For the longest time, my mum would make this amazing broccoli casserole. It is more like a crustless quiche, but has converted many broccoli haters into broccoli lovers! I have not ever tweaked this recipe - not even to add minced garlic, sauteed onion, pimento, etc; it's too simple and delicious on its own to need tweaking. This can be made ahead and refrigerated before cooking. It freezes well and can be thawed prior to cooking.

1 head broccoli, chopped
2 teaspoons vegetable oil, or as needed
1 (16 ounce) container cottage cheese
3 eggs
½ (8 ounce) package shredded sharp Cheddar cheese
¼ cup butter, melted
3 tablespoons all-purpose flour
salt and ground black pepper to taste

Steps:

  • Fill a large bowl with ice water to create an ice bath.
  • Bring a large pot of lightly salted water to a boil. Add broccoli and cook, uncovered, until bright green and tender, about 3 minutes. Drain in a colander and immediately immerse in the ice bath for several minutes to stop the cooking process. Drain.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch casserole dish with vegetable oil.
  • Combine broccoli, cottage cheese, eggs, Cheddar cheese, butter, flour, salt, and pepper in a large bowl. Spread into the prepared casserole dish.
  • Bake in the preheated oven, uncovered, until a knife inserted into the center comes out clean, 60 to 90 minutes.

1 cup KRAFT Shredded Cheddar Cheese
1 frozen puff pastry sheet (1/2 of 17.3-oz. pkg.), thawed
1 egg, beaten

Steps:

  • Heat oven to 400°F.
  • Mix cream cheese spread, soup and water in large bowl until blended. Stir in broccoli and cheddar. Spoon into 2-1/2- to 3-qt. shallow rectangular or oval baking dish.
  • Roll pastry sheet on lightly floured surface to fit top of baking dish. Cover dish completely with pastry. Press pastry edges against rim of dish to seal. Brush with egg; pierce with knife to vent.

3 tablespoons unsalted butter (divided)
3/4 cup Panko breadcrumbs
1/4 cup freshly grated Parmesan cheese
5 cups coarsely chopped broccoli florets ((about 1 1/4 pounds))
1/4 cup white whole wheat flour
1 3/4 cups non-fat milk
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/4 teaspoon dry mustard
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper (optional)
1/2 cup freshly grated extra sharp cheddar cheese

Steps:

  • Preheat your oven to 400 degrees F. Melt 1 tablespoon butter in a wide, deep cast iron (or other ovenproof) skillet. Once melted, pour the butter into a small mixing bowl, then combine with the Panko breadcrumbs and the Parmesan cheese. Set aside.
  • Meanwhile, bring a large pot of water to a boil. Add the broccoli and cook until crisp-tender, about 3 minutes. Drain and set aside.
  • Melt the remaining 2 tablespoons of butter in the same skillet. Sprinkle the white whole wheat flour over the top, then whisk constantly for 1 minute, until the butter smells fragrant and the flour turns slightly golden. Very slowly pour in the milk, whisking constantly, adding a little at a time so that you break up the clumps of flour as you go. Continue whisking until the sauce thickens, about 3 minutes, allowing the mixture to bubble. Stir in the garlic powder, salt, mustard, black pepper, and cayenne (if using). Remove the skillet from the heat, then stir in the cheddar until smooth.
  • Add the reserved broccoli, stir to coat, then pat the broccoli into an even layer in the skillet. (Alternatively, if you feel your skillet is not large enough to easily stir in the broccoli without it spilling out, you can combine the two in a separate bowl, then transfer the mixture back into the skillet.)
  • Sprinkle the Panko mixture evenly over the top of the broccoli. Bake until hot and the topping is crisp and light golden brown, about 20-25 minutes. (Tip: For an even crisper topping, place the skillet under your broiler for a few minutes at the end, watching carefully so that it doesn't burn.) Let stand 5 minutes, then serve.

  • Heat oven to 400°F. Spray 2 1/2-quart oval baking dish with cooking spray; set aside. Cook frozen broccoli as directed on bag for microwave directions.
  • In 2-quart saucepan, heat water and butter to rapid boiling; remove from heat. Stir in 1/2 cup of the milk and the potatoes (from Chicken Helper box) until well blended. Steps:

  • Preheat oven to 425°F. Line a round 14" pan with parchment paper; set aside.
  • Place the broccoli florets in a bowl of a food processor. Pulse until the broccoli is grated and looks like rice or couscous, being careful not to over-pulse.
  • Transfer to a microwave-safe bowl, and cook for 2 minutes, or until softened. Place the steamed broccoli on an open cheese cloth or dish towel and allow it to cool. When it's cool to the touch, wrap the broccoli in the towel and squeeze out all the excess water so it is as dry as possible.

