Some tasty seasonings like cinnamon and nutmeg and a crunchy corn flake and walnut topping make it easy for even kids to eat their nutritious sweet potatoes. This is a terrific Thanksgiving side dish. -Virginia Slater, West Sunbury, Pennsylvania

2 cups mashed sweet potatoes
1/2 cup butter, melted
1/4 cup sugar
1/4 cup packed brown sugar
2 large eggs, lightly beaten
1/2 cup 2% milk
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
TOPPING:
1 cup crushed cornflakes
1/2 cup chopped walnuts
1/4 cup packed brown sugar
1/4 cup butter, cubed

Steps:

  • Preheat oven to 375° In a large bowl, combine first eight ingredients. Spoon into a greased 1-1/2-qt. baking dish. Bake, uncovered, 20 minutes or until a thermometer reads 160°. , Combine topping ingredients; sprinkle over potatoes. Bake 5-10 minutes or until topping is lightly browned.

These crispy roasted sweet potatoes are easy to throw together and a side dish that your whole family will love!

1 lb. sweet potatoes, peeled and diced into ½" pieces ~ about 3 medium sized potatoes
2 Tbsp. olive oil
1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. onion powder

Steps:

  • Preheat oven to 400°F.
  • Prepare a baking sheet with parchment paper and spread diced potatoes on top. Drizzle with olive oil and toss to coat.
  • In a small dish, combine salt, paprika, pepper, garlic powder, and onion powder together. Sprinkle on top of potatoes and mix until evenly coated.
  • Bake for 30 minutes. Flip every 10 minutes to ensure that the pieces cook evenly and each are able to crisp on the pan. Serve warm.

Great thing about this recipe is you can adjust the seasoning to your desire. You want to add minced garlic, go ahead! You want these bad boys spicier, go for it!

1 ½ tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
¼ teaspoon ground black pepper
¼ teaspoon sea salt
¼ teaspoon cornstarch
⅛ teaspoon cayenne pepper
2 medium sweet potatoes
2 tablespoons olive oil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Mix chili powder, cumin, paprika, garlic powder, onion powder, sea salt, cornstarch, and cayenne pepper together in a small bowl.
  • Cut potatoes in half lengthwise, then cut each half into 3 wedges. Place in a large bowl and drizzle with olive oil; toss to coat. Add spice mixture and stir with a rubber spatula or your hands until potatoes are completely coated. Transfer to the prepared baking sheet.
  • Bake in the preheated oven until the thickest parts of potato wedges are easily pierced with a fork, about 25 minutes.

With autumn coming here in Louisiana, I decided to drag out a few of my grandmother's recipes that she had stuck inside her old cookbooks. It amazes me at some of the ingredients that you find in some of these recipes and how you think "that will never work" but they always seem to turn out really good. When I saw Rice Krispies in this recipe I thought "no way that is going to work" but I made it and believe it or not, it's really good.

4 cups sweet potatoes, cooked, peeled and mashed (or you can use 2 large cans of sweet potatoes, drained and heated)
3 cups sugar (or Splenda)
4 eggs
1 cup heavy cream
1 1/2 cups butter (at room temperature)
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup Rice Krispies
1 cup pecans, chopped
1 cup walnuts, chopped
1 cup brown sugar, firmly packed

Steps:

  • Preheat oven to 350°F.
  • Grease a 9 x 13 inch baking dish with nonstick cooking spray.
  • Combine mashed sweet potatoes, 1 1/2 sticks of butter, eggs, sugar, cream, cinnamon and nutmeg in a large bowl.
  • Mix thoroughly.
  • Add mixture to prepared casserole dish.
  • In a medium bowl, combine Rice Krispies with pecans, walnuts, brown sugar, and remaining butter (melted).
  • Mix well.
  • Top sweet potato mixture with this mixture.
  • Bake at 350°F for 40 to 45 minutes or until center is hot.

1/8 cup egg white
1/4 teaspoon garlic powder
1/2 cup corn flakes or 1/2 cup crispy rice cereal, crushed
1/2 teaspoon parsley flakes
1/2 teaspoon dried sweet basil leaves
3/4 lb sweet potato, with peel, cut into 1/2-inch slices

Steps:

  • Beat egg whites and garlic powder together in a small bowl.
  • Combine crushed cereal, parsley, and basil in a pie plate.
  • Dip each potato slice into egg mixture and then into cereal mixture.
  • Cost well.
  • Place slices on a lightly greased baking sheet and bake in a preheated 435* oven for 20 minutes.
  • Turn slices over and bake for 10 more minutes until tender.
  • Enjoy!
