EASY BAKED INDIAN SAMOSAS



Easy Baked Indian Samosas image

This has all the flavor and heartiness of a great samosa without the frying. Although this is an easier, healthier version of the fried samosa, it tastes very authentic. This recipe has the added advantage that you can make ahead and freeze uncooked samosas, simply skip the egg brushing, freeze until you're ready and cook at 350 degrees F (175 degrees C) for 25 to 30 minutes. Serve warm, plain, or with chutney.

4 potatoes, peeled and cubed
¼ cup oil
2 small onions, finely chopped
3 tablespoons coriander seed
1 tablespoon curry powder
1 (1 inch) piece fresh ginger, grated
1 teaspoon salt
1 teaspoon ground turmeric
1 teaspoon ground cumin
½ teaspoon ground allspice
½ teaspoon cayenne pepper
⅛ teaspoon ground cinnamon
2 roma (plum) tomatoes, finely chopped
½ cup frozen peas
4 prepared pie crusts
2 egg whites, beaten, or as needed

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer potatoes to a bowl; coarsely mash.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat oil in a skillet over medium-high heat; cook and stir onions, coriander seed, curry powder, ginger, salt, turmeric, cumin, allspice, cayenne pepper, and cinnamon until onion is lightly browned, about 5 minutes. Remove skillet from heat and stir tomatoes and peas into onion mixture; pour into mashed potatoes and thoroughly mix. Cool completely.
  • Cut each pie crust into 8 even triangles. Spoon filling onto the wide end of each triangle; fold corners over filling creating a triangular 'hat' shape. Pinch the dough together to form a seal. Brush egg white over each samosa and arrange on a baking sheet.
  • Bake in the preheated oven until samosas are golden brown, about 15 minutes.

1 cup all-purpose flour
2 tablespoons vegetable oil
2 large potatoes (boiled)
1 onion, chopped
2 green chilies, very finely chopped
3 tablespoons oil
1/2 teaspoon ginger, grated
1/2 teaspoon garlic, crushed
coriander seed
1 tablespoon cilantro, finely chopped
1/2 lemon, juice of
1/2 teaspoon turmeric
1/2 teaspoon garam masala
1/2 teaspoon red chili powder
salt

Steps:

  • Mix together the flour, oil and salt.
  • Add a little water, until mixture becomes crumbly.
  • Keep adding water, kneading the mixture till it becomes a soft pliable dough.
  • Cover with a moist cloth and set aside for 20 minutes.
  • Beat dough on a work surface and knead again.
  • Cover and set aside.
  • FILLING.
  • Heat 3 tbsp oil.
  • Add ginger, garlic, green chillies and few coriander seeds.
  • Stir fry for 1 minute, add onions and saute till light brown.
  • Add cilantro (fresh coriander), lemon juice, turmeric, red chili, salt and garam masala.
  • Stir fry for 2 minutes.
  • Add potatoes.
  • Stir fry for 2 minutes.
  • Set aside and allow to cool.
  • Divide dough into 10 equal portions.
  • Use a rolling pin, roll a piece of dough into a 5" oval.
  • Cut into 2 halves.
  • Run a moist finger along the diameter.
  • Roll around finger to make a cone.
  • Place a tablespoon of the filling into the cone.
  • Seal the third side using a moist finger.
  • Deep fry the samosas on low to medium heat until light brown.
  • Serve with tomato sauce or any chutney you love.

These stuffed savory pastries are a traditional Indian favorite. Lamb meat and spices are cooked together to create a mouthwatering filling for the easy to make dough. The recipe may seem complex, but it's actually fairly simple. Enjoy!

2 cups all-purpose flour
½ teaspoon salt
2 tablespoons butter
¼ cup water
1 quart oil for deep frying
2 tablespoons butter
1 small onion, chopped
2 cloves garlic, chopped
2 green chile peppers, chopped
1 tablespoon fresh ginger root, chopped
½ teaspoon ground turmeric
½ teaspoon chili powder
¾ pound ground lamb
1 teaspoon salt
2 teaspoons garam masala
1 ½ tablespoons fresh lemon juice

Steps:

  • In a medium bowl, mix flour, salt and butter until the mixture resembles fine bread crumbs. Pour in water, using more (up to approximately 1/4 cup) if necessary to make a smooth dough. Pat into a ball. Place on a lightly floured surface and knead 10 minutes, or until dough is smooth and elastic. Return to the bowl, cover and set aside.
  • Heat oil in a large, deep skillet to 375 degrees F (190 degrees C).
  • Melt butter in a medium saucepan over medium high heat. Stir in onion, garlic, green chile peppers and ginger. Cook 5 minutes, or until onions are golden brown. Stir in turmeric, chili powder, ground lamb and salt. Cook until the lamb meat is evenly brown, about 10 minutes. Stir in garam masala and lemon juice. Continue cooking 5 minutes, then remove from heat.
  • Divide dough into 15 equal portions. Roll portions into balls, then flatten into 4 inch circles. Cut each circle in half. Dampen edges and form semicircles into cones. Fill cones with equal portions of the lamb meat mixture. Dampen top and bottom edges of cones, and pinch to seal.
  • Carefully lower cones into preheated oil a few at a time. Fry until golden brown, 2 to 3 minutes. Drain on paper towels. Serve warm.