2 lb. Velveeta
1/2 c. Milk
1/4 c. Heavy Cream

3 whole (sleeves) Ritz Crackers

Steps:

  • Preheat oven to 350 degrees. Place crackers into a large ziploc bag and crush slightly, leaving some large chunks. Set aside.Plunge broccoli into boiling water and allow to boil for 1 minute. Strain and set aside.Cut Velveeta into chunks. Throw into a large pot with milk, cream, salt, pepper, and cayenne. Melt, stirring occasionally, until totally smooth. Stir in Dijon if using.Add broccoli to cheese sauce, then add half the cracker crumbs. Stir to combine, then pour mixture into a buttered 9 x 13 inch baking dish. 1/2 cup melted butter
2 (16 ounce) bags frozen broccoli florets

Steps:

  • Defrost broccoli on paper towels at room temperature for 1-2 hours.
  • Preheat oven to 400 degrees.
  • Crush Ritz crackers.
  • Mix crushed crackers with melted butter.
  • Melt Cheez Whiz.
  • Add milk to melted cheese mixture and stir well.
  • Layer 1/2 cracker mix on bottom of 9"X13" baking dish, press firmly.
  • Layer defrosted broccoli on top of cracker crust.
  • Layer cheese mixture on top off broccoli.
  • Layer remaining cracker mix on top of casserole.
  • Bake approximately 45 min to and hour or until broccoli is tender.

1/2 cup chive & onion cream cheese (1/2 of 8-oz. tub)
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup water
2 (16 ounce) packages frozen broccoli florets, thawed, drained
1 cup shredded cheddar cheese
1 thawed frozen puff pastry sheet (1/2 of 17.3-oz. pkg.)
1 egg, lightly beaten

Steps:

  • PREHEAT oven to 400°F Mix cream cheese spread, soup and water until well blended. Stir in broccoli and cheddar cheese.
  • SPOON into 2-1/2- to 3-qt. rectangular or shallow oval baking dish. On lightly floured surface, roll sheet of pastry to fit baking dish. Cover completely with puff pastry sheet. Press pastry edges against rim of dish to seal. Brush entire surface lightly with egg; pierce with knife 5 to 6 times to vent.
  • BAKE 30 minute or until heated through and pastry is puffed and golden brown.

5 eggs, beaten
1 (14 ounce) can evaporated milk
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon pepper
4 ounces swiss cheese, shredded
2 tablespoons mayonnaise
2 tablespoons parmesan cheese, grated

Steps:

  • Preheat oven to 375.
  • In a medium bowl, combine broccoli, eggs, milk and spices.
  • Spray a shallow 2 quart casserole (or 2 pie plates) with nonstick cooking spray.
  • Pour egg mixture into casserole and sprinkle with swiss cheese.
  • Bake 35 minutes, or until a knife, inserted in the center, comes out clean.
  • In a small bowl combine mayonnaise and parmesan cheese.
  • Spread over the quiche and return to the oven.
  • Bake until lightly browned, about 5 minutes.
  • Remove from oven and allow to set for 10-15 minutes.

4 medium-size heads broccoli
3 eggs, beaten
1 cup ricotta cheese
1/3 cup grated Cheddar cheese
1 tablespoon cornstarch diluted in 1/2 cup milk
1 medium onion, chopped
Salt and freshly ground black pepper to taste

Steps:

  • 1. Preheat the oven to 350°. Boil the broccoli heads in water for about 10 minutes. Drain them, and then chop them coarsely, including the stems.
  • 2. Beat the eggs in a deep bowl, add the ricotta and cheddar cheeses and the cornstarch-milk mixture. Mix thoroughly. Add the chopped onion, salt, and pepper. Add the drained broccoli, mix again, and blend the ingredients well.
  • 3. Butter thoroughly an ovenproof baking dish and place the broccoli mixture in it. Bake for about 30 minutes. Serve hot.
