Harvest Caramel Corn is a great Fall treat or Thanksgiving dessert the features salty popcorn, creamy caramel and sweet chocolate. So very delicious and easy to make!

10 cups of Popped Popcorn
Salt (to taste)
1 cup Butter (Sweet Cream Salted)
1 cup Light Brown Sugar
2 teaspoons Vanilla
1/2 teaspoon Baking Soda
Mini Rolos or Regular Rolos
M&M Candy (Brown, Yellow, Red, Orange
Pretzel M&M's (Brown, Yellow, Red, Orange)

Steps:

  • You will need 10 cups of popcorn. We pop our popcorn on the stove (you can find our directions on How to Make Perfect Popcorn here) but you can use air-popped or microwave.
  • After the popcorn is popped, make sure to remove all of the un-popped kernels. You don't want to bite down on one of those!
  • Once you have made the popcorn, salt it liberally. It is so nice to taste the salty popcorn with the sweet marshmallow coating. Not quite like Kettle Corn but close.
  • Melt 1 cup of butter in a medium saucepan over medium-low heat.
  • Add 1 cup of light brown sugar.
  • Stir until thoroughly mixed with the melted butter.
  • Stirring continuously, bring the butter and sugar mixture up to a low boil. When it reaches a boil allow it to cook for 4 minutes without stirring.
  • After boiling for 4 minutes, add the vanilla and stir for one more minute.
  • Take the caramel mixture off the heat and immediately add the baking soda.
  • Stir the mixture. This will cause the caramel to change colors and foam up a bit. This is the chemical reaction that you want. The bubbling effect of the baking soda will aerate the caramel and make it lighter and smoother and therefore easier to coat the popcorn.
  • Slowly pour about a third of the caramel mixture over the salted popcorn.
  • Gently fold the mixture in with the popcorn. Continue to add the caramel mixture a bit at a time, stirring between each addition.
  • The popcorn should be completely covered in the warm caramel corn mixture.
  • Here is the candy that we added to our Harvest Caramel Corn. We added Rolo candy, Pretzel M&M's (Brown, Yellow, Red, and Orange), and Regular sized M&M's (Brown, Yellow, Red, and Orange).
  • Pour the popcorn out onto a cookie sheet covered with aluminum foil or a Silpat liner.
  • Let the popcorn cool and then sprinkle with your candy mix-ins. Now your super delicious Harvest Caramel Corn is ready to serve!

Easy Homemade Caramel Corn image

Our Easy Homemade Caramel Corn is a family favorite. It is super yummy and super easy. And you don't need Corn Syrup for this recipe.

10 Cups of Popped Popcorn
Salt
1 Cup Butter (Sweet Cream Salted)
1 Cup Light Brown Sugar
2 tsp. Vanilla
1/2 tsp. Baking Soda

Steps:

  • Make popcorn.
  • Salt popcorn and set aside.
  • Melt 1 cup of butter in a medium saucepan over medium heat.
  • Add 1 cup of brown sugar and stir until thoroughly mixed.
  • Stirring continuously, bring the butter and sugar mixture up to a boil on medium heat.
  • When it reaches a boil allow it to cook for 5 minutes without stirring on medium heat.
  • Add the 2 tsp. of vanilla at the 4 minute mark and stir to mix.
  • Continue to boil for one addition minute and then add the 1/2 teaspoon of baking soda.
  • Drizzle the caramel mixture over the popcorn. Use a spoon to gently fold the popcorn with the mixture until the kernels are all covered.
  • Pour the popcorn out onto a cookie sheet covered with aluminum foil or a silpat liner.
  • Let the popcorn cool.
  • Serve.

4 tablespoons unsalted butter
1 tablespoon molasses
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 300°. Combine the honey, butter, molasses, vanilla and salt in a small saucepan. Bring to a boil over medium-high heat; boil, stirring, until the butter melts, about 2 minutes.
  • Pour the caramel over the popcorn in a large bowl; toss well. Spread the popcorn evenly on a rimmed baking sheet.
  • Bake, checking often, until the popcorn is crisp, 10 to 15 minutes. Transfer the pan to a rack to cool completely.

