Steps:
- Soak the beans with the baking soda in 10 cups of water for about 3 hours. Rinse and drain.
- Add the beans to a Dutch oven and add 10 cups fresh water, along with the olive oil, cumin, oregano, sugar, vinegar, cilantro stems, bay leaves and onion. Simmer until the beans are soft, about 2 hours. Add 2 teaspoons of salt (or more to taste) and freshly ground black pepper to taste.

- In a dutch oven or large pot, heat olive oil over medium heat. Add onions, green peppers and garlic. Sauté for 2 minutes.
- Stir in tomato sauce, wine (or stock), vinegar, pimientos, bay leaf, parsley, oregano, salt and pepper. Bring to a boil then cover. Reduce heat to low and simmer for 15 minutes.
- Add shrimp and cook for 3-4 minutes, stirring occasionally until they are fully cooked. Serve over rice or with veggies. Enjoy!

Cuban Black Beans and Rice is a simple, satisfying side dish bursting with Latin flavors like garlic, oregano, and cumin.

Steps:
- Soak beans overnight to soften and remove any small hard stones. The next day, strain and rinse soaked beans with fresh water.
- To cook beans, place in a large pot and add enough water to cover the beans by two inches. Carefully smash whole garlic cloves with the back of a knife and add to the pot of beans along with 2 of the bay leaves.
- Bring the pot to a boil then reduce heat to low and simmer until tender (90 minutes or up to two hours.) Set aside once cooked.
- Next, in a large Dutch oven, heat olive oil over medium-high heat and sauté onions, peppers, and garlic. Add spices (salt through cayenne) and continue stirring until vegetables have softened, 4-6 minutes.
- Rince rice in a strainer until the water comes out clear
- Stir in rinsed (uncooked) rice and sauté for 2 minutes so that the rice starts to toast and lightly brown.
- Pour in chicken broth and add reserved, cooked black beans along with bay leaves. Stir once then bring to a boil. Stir a second time then reduce heat to low and place a tightly fitting lid on the pot. Cook until liquid has been absorbed, about 15 minutes.
- Use a fork to loosen the rice and bean mixture then serve with fresh cilantro and lime wedges.

- In a large pot add water, beans and ham hocks. Boil for 45 minutes until tender.
- In a medium saucepan add oil, onions, garlic, peppers, cumin, paprika, oregano, pepper and saute until translucent, do not brown.
- When bean mixture has reduced by 1/2, add the onion saute mixture and the salt. Continue to reduce until water is level with bean mixture. Hold warm for service.
CUBAN SHRIMP CREOLE (ENCHILADO DE CAMARONES)
Steps:
- Heat a large sauté pan over medium heat and add in the olive oil, onions, and green peppers. Sauté until the onions and peppers soften.
- Add in the garlic and 2 tablespoons from the can of tomato sauce. Cook for 2 minutes.
- Add in the remaining tomato sauce, water, white wine, olives, oregano, salt, pepper, and cumin. Bring to a simmer for 5 minutes, uncovered.
- After the 5 minutes, add in the shrimp and simmer, covered for 10 minutes.
- Serve immediately over white rice.

- For grits: Begin preparing grits according to package instructions (sometimes I split liquid called for w/half water/half milk). Whisk in salt, pepper, garlic powder, and parsley. Whisk occasionally; as grits begin to thicken, stir in butter to incorporate. Let sit for another minute. Whisk/stir in shredded cheese and beer until smooth.
- Adjust seasonings, butter and cheese to taste. Keep covered and warm until ready for shrimp.
- For shrimp: Preheat the oven broiler.
- Stovetop, warm a 12-inch oven safe skillet over medium heat, add olive oil. When oil begins to ripple/shimmer, whisk in paprika, cumin, garlic powder, salt and pepper. Whisk together and let simmer for about one minute.
- Add the shrimp, shake the skillet to distribute shrimp evenly in 1 layer over bottom of skillet. Wait 30 seconds, turn shrimp over once. Place skillet in oven under preheated broiler for 2 minutes. Carefully remove skillet from oven. Spoon shrimp and olive oil mixture over prepared grits.
CUBAN BEANS AND RICE
These Cuban beans and rice are made with black beans and bacon and is authentic and easy and different than Puerto Rican beans and rice.

