This easy crustless keto quiche is filled to the brim with bacon and cheese. You could add spinach or broccoli, but I prefer my quiche to be like a traditional quiche Lorraine with no crust. And no, a crustless quiche is not a frittata!

8 Slices thick bacon, diced and cooked until crispy
10 whole large eggs
2 Cups Monterey Jack cheese, Shredded
1 1/2 Cups half and half
1/2 teaspoon Kosher salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350F
  • Beat eggs in a medium bowl. Add half and half, salt, and pepper to eggs and whisk to combine. Add the bacon and the cheese and stir.
  • spray a pie plate with cooking spray. Pour in the egg mixture
  • Bake in preheated oven for 40 minutes or until the eggs are set (the quiche will be firm and no longer jiggle)

  • Preheat the oven to 350 degrees F.
  • Cook and chop the bacon into pieces.
  • Mix the eggs, heavy cream, and salt together until well combined.
  • Spray a 9-inch pie pan with cooking spray add the chopped bacon, shredded cheese, and parmesan cheese.
  • Pour the egg mixture over top of the meat and cheese and smooth over.
  • Place in the oven and cook for about 45 minutes or until set.
  • Allow your keto crustless quiche to fully cool before serving.

  • Make the pie crust and press into a 9-inch pan.
  • Using a fork, add a few small holes to the bottom of the pie crust (6-8 total).
  • Follow all of the same steps as above. Note: if the pie crust is not fully cooked after 45 minutes, cook in additional 5-minute intervals until done.
  • Allow cooling before serving.

1/4 cup flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1 medium zucchini
1/4 onion
3 mushrooms
3 teaspoons butter
1/2 cup cheddar cheese, grated

Steps:

  • Preheat oven to 350°F.
  • Chop zucchini, onion, and mushrooms.
  • Place each type of vegetable into a small bowl (3).
  • Add a teaspoons of butter to each bowl.
  • Microwave vegetables, one at a time, for one minute. Set aside.
  • Mix together 5 eggs, flour, baking powder, and salt.
  • Add egg mixture to a glass baking pan.
  • Add vegetables to egg mixture and incorporate well.
  • Add in the cheddar cheese. Mix well.
  • Put quiche into the oven for 35-40 minute or until top is golden.

DD gave me this idea when she made a crustless quiche using real eggs, cream and a variety of veggies. I substituted egg beaters and my own variety of fresh veggies. It made a hit with DH and me at breakfast this morning.

3/4 cup low-fat cheddar cheese
2 1/2 cups chopped fresh spinach
2 green onions, chopped
1 1/2 cups Egg Beaters egg substitute
salt and pepper

Steps:

  • Chop and slice the veggies.
  • Grate the cheese Combine all the ingredients in a bowl and stir.
  • Spray an 8" round cake pan with cooking spray.
  • Pour the quiche in the cake pan.
  • Put in a preheated 350º oven and bake for 20-25 minutes.
  • Quiche is done when a toothpick inserted in the center comes out clean.
