CLASSIC CUBAN SANDWICH

3 pounds fresh ham
6 cloves garlic, minced
2 tablespoons ground cumin
Kosher salt and coarsely ground black pepper
Flatbread, recipe follows
Beef tallow, for griddle
Sliced Swiss cheese
Spicy mustard
Sliced onions
Pickle slices
4 ounces fresh yeast
1 1/4 ounces sugar
4 pounds bread flour
1/3 cup olive oil, plus more for oiling baking sheets
2 ounces kosher salt

Steps:

  • Preheat a smoker, preferably with pecan wood, to 200 degrees F.
  • Coat the ham with the garlic, cumin and liberal amounts of salt and pepper. Rub the seasoning into the meat and place on a roasting rack or wire rack. Place the rack into the smoker and cook until the ham reaches an internal temperature of 145 degrees F, about 4 hours. Let rest for at least 30 minutes before slicing.
  • Cut the flatbread into twelve 8-by-9-inch rectangles and toast with beef tallow on a griddle over high heat until light golden brown. Slice each rectangle in half horizontally, then smear the cut-sides with spicy mustard.
  • On baking sheets, make twelve stacks of sliced ham and Swiss cheese; broil until the cheese is melted and the meat is warmed. Then put the stacks on the flatbread bottoms, top with some onions and pickles for sandwiches. Transfer the sandwiches to a hot griddle prepped with beef tallow and grill, pressing down with a weight, until golden brown. Slice the sandwiches on a diagonal to plate.
  • Mix together the yeast, sugar and 1 1/2 cups of warm water (just under 110 degrees F) in a large bowl and set aside until tripled in size.
  • Place the yeast mixture into the bowl of a stand mixer fitted with the dough hook and add the flour, oil, salt and 4 cups of tepid water. Mix on low speed until incorporated, then mix on medium speed for 10 minutes. Remove the hook but leave the dough in the mixer bowl. Let rise until doubled in size, about 30 minutes.
  • Preheat the oven to 375 degrees F. Remove the dough from the bowl and divide into 4 pieces. Place each piece on an oiled baking sheet and let rest for 30 minutes. Press the dough out to fill the baking sheets, then let rest for another 20 minutes. Press the dough again to fill out the baking sheets; let rest for 20 more minutes. Press the dough for the third time to fill out the baking sheets; let rest for 5 minutes.
  • Bake for 18 minutes, rotating the baking sheets halfway through.

1 pound boneless pork shoulder
Kosher salt and freshly ground black pepper
1 tablespoon ground cumin
1 tablespoon dried oregano
2 tablespoons extra-virgin olive oil
4 cloves garlic, peeled and gently smashed with the side of your knife
1/4 teaspoon dried red chili flakes
1 medium onion, sliced
1 cup fresh orange juice
1 lime, juiced
1 cup low-sodium chicken broth
2 bay leaves
1 long Cuban bread roll
3 tablespoons Dijon mustard
8 thin slices Swiss cheese
1 cup bread and butter pickles
8 thin slices deli ham
Olive oil
You can do this in a regular Dutch oven, but for convenience and time use a pressure cooker as follows:

Steps:

  • Begin by braising the pork shoulder. Tie the shoulder in 4 places with kitchen twine so it will hold its shape while being cooked or ask your butcher to do this for you. Season the pork with salt, pepper, cumin and oregano. Set the base of a pressure cooker over low-medium heat and add a 2 count of olive oil.
  • Add garlic and chili flakes and as the oil heats up it will become fragrant and infuse the oil. Add the pork. Add onions around the pork and brown slightly before adding orange juice, lime juice, stock and bay leaves.
  • Secure the lid of the pressure cooker and cook for 20 to 25 minutes depending on the size of your pressure cooker. The pork should be tender when done. When done allow to cool in juices before removing twine and slicing.
  • To prepare Cuban sandwiches, split bread in half then layer the sandwich with mustard, cheese, pickles, ham, pork then cheese again (the cheese glues everything together). Season with salt and pepper in between the ham and pork layers. (Optional: drizzle a little of the pork braising liquid over the meat as well).
  • To cook, heat a large cast iron skillet or grill pan over medium heat and lightly coat with olive oil. Place the sandwiches on the skillet and top with another heavy skillet and a couple of heavy weights (bricks, or cans of tomatoes work well). Press down firmly and cook for 5 to 7 minutes per side until the sandwich has compressed to about a third of its original size and the bread is super-crispy. Serve with beans, rice and plantain chips.

