CRUNCHY BAKED PORK CHOPS
Panko breadcrumbs are Japanese style crumbs. They are made with whole wheat and are lighter, larger and crispier than normal crumbs. They make a delicious crispy coating for these chops.

Steps:
- Preheat oven to 350 degrees.
- In shallow dish, mix breadcrumbs, garlic, parsley, tarragon, salt and pepper.
- In another dish, beat egg with mustard.
- Place flour in third dish.
- Dredge each pork chop in flour, dip in egg mixture and then breadcrumb mixture, covering completely and patting so crumbs adhere.
- Place chops on baking sheet.
- Place in oven and bake until chops are cooked through (170 degrees), about 30 minutes, depending on thickness of chops, turning once.
- Serve with mushroom or country gravy, mashed potatoes and either apple sauce or baked apples.

CRUNCHY PAN-FRIED PORK CHOPS
This is one of my favorite recipes. My mother used to make these pan-fried pork chops when I was growing up. They have a nice crunch to them but at the same time are nice and juicy. I hope you enjoy them as much as my family and I do.

Steps:
- Place eggs in one bowl and crushed crackers in another bowl. Dip pork chops, one at a time, into the eggs, then roll in the crackers until well coated. Place on a plate.
- Put 1/4 inch of oil in a large frying pan. Turn heat to medium-high and let oil get hot. Toss a few cracker crumbs into the pan; if they start to sizzle the pan temperature is just right.
- Place pork chops in the pan and fry until golden brown on the sides, about 10 minutes. Flip and fry until no longer pink in the center, about 10 minutes more. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Transfer to a paper towel-lined plate to drain excess oil.

Steps:
- Adjust the oven rack to the middle position and preheat the oven to 425 degrees Fahrenheit.
- Place the Melba toasts, salt, garlic powder, onion powder, paprika, thyme, and sugar in a zip-top bag and seal.
- Pound the toasts to coarse crumbs, leaving some the size of small pebbles.
- Add 2 tablespoons mayonnaise to the bag and work it into the crumb mixture. Transfer to a large plate.
- Working with one chop at a time, coat with 1 tablespoon mayonnaise using your fingers or the back of a spoon; coat thoroughly with Melba crumb mixture.
- Press on the crumbs on the chop to make sure they adhere; lay the chop on a wire rack set over a rimmed baking sheet.
- Bake the pork chops on the wire rack until the coating is golden brown and the center registers 135 degrees, approximately 16 to 22 minutes.
- Transfer the chops to a clean plate and let rest until the pork reaches an internal temperature of 145 to 150 degrees (5 to 10 minutes).

- Preheat oven to 425 degrees. Lightly brush a rimmed baking sheet with oil; set aside.
- Tear bread into large pieces; place in food processor. Pulse until large crumbs form. Drizzle with oil; pulse once or twice, just until crumbs are moistened (you should have about 1 1/2 cups crumbs).
- Season pork chops generously with salt and pepper; spread one side of each chop with 1 teaspoon jam. Dividing evenly, sprinkle breadcrumbs over jam, and pat them on gently.

- This recipe is pictured with fauxtaters. The recipe can also be found in my public recipes.
- In a bowl large enough to maneuver the pork chops - combine the egg, mustard, Tabasco, oregano, salt and pepper.
- Whisk until nice and frothy.
- In a separate bowl have ready the crushed breakfast cereal. Set aside until ready to cook.
- In a frying pan heat approximately 1/2 inch deep oil.
- Put your chops between a couple of sheets of plastic wrap and beat them until they are half as thick.
- Dredge the chops in the egg mixture then coat them with cereal.
- Gently lay in the hot oil and cook for 4- 5 minutes on each side.
- Let rest on paper towel to absorb excess oil for approximately 3 minutes.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly coat a wire rack with cooking spray and set in a rimmed baking sheet.
- Whisk eggs and water together in a shallow dish. Place bread crumbs in a second shallow dish.

- Place flour into a plastic freezer bag.
- In a shallow dish, mix together the next 4 ingredients.
- In a sepreate freezer bag, mix together the last 5 ingredients.
- Preheat oven to 400 degrees F. Then line 2 large baking pans with parchment paper.
- Coat each pork chop with flour, then with mustard mixture, and then with bread crumb mixture.
- Place on the baking sheets and bake on center rack for 40-45 mintues or til well browned.

- 1. Preheat the oven to 375 degrees. Season pork chops with salt and black pepper and set aside. Mix together crumbs, parmesan, parsley,and kosher salt.
- 2. Have three shallow bowls for dredging. Add flour to one bowl, eggs to another and the panko or Italian crumb mixture in the last.
- 3. Dredge pork chops first in the flour, then egg and third the panko mixture. Coat evenly. Add pork chops to skillet with oil. Make sure the oil is hot...not to hot will burn. Fry two minutes on each side and transfer to the baking dish uncovered. Bake for 20 minutes or until crispy. Transfer the chops to a serving bowl and let set for 10 minutes to allow juices to go back in chops.