- Place the beans in a large pot and cover with water by at least 3 inches (8 cm). Slide the pot in the refrigerator and let soak for at least 12 hours and up to 24 hours.
- Drain the beans and return them to the pot. Add enough fresh cold water to cover the beans by about 1 inch (2.5 cm), toss in the bay leaves, and bring to a boil over high heat. Reduce the heat to medium-low and gently simmer until the beans are just tender, which can take anywhere from 45 to 90 minutes, depending on the age of your beans. Add the salt and continue to cook for 15 minutes more.
- Meanwhile, in a large saucepan over medium-low heat, sauté the bacon until the fat has rendered and the bacon is crisp, 10 to 15 minutes. Using a slotted spoon, move the bacon to a stack of paper towels placed on a plate.
- Add the onion and pepper to the pan and cook in the bacon fat until the vegetables soften, 8 to 10 minutes. Stir in the garlic, cumin, and oregano and cook, stirring, just until the garlic softens and the spice is fragrant, 2 to 4 minutes. Dump in the rice and stir constantly for a couple minutes to completely coat the rice with the bacon drippings. Then pour in the stock and bring to a boil. Lower the heat to a simmer, cover the pan, and cook until the liquid has been absorbed, 15 to 20 minutes.
- When the beans are done, drain them, reserving at least 1/2 cup of the bean cooking liquid. Stir the beans into the pan containing the rice and continue cooking over medium-low heat until the rice is tender, 5 to 15 minutes more. If you need more liquid to fully cook the rice, use the reserved bean cooking liquid. Taste and adjust the seasoning to taste with salt. Stir in the bacon and serve the beans and rice immediately. - Heat a bit of oil or vegetable broth for oil-free cooking in a large saucepan. Add garlic and the optional onions and bell pepper. Fry all for around 3 minutes. Then add vegetable broth and rice. Cook for around 10 minutes.

- Heat oil in a large saucepan over medium heat. Saute onion, bell pepper and garlic. When onion is translucent add salt and tomato paste. Reduce heat to low and cook 2 minutes. Stir in the beans and rice.
- Pour the liquid from the beans into a large measuring cup and add enough water to reach a volume of 2 1/2 cups; pour into beans. Cover and cook on low for 45 to 50 minutes, or until liquid is absorbed and rice is cooked.

- Prepare grits: Bring coconut milk and water to boil in saucepan. Add grits and salt, and stir. Turn heat to low and simmer until done, about 5-7 minutes. Prepare shrimp: Heat oil in saucepan over med-low. Add onion and sauté until caramelized, about 10 min. Remove to a bowl and cover with aluminum foil. Add shrimp to pan with additional oil. Add spices, and sauté briefly, ~2 minutes, until opaque. Deglaze pan with lime juice, scraping up bits stuck to pan. Turn oven off, and return onion to pan with shrimp and cover with lid to keep warm. Serve grits with warmed black beans and cover with onion and shrimp. Scatter with desired garnish.

- Using a box grater, grate 2 ears of the corn over a medium bowl. Catch as much of the juice as possible and set aside. In another bowl, cut the kernels off of the 3rd ear of corn and set aside.
- In a medium saucepan, bring the milk and water to a boil. Reduce to a simmer and gradually stir in the grits. Continue to simmer, stirring often, for about 20-25 minutes. Mix in the butter and grated corn, along with all the juice. Season with salt and pepper.
- Meanwhile put your bacon lardons into a cold pan. Turn the burner to medium and render the fat out of the bacon. Cook, stirring occasionally until the lardons are nice and crispy. Remove, put them on a paper towel to drain and set aside

Add the whole corn kernels; stirring occasionally, cook until they are golden brown and begin to pop, about 3 minutes. Add the shrimp and continue to stir occasionally until they are cooked through, about 4 minutes.