It is generally believed that the Cuban cigar workers who migrated to the Tampa, FL area/Ybor City back in the early 1900's brought the Cuban sandwich to the US. Originally called the "mixto" or mixed sandwich, the Cuban, as it is known today, became a workingman's lunch for those employed in the cigar industry. Note--if you can't get sour oranges in your area, try equal parts of orange and grapefruit juice or 2 parts orange juice to 1 part lemon juice and 1 part lime juice.

3 garlic cloves
1 teaspoon salt
1 tablespoon dried oregano
1 cup minced onion
1 cup sour orange juice
1/2 cup Spanish olive oil
1 (2 lb) boneless center cut pork loin roast
Cuban bread
butter, softened
sliced dill pickle
1 lb thinly sliced cuban cooked pork
1 lb thinly sliced good-quality ham
1/2 lb thinly sliced mild swiss cheese
yellow mustard (optional)
mayonnaise (optional)

Steps:

  • To make the Cuban Roast Pork: Mash the garlic and salt together using a mortar/pestle.
  • Place the mash mixture in a small bowl; add in oregano, onion, and sour orange juice; mix thoroughly.
  • Heat oil in a saucepan over medium heat; add in the mash mixture and whisk to blend.
  • Remove from heat and set marinade aside.
  • Pierce the pork roast with a sharp knife or fork.
  • Set aside a small amount of the marinade for use during the roasting period.
  • Pour remaining marinade over the pork, cover, and refrigerate 2-3 hours.
  • Preheat oven to 325°; remove pork from marinade and place on a rack in a roasting pan.
  • Sprinkle reserved marinade over pork.
  • Roast until completely cooked and a meat thermometer registers 160° (about 20 minutes per lb).
  • Baste occasionally with the pan juices.
  • Remove pork from oven and let rest for at least 20 minutes before thinly slicing the meat.
  • Bring remaining pan juices to a boil and simmer until juice is reduced by half; use this juice to sprinkle onto the meat in the sandwiches.
  • To make the sandwiches: cut the bread into 4 sections, each about 8 inches long; slice these sections in half horizontally; spread butter on the inside of both halves.
  • Generously layer sandwiches with filling ingredients in the following order: pickles, roasted pork, ham, and cheese.
  • Spread with the optional mustard or mayonnaise if desired.
  • Preheat a pancake griddle or large skillet.
  • Lightly coat hot griddle or skillet with cooking spray; add in the first sandwich (make sure that your griddle or skillet is not too hot or the crust will burn before the cheese melts).
  • Place a heavy iron skillet on top of the sandwich to flatten it (you want to smash the sandwich, compressing the bread to about a third of its original size).
  • Grill the sandwich for 2-3 minutes on each side, until the cheese is melted and the bread is golden.
  • Repeat the process for each sandwich.
  • Slice each sandwich in half diagonally and serve.
  • Note--Additions like Genoa salami, mayonnaise, lettuce, tomato, and onion have become popular in the past forty years but are considered heresy by purists; in the old days, the sandwich was brushed on the outside with a small amount of pork drippings.

This is one of the more famous sandwiches straight out of the island of Cuba. This recipe came from my uncle who used to work at a restaurant in Pinar del Rio, Cuba and now works at a Cuban cafeteria here in Miami. This sandwich is best served with fried plantain chips and a cold mamey milkshake!

