From the mom files! An oxymoronically light pound cake with crisp crust, wonderful vanilla and cream cheese tang and an almost velvety smooth texture inside.

1 cup butter, softened
1/2 cup shortening (Crisco)
3 cups granulated sugar
8 oz cream cheese softened (one block Philadelphia brand)
3 cups cake flour (sifted)
6 large eggs (room temperature)
1 tbsp vanilla extract

Steps:

  • Preheat the oven to 325F and place a rack just below center.
  • Butter and flour (or spray and flour) a 12-cup Bundt or tube pan. Set aside.
  • Cream the butter, shortening and sugar together in a stand mixer on medium speed for about four minutes or until it is white and fluffy. Scrape bowl occasionally.
  • Add the cream cheese and beat again until light and fluffy. Scrape bowl occasionally.
  • Alternately add the flour and eggs, beginning and ending with the flour. (One cup flour then three eggs, one cup flour and the last three eggs, the final cup of flour). Make each addition after the previous has just been combined. Scrape the sides occasionally.
  • Add the vanilla, mix just until combined. Remove the bowl from the mixer and using the spatula you were scraping the side with, scrape up from the bottom to make sure all of the ingredients are incorporated.
  • Scoop the batter into the prepared pan (this is too thick to pour). Even out the top. Bake for 1 hour and 15 minutes or until a wooden toothpick comes out clean.
  • Cool in the pan on a rack for ten minutes and then remove from the pan, put back on the rack (top side up) and cool completely.

  • Preheat oven to 325 degrees F (160 degrees C). Grease and flour a 10-inch tube pan.
  • Beat butter and cream cheese together with an electric mixer in a large bowl until smooth. Beat sugar into butter mixture until light and fluffy. The mixture should be noticeably lighter in color. Add the eggs two at a time, allowing each pair of eggs to blend into the butter mixture before adding the next. Beat in vanilla and almond extracts with the last eggs. Pour the flour and nutmeg into the bowl and beat until just incorporated. Pour the batter into the prepared tube pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 80 minutes. Check for doneness after 1 hour. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

8 ounces cream cheese, softened
3 cups sugar
dash of salt
2 tsp. pure vanilla extract
6 large eggs
3 cups cake flour
whipped cream, candied citrus peel and fresh mint for garnish

1 cup heavy cream
8-ounce bar semi-sweet chocolate
3 bananas
1/2 cup sugar
2 Tbsp. (plus a dash) fortified wine

  • Instructions for cake:
  • Preheat oven to 275 degrees. Grease and flour a 10-inch tube pan. Cream margarine, butter, and cream cheese, with sugar until fluffy and well combined. Add salt and vanilla, and mix well. Add eggs, one at a time, beating well after each addition. Add flour and mix well. Pour batter into pan. Place in a cold oven and bake at for 1 1/2 hours, or until done. Check doneness by inserting a toothpick in the center; if it comes out clean, it's ready. Cool in pan, then turn out and slice into half-inch-thick slices. Preheat grill pan to medium heat. Melt remaining 2 tablespoons butter and brush lightly on both sides of cake slices. Grill cake slices, turning once, until lightly grill-marked and slightly softened, about 2 minutes total.
  • Instructions for Bananas with Chocolate Sauce:
  • In a small saucepan, melt 2 tablespoons butter. Pour 1 cup heavy cream into another small saucepan and turn on the burner to medium-high. Scald the cream. Break up the semi-sweet chocolate bar into a medium mixing bowl. When the cream is hot, pour it over the chocolate and sets the bowl aside. In a large skillet, melt the other 2 tablespoons butter over medium-high heat. Peel 3 bananas, slice them and place in another mixing bowl. Add 1/2 cup sugar to the bananas, gently toss them and place them in the buttered skillet. When the bananas are golden-brown, add a dash of fortified wine and cook until it evaporates. Whisk the chocolate cream mixture until smooth, then add 2 tablespoons fortified wine, mixing well.
  • Assembly:
  • Put a cake slice on each dessert plate or parfait cup, top with a spoonful of the bananas, and then another cake slice and another spoonful of bananas. Drizzle the top of each dessert with the chocolate wine sauce.

When mixing the batter make sure the ingredients are at room temperature. This enables the maximum amount of air to be beaten into the batter. The batter has a tendency to curdle when the eggs are added. Having the eggs at room temperature and adding them gradually will help prevent this. But don't worry if it does curdle. Once you add the flour the batter will smooth out. Pound cakes are usually baked in a loaf pan in a moderate oven (350 degrees F/177 degrees C) because the batter is so dense. If using a dark colored pan, reduce the oven temperature to 325 degrees F (170 degrees C). (This is because dark colored pans absorb more of the energy coming from the oven walls so they become hotter and transmit heat faster than light colored pans.) The addition of cream cheese in this recipe gives this cake a rich and buttery flavor, moist texture, and a delicious golden brown crust that is sweet and crisp. A caramelized pecan and graham cracker coating lines the pan and provides delicious crunch, but it is optional.

