CRYSTAL POUND CAKE
Another of my grandmother's recipes. From when pound cakes were literally made from a pound of every thing.

Steps:
- Preheat oven to 350 degrees. Grease a 10X4 tube pan or a 12 cup bunt pan with shortening, ( sides bottom and tube); flour.
- Mix flour, soda, and salt together in a separate bowl.
- In large separate bowel cream together shortening and sugar with pastry blender until coarse crumbs are formed. Beat in eggs, (one at a time), and vanilla at low speed with an electric mixer. Beat on high speed for 5 minutes, scraping bowl occasionally.
- Beat in flour mixture alternately with buttermilk at low speed, (begin and end with the flour mixture), just until combined. Spread into pan.
- Bake 70 to 80 minutes, or toothpick comes out clean. Invert immediately onto wire rack and cool 20 minutes; remove from pan. Cool completely.

Steps:
- Pre-heat oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (mine was 19cm x 9cm x 6cm). Put all of the ingredients except those for the icing into a large bowl and beat together, either using an electric hand whisk or a wooden spoon until smooth and combined. Pour the mix into the loaf tin and spread evenly with the back of spoon. Bake for 40 - 45 mins.
- Once out of the oven, leave to cool and make the icing. Combine the icing sugar and vanilla paste with three tbsp of water - you may need more but add it gradually to get a thick icing. Spread it over the top of the cake; it's fine if it drips down the edges. Allow to set and then slice.

CRYSTAL'S POUND CAKE
Steps:
- 1. Preheat oven to 325 degrees.
- 2. Grease tube pan*** and line the bottom with wax paper (do not grease the top of the wax paper).
- 3. Sift flour & baking powder together and set aside.
- 4. Measure 1 cup of milk and add flavorings.
- 5. Cream butter and sugar, and then beat in the eggs one at a time.
- 6. Add flour mixture and milk, alternating.
- 7. Mix well.
- 8. Pour cake mix into a tube pan and place in the center of the oven.
- 9. Bake 1.5 hours or until done.
- 10. When cake is done, run a butter knife around the outside edge between the cake and the pan. Allow to cool for approximately 15 minutes.
- 11. Flip cake upside down and remove the wax paper. Then place the container of cake plate on the bottom and gently flip the cake back over so that the top is showing. Serve plain, with strawberries, and/or glaze on top.