4 sweet bread rolls
½ cup mayonnaise
¼ cup prepared mustard
1 pound thinly sliced cooked ham
1 pound thinly sliced fully cooked pork
1 pound sliced Swiss cheese
1 cup dill pickle slices
2 tablespoons butter, melted

Steps:

  • Split the sandwich rolls in half, and spread mustard and mayonnaise liberally onto the cut sides. On each sandwich, place and equal amount of Swiss cheese, ham and pork in exactly that order. Place a few pickles onto each one, and put the top of the roll onto the sandwich. Brush the tops with melted butter.
  • Press each sandwich in a sandwich press heated to medium-high heat. If a sandwich press is not available, use a large skillet over medium-high heat, and press the sandwiches down using a sturdy plate or skillet. Some indoor grills may be good for this also. Cook for 5 to 8 minutes, keeping sandwiches pressed. If using a skillet, you may want to flip them once for even browning. Slice diagonally and serve hot.

1 large loaf of cuban bread, looks like italian or french bread but with a white crust cut loaf into three equal pieces and slice each in half
1 lb sliced ham from the deli. preferably serrano ham or your favorite ham
1 lb sliced pork roast from the deli
1 lb sliced good swiss cheese (must be swiss cheese)
1 jar(s) sliced dill pickles try to get the long pickle slices instead of the round.
1 jar(s) mustard
1/4 stick soft butter

Steps:

  • 1. Heat a sandwich press to 350 degrees. If you do not have one a griddle will do fine. Heat the griddle. You will need a heavy object such as a cast iron fry pan or as I did for a long time. I had my husband find me a brick which I washed and rinsed real well. I dried it and then I wrapped it in heavy duty aluminum foil. Each time I would make Cuban sandwichs I used my foil coverd brick as a press. I finally got a George Foreman table top grill some years back and now I press my sandwhich in my George Forman grill. Now back to making the sandwiches.
  • 2. Take a loaf of Cuban bread and slice from one end to the other in half open the bread and spread some mustard on each side. Next take slices of ham and lay them all across the bread overlapping a little on each slice again take more slices of ham and cover the same slices you just laid out with a second layer of ham. Now take the sliced pork roast and do the same thing two layers all across. Some people like to do as many as three layers across. It depends on how hearty you like your sandwiches. Next take your swiss cheese slices and layer across the meat covering the whole sandwich. Last layer the pickles all over the cheese and close the sandwich.
  • 3. Now cut your sandwich evenly into three parts. With a pastry brush spread some soft butter over the entire surface of all three sandwiches turn over and do the same on the underside of the sandwich place on the hot sandwich press and grill for at least 3 minutes. You can open the grill and check to see if the sandwich is turning crispy golden brown when golden and the cheese is melted the sandwich is done.
  • 4. If using a hot griddle put the sandwich on the griddle and weigh it down with a heavy object like a cast iron pan or foil covered brick. when crispy on one side turn sandwhich over and do the other side. should be like three minutes on each side. Your sandwich should be 1/3 slimmer than when you put it on the grill it should be crispy and golden on both sides and the cheese should be melted. Cut diagonaly and serve.
  • 5. Follow the same procedure for the midnight sandwich. Buy sweet egg bread rolls slice in half and put the same ingredients as in the Cuban sandwich ham, pork roast, cheese and pickles with mustard on each side. Grill in the sandwich Press or on the griddle or the George Foreman table top grill. In the picture above the long sandwich is the Cuban and the darker one is the midnight. This Medianoche Sandwich from Cuba is a perfect, filling lunch or a fun, late-night snack. It's piled high with pork, ham, mustard, pickles and Swiss cheese and then grilled to perfection. You're going to love this Cuban Recipe!