3 whole graham crackers (5 by 2 1/4 inches, or 45 grams of crackers)
1 scant cup/100 grams pecan halves
1/4 cup plus 2 tablespoons/75 grams granulated sugar
3 large egg yolks, at room temperature
1/2 cup/120 grams full-fat sour cream
1 teaspoon pure vanilla extract
1 1/2 cups/150 grams sifted cake flour (not unbleached)
3/4 cup/150 grams superfine sugar
1/4 teaspoon baking powder
1/2 scant teaspoon baking soda
1/4 teaspoon fine sea salt
6 tablespoons/85 grams unsalted butter, at room temperature
2 tablespoons plus 2 teaspoons/42 grams full-fat cream cheese, at room temperature

Steps:

  • Set an oven rack in the middle of the oven and heat the oven to 350 degrees. Grease a 9-by-5-inch loaf pan with butter and line with two pieces of crisscrossed parchment: Lay the first sheet in the pan, butter it lightly, then lay the other sheet across. Both pieces should extend a few inches above the edges of the pan, making a sling that you'll use to lift the cake out.
  • Make the pecan crunch, if desired: Break the crackers into a few pieces and add to the bowl of a food processor. Add the nuts and sugar. Process until you have fine crumbs. Add the melted butter and pulse it in until evenly incorporated.
  • Spoon about half of the crunch mixture into the prepared pan and press it evenly across the bottom. Without tilting the pan, repeat with the remaining three sides. Use the back of a small spoon to even the coating on the sides and against the corners of the pan. Cover with plastic wrap and refrigerate for at least 30 minutes, up to 3 days.
  • Make the batter: In a medium bowl, whisk the egg yolks with 2 tablespoons sour cream and the vanilla, just until lightly combined.
  • In the bowl of a stand mixer fitted with the paddle attachment, mix the flour, sugar, baking powder, baking soda and salt on low speed for 30 seconds.
  • Add the butter, cream cheese and the remaining 6 tablespoons sour cream. Mix on low speed until the flour mixture is moistened. Raise the speed to medium and beat for 1 1/2 minutes. Scrape down the sides of the bowl.
  • Starting on medium-low speed, gradually pour the egg mixture to the batter in two parts, beating on medium speed for 30 seconds after each addition. Scrape down the sides of the bowl after each addition.
  • Gently spoon the batter into the crunch coating-lined pan and smooth the surface. Bake for 50 to 60 minutes, or until a tester inserted into the center comes out clean.
  • Let the cake cool on a wire rack for 20 minutes. Use a small knife to dislodge the crunch coating at the corners and lift the cake out, using the parchment paper "sling."
  • Let cool completely before gently removing the parchment and transferring to a serving plate or cutting board. (Or, wrap well and store at room temperature for 3 days or in the refrigerator for 5 days.) To serve, use a serrated knife to cut into 1/2-inch-thick slices.

1 1/2 cups butter, softened
1 (8 ounce) package cream cheese, softened
3 cups sugar
6 large eggs
1 tablespoon vanilla extract
3 cups all-purpose flour
1/8 teaspoon salt

Steps:

  • Preheat oven to 300°F.
  • Use an electric mixer to mix both butter and cream cheese until creamy.
  • Gradually add sugar and beat for 5 minutes, then add eggs one at a time, allowing each to incorporate before adding more. Stir in vanilla.
  • Sift flour and salt and add gradually to the mixer, beating until well blended.
  • Pour batter into a well greased and floured bundt pan or tube cake pan.
  • Place 2 cups water in an ovenproof container on the rack in the oven next to the cake.
  • Bake cake at 300 for an hour and 45 minutes, or until a toothpick can be removed cleanly.
  • Place pan on a wire rack and cool for 15 minutes, then remove the cake from the pan and complete cooling on the wire rack.

1 1/2 cups (3 sticks) unsalted butter, room temperature
1 bar (8 ounces) cream cheese, room temperature
3 cups sugar
6 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons salt
Nonstick cooking spray

Steps:

  • Preheat oven to 350 degrees. With an electric mixer, beat butter and cream cheese until smooth. Add sugar; beat until light and fluffy, about 5 minutes. Add eggs, one at a time, beating well after each addition. Mix in vanilla. With mixer on low, add flour and salt in two additions, beating until just combined.
  • Generously coat two 8 1/2-by-4 1/2- by-2 1/2-inch loaf pans (1 1/2 quarts each) with cooking spray; immediately pour in batter (pan will seem full). Tap pans on work surface to eliminate any large air bubbles.
  • Bake until golden and a toothpick inserted in the centers comes out almost clean, 60 to 75 minutes (if the tops begin to brown too quickly, tent with aluminum foil).
  • Cool 10 minutes in the pan. Turn out the cakes; cool completely, with top sides up, on a wire rack.

2 teaspoons vanilla extract
1 teaspoon lemon extract
3 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Confectioners' sugar, sliced fresh strawberries and whipped cream, optional

Steps:

  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking powder and salt; beat into creamed mixture until blended. , Pour into a greased and floured 10-in. fluted tube pan.