2 cups miniature pretzels
1 cup Goldfish cheddar crackers
1-1/4 cups Reese's pieces, divided
1 package (10 ounces) miniature marshmallows
1/4 cup butter, cubed
1/4 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the caramel corn, pretzels, crackers and 1 cup Reese's pieces. In a large microwave-safe bowl, melt marshmallows and butter; add vanilla and stir until smooth. Pour over pretzel mixture; stir until well coated., Press into a greased 13x9-in. pan. Sprinkle with remaining Reese's pieces; press lightly. Let stand until set. Cut into bars.

1/2 lb butter (do not substitute margarine)
1 cup brown sugar
1/2 cup corn syrup
1 teaspoon baking soda
1 (175 g) bag popcorn, twists

Steps:

  • Prehead oven to 250°F.
  • Place entire bag of popcorn twists into a large roaster.
  • In a Large (2 qt) sauce pan, cook together butter, brown sugar and corn syrup for 2 minutes after butter has melted and it starts to gently boil.
  • Add baking soda to mixture. This will cause mixture to foam - that is why you need a large saucepaan.
  • Allow to foam to cook down slightly.
  • Pour caramel mixture over popcorn twists and stir until mixed.
  • Place in oven for 35-45 minutes, (35 for chewy corn, 45 for crunchy), stirring at least every 10-15 minutes.
  • remove from oven and pour on wax paper.
  • Allow to cool slightly and break apart.

Homemade Caramel Corn has never been easier! It's an incredibly addictive snack that is sweet, crunchy, and so easy to make!

3 bags Pop Secret homestyle butter microwave popcorn
1 cup butter
2 cups brown sugar
1/2 cup Karo light corn syrup
1/2 teaspoon salt
2 teaspoons vanilla extract
1/2 teaspoon baking soda

Steps:

  • Pop popcorn according to package directions.
  • Have two bowls ready.
  • Pour popcorn in one bowl.
  • Gently Shake the bowl to get the seeds to the bottom of the bowl.
  • Remove popcorn slowly into the second bowl leaving seeds in the 1st bowl.
  • Toss seeds. Repeat with the second and third bag.
  • Prepare 2 baking sheets with a baking mat or parchment paper.
  • Preheat oven to 250*F
  • In a pot, add butter and cook over medium heat until melted.
  • Add brown sugar, corn syrup and salt.
  • Bring to a boil and cook for an additional 4 minutes, stirring regularly so caramel doesn't burn on the bottom of the pan.
  • After 4 minutes, turn off the heat and remove the pan from heat.
  • Add vanilla extract and be prepared for the mixture to spit at you. Stir to incorporate.
  • Add baking soda and stir. Mixture will become fluffy and increase in volume.
  • Pour caramel mixture over your prepared popcorn.
  • Stir well, careful not to touch the caramel mixture to your skin or it will burn you.
  • Spread caramel corn on baking sheets, dividing mixture between the two sheets.
  • Evenly space the racks in your oven so you can get both in there at the same time, one on top and one on bottom.
  • Bake for 15 minutes.
  • Remove caramel corn, and stir. Place back in oven on the opposite oven shelf.
  • Repeat 15 minute baking and stirring intervals until caramel corn has been baked 2 times total.
  • Remove from the oven, stir and let cool.
  • I like to stir again after caramel corn has been out of the oven for 5 minutes to prevent clumping.
  • Serve once cool.

Steps:

  • Spray large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250 degrees F oven while preparing caramel.
  • Mix brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to a boil over medium heat.
  • Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.
  • Pour syrup over warm popcorn, stirring to coat evenly.
  • Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.
  • Cool; break apart. Store in tightly covered container.

  • Right away, add the corn pops (keep the cereal bag for step 3) and use a large spoon to stir until caramel is evenly distributed on cereal, scraping from the bottom to get all the caramel goodness.
  • Right away transfer to the foil lined, buttered pan. Use the plastic bag to push the caramel corn pops around the pan to distribute them evenly, gently pushing down. Let stand at room temperature until cooled and set. Remove from pan using foil to help then cut into squares and serve.
