CLASSIC PEAR CRISP
Pears and crystallized ginger are baked under a crispy golden oat crust.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 2 quart casserole dish or 9 inch square baking dish.
- In a medium bowl, stir together the oats, brown sugar, 1/2 cup flour, 1 teaspoon crystallized ginger, and cinnamon. Stir in the butter until the mixture is crumbly with pea sized lumps. Set aside.
- In a separate bowl, stir together the white sugar, 2 tablespoons flour and 2 teaspoons of crystallized ginger. Add the sliced pears, and toss to blend. Transfer to the prepared baking dish. Spread with the oat topping.
- Bake for 30 to 35 minutes in the preheated oven, until pears are soft and topping is golden brown. Cool slightly before serving with vanilla ice cream.

CRUNCHY YOGHURT AND RASPBERRY PEARS
Begin the day with a really quick to make, energy-injecting, healthy LOW GI breakfast. If there's one meal a day that you'll really feel the benefits of its being low GI, it's breakfast. Great for shaking off weekday sluggishness after late nights on Zaar. Adapted from Jody Vassallo's 'Health for Life: Low GI'. The pears can be prepared in advance. When fresh pears are looking pretty ordinary, I use canned pears. - Place the pears in a pan, cover with water and simmer for 20 minutes or until soft.
- Divide the pear halves among four bowls, top with muesli, yoghurt and raspberries and drizzle with maple syrup.

HONEY NUT CRUNCH PEARS

Steps:
- Heat oven to 200C/fan 180/gas 6. Cut the pears in half lengthways, take out the core (see tip, left), then top with a small knob of butter and a sprinkling of the mixed spice. Sit the pears in a shallow baking dish, then roast for 5 mins until starting to soften. Meanwhile, heat the honey and another knob of butter in a large bowl in the microwave for 30 secs. Toss with the cornflakes and nuts.
- Take the pears out of the oven, then top with the cornflake mix. Cook for another 5 mins or until the cornflakes take on a rich golden colour. Allow to cool for a few mins (the cornflakes crisp up again as they cool), then serve warm with ice cream.

Steps:
- Core pears from bottom, leaving stems intact.
- Peel pears, leaving a small amount of peel at stem end.
- Cut 1/4" from the bottom to level if necessary.
- In a bowl, combine orange juice and orange marmalade; spoon over pears, letting excess drip into bowl.
- Set aside for sauce.
- Place wafer crumbs and almonds in a large shallow dish.
- Roll pears in crumb mixture to coat the bottom 3/4 of each pear.
- Place in a 13x9x2" baking dish coated with cooking spray.
- Bake at 350* for 35-45 min.
- or until tender.
- Meanwhile, for sauce, combine yogurt and reserved marmalade mixture; refrigerate until serving.
- Serve with warm pears.