1 lb pork loin center cut chop (boneless)
1 tbsp Olive Oil
Salt and Pepper (to taste)
1 tsp honey
3 Brioche Buns
½ -¾ lb Deli Spiral Sliced Ham
6 slices swiss cheese
9 baby dill pickles (sliced in half lengthwise)
6 tbsp yellow mustard
2 tbsp butter

Steps:

  • Preheat the oven to 400 degrees. Place the 1 lb center cut pork loin in a roasting pan. Drizzle with 1/2 tbsp olive oil, then salt and pepper to taste. Drizzle one side of the pork loin with 1 tsp honey. Turn the pork loin over so that the honey-coated side is down.
  • Roast the pork loin for about 30 minutes, or until a thermometer inserted into the meat reads 160 degrees Fahrenheit.
  • Remove the pork from the oven. Shave off thin slices of the pork lengthwise.
  • Lay out your 3 brioche rolls or bread, and equally layer the filling for each sandwich. Start with sliced pork, then spiral cut ham, then 2 pieces of Swiss cheese, then 3 baby dill pickles, and 2 tbsp mustard on each sandwich.
  • Heat a skillet and melt the 2 tbsp butter. Put the sandwiches into the skillet. Place a 10" cast iron skillet on top of the sandwiches to press them down, grilling until crispy. Flip and do the same on the other side.

A classic homemade Cuban sandwich recipe (Cubano) with mojo-marinated pork, swiss, pickles, and lots of mustard. And also lots of butter, but let's try to focus on the calorie-free mustard.

6 ounces thinly sliced boiled ham
Softened butter (for brushing)
6 six-inch soft baguettes or hero rolls (split lengthwise)
Yellow mustard (for brushing)
3/4 pound thinly sliced Cuban Mojo-Marinated Pork (or store-bought roast pork)
8 ounces thinly sliced Swiss cheese
3 half-sour dill pickles (thinly sliced (I used regular ol' dill chips))

Steps:

  • Heat a skillet over medium, and add the sliced boiled ham. Cook for about 1 minute on each side, or until brown spots start to appear. Remove to a plate.
  • Brush or spread softened butter over the cut side of each roll. Add to the skillet and brown the cut side of the bread until it is golden and starting to toast.
  • When the bread is toasted, spread with mustard. Use as much as you like.
  • Layer the pork, browned ham, Swiss, and sliced pickles. Top with the bread. Brush the top and bottom of the sandwich with butter.
  • Grill the sandwiches in the same skillet, using another heavy skillet to press down the sandwich. Add cans or something else heavy if it's not being pressed well. If you have a George Foreman or a panini press, use that. Cook for about 3 minutes, then flip the sandwich, squish it again, and cook for another 2-3 minutes or so. Keep an eye on it. You want to outside to be crisp and golden and the cheese melted.
  • Slice in half and devour immediately!

4 large rolls Pan de Media Noche or sweet roll-like brioche or challah, sliced lengthwise
4 tablespoons yellow mustard
12 ounces sweet-cured ham, thickly sliced
8 ounces Lechón Asado, sliced, trimmed of any excess fat, and at room temperature
4 ounces Swiss cheese (Emmentaler or Jarlsberg), thinly sliced
2 large dill pickles, thinly sliced crosswise
4 tablespoons butter, melted and cooled to room temperature, plus more for greasing

Steps:

  • Spread both sides of each roll with mustard. Layer the bottom half with ham, pork, and cheese to cover the bread from end to end. Top with sliced pickles to taste. Brush the outside of the bread, both top and bottom, with butter.
  • Heat a sandwich press over medium heat. Lightly brush the inside of the press with additional butter. Press the sandwich until the cheese is melted and the meats are warm, 3 to 5 minutes.
  • Alternately, heat a 12-inch cast-iron skillet over medium heat. Create a press by wrapping a brick, heavy skillet, or can of soup in aluminum foil. Place the sandwich in the skillet and press down on the sandwich, turning once, until it is warmed through and the outside crust is golden, 2 to 3 minutes per side. Repeat with the remaining sandwiches. Slice on the diagonal and serve.