Posted in answer to a request. It seems a little cumbersome, but believe me its worth all the effort! The filling in this recipe is the most basic, and the commonest one of them all, but you can use your imagination and make your own spiced up fillings....minced chicken, mutton, lamb, peas, mushrooms....whatever :)

Number Of Ingredients 14

250 g all-purpose flour
2 tablespoons oil
1 tablespoon all-purpose flour
1 tablespoon water
4 potatoes, boil, peel and coarsely break into smallish bits
2 tablespoons oil
1 teaspoon cumin seed
1 inch ginger, finely chopped
2 tablespoons coriander leaves, finely chopped
1 -2 green chili, finely chopped
2 teaspoons chat masala
1 teaspoon roasted cumin powder
1/2 teaspoon garam masala
salt

Steps:

  • ---The Dough---.
  • Mix and rub oil into the flour till you can make firm balls with your hands.
  • Add a bit more oil, if necessary.
  • Add water, a little at a time, to make a very stiff dough.
  • It should be so stiff that you should not require any extra flour for dusting while rolling.
  • Knead for 5-7 minutes, roll into a large ball.
  • Cover with a damp cloth and set aside while you make your filling.
  • ---The Filling---.
  • Heat oil.
  • Add cumin seeds, ginger and green chilies.
  • Give it 4-5 twirls, add potatoes and everything else.
  • Sauté for two minutes.
  • Remove.
  • ---The Paste---.
  • In a cup, make a thick paste with 1 tblsp of flour and 1 tblsp of water.
  • This is the 'glue' with which you will seal the samosas.
  • When all the above is organized, make walnut-size balls with the dough and roll each out to make circles of about 6" in diameter.
  • With a sharp knife, halve each circle to make 'D' shapes.
  • Put a little paste on half the length of the cut side and overlap it with the other half to form a cone.
  • Lightly press the glued edges to seal.
  • Fill the cone 2/3rds with the mixture.
  • Again, apply paste on the insides of the open edges at the top.
  • Press to seal the glued edges.
  • Voila!
  • Your triangular shaped samosa is ready to be fried!
  • Make all the samosas--remember to cover them with a well-squeezed damp cloth.
  • When all are done, heat oil, 3 inches deep, in a wok/fry pan.
  • Slide each samosa in--do it in batches of 6 or 8.
  • Once you have a batch in the oil, reduce heat and fry on medium-low till they are golden brown and nice and crisp.
  • Serve hot with ketchup or coriander/mint chutney.

1 cup unsalted butter, cut into small pieces
1/2 teaspoon salt
1/2 cup ice water
1 large egg
1 tablespoon water
10 cups cooked cubed potatoes, 1/2 inch
4 tablespoons olive oil or 4 tablespoons vegetable oil
2 cups onions, chopped
2 tablespoons fresh ginger, chopped
4 garlic cloves, minced
1 1/2 tablespoons ground cumin
1 tablespoon ground coriander
1 1/2 tablespoons Madras curry powder
2 teaspoons turmeric
salt and pepper, to taste
1 tablespoon crushed red pepper flakes or 1 tablespoon sambal oelek
1/4 cup cilantro, chopped
1/2 cup fresh lemon juice
1 cup frozen peas

Steps:

  • Preheat oven to 375 degrees.
  • EGG WASH: Whisk egg and water together in a small bowl.
  • CRUST.
  • In a food processor, process the flour, butter, and salt until the dough forms a soft ball. Wrap in plastic wrap and refrigerate for 1 to 2 hours. This dough will be moist and softer than most pastry.
  • FILLING.
  • In a large saute pan, heat the oil and add onions, ginger, and garlic. Saute until onions are golden.
  • Add the potatoes, and saute for a few minutes more.
  • Add the spices and stir until mixed in well with the potato mixture.
  • Add the cilantro, lemon juice, and peas, stirring well. Remove from heat.
  • ASSEMBLY.
  • Leave about a third of the dough for the top crust. Roll out remaining dough to about 1/8 inch thick.
  • Line the springform pan with the dough, letting in hang over the top about 1/2 an inch.
  • Brush with the egg wash.
  • Pour in the filling and press down well.
  • Roll out the reserved dough, place over the pan, trim pastry and crimp edges sealing well. Brush with remaining egg wash.
  • Bake in oven for about 1 hour, until golden and heated through. Best made a day ahead and reheated at 350 for 40-45 minutes.
  • Serve with Raita.

Baked Puff Pastry Samosas image

A delicious, hearty Indian snack, baked instead of deep fried. Serve with (mango)chutney and the raita(s) of your choice. To go vegan substitute ghee/butter with (canola)oil and use vegan puff pastry.

400 g puff pastry (2 sheets)
5 potatoes (medium sized to large)
100 g peas (fresh or frozen)
1 onion (chopped)
2 garlic cloves (minced)
1 gingerroot (about thumb sized, peeled and grated)
1 tablespoon garam masala
1 teaspoon turmeric
1/2 teaspoon cumin
2 -3 teaspoons butter (or ghee)

Steps:

  • Cook potatoes (20-25min.), rinse with cold water, peel and mash (leave chunky).
  • Heat 2 teaspoons of ghee, add garlic, grated ginger and onion and let fry until translucent. Add spices and let toast for about 30 seconds.
  • Add peas and transfer mixture to potatoes.
  • Salt and pepper to taste.
  • Cut puff pastry into squares (you should get about 16-20).
  • Melt the rest of ghee (or butter) and brush the pastry squares.
  • Preheat oven to 200°C.
  • Fill the pastry squares with a generous teaspoon of potatoefilling and form into triangles. Press ends tightly togehter using your fingers or a fork.
  • Brush triangles with ghee.
  • Transfer your samosa triangles to a baking tray lined with non-stick baking paper and let bake until golden brown (usually 15-20 min.) at 200°C.
