to food processor bowl.
- Cover and process until coarsely chopped (DON'T OVERPROCESS!)
- Add cream cheese, Worcestershire sauce and salt.
- Cover and process until smooth. Transfer to a bowl.
- Cover and refrigerate overnight for flavors to blend. Please don't skip this step and try to eat it right away - trust me, it makes a big difference in flavor when you let it hang out overnight.

- In a small bowl, combine the cream cheese, fresh dill, lemon zest, and lemon juice. Season the mixture with salt and pepper.
- Lay the slices of bread on your work service and distribute the cream cheese evenly among each slice, spreading into a thin layer. Arrange the cucumber slices in rows over 3 slices of the bread. Top with the remaining bread, and cut into quarters so there are 4 pieces from each sandwich. Serve immediately.

This was given to me by a friend. She makes this for sandwiches to be served at showers and parties. It is very refreshing and a great way to use some of those summer cucumbers. Just spread onto bread!

- Cut cucumber with a mandolin to make very fine slices. Lay slices on paper towels to drain.
- In a bowl, stir cream cheese, mayonnaise, garlic salt and dill together until smooth.
- Spread each slice of bread with a layer of the cream cheese mixture. Then lay cucumber slices in overlapping rows on one half of the bread slices. Top with remaining wheat bread slices.
