These coconut flour brownies are so rich and fudgy, you won't believe they are low carb! Simple ingredients and made in just one bowl!

2 tablespoon coconut flour
1/3 cup cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 large eggs
3/4 cup peanut butter (can use almond butter or nut free alternative)
1/4 cup keto maple syrup (can use standard maple syrup)
1 teaspoon vanilla extract
1/3 cup granulated sweetener of choice (* see notes)
1 cup chocolate chips of choice (optional)

Steps:

  • Preheat the oven to 180C/350F. Line an 8 x 8-inch baking pan with parchment paper and set aside.
  • In a large mixing bowl, combine your dry ingredients and mix well. In a separate bowl, whisk together your eggs, peanut butter, maple syrup, vanilla extract, and granulated sweetener of choice, until glossy. Add the dry ingredients into the wet and mix together until smooth. Fold through the chocolate chips at the end.
  • Transfer your brownie batter into the lined pan and bake for 25-27 minutes, or until a skewer comes out mostly clean.
  • Allow the brownies to cool in the pan completely, before slicing into pieces.

1 large sweet potato (baked in the oven at 425 ºF for 50 minutes)
1/4 cup coconut oil
3 large eggs
1/2 cup raw honey
3 tablespoons coconut flour
1/2 cup blanched almond flour
1/3 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1 tablespoon vanilla extract
1/2 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees ºF. Grease a 9x13 inch pan with coconut oil. In a stand mixer with a paddle attachment cream baked sweet potato and coconut oil (doing this while the sweet potato is still warm will melt the coconut oil). Add remaining ingredients, except for chocolate chips, and beat until well mixed. Stir in chocolate chips. Pour batter into pan. Bake for approximately 25 minutes. I love chocolate brownies! These brownies are not only dark, rich, and delicious, but they are also gluten-free, dairy-free and healthier for you, using coconut flour and coconut oil. I can't decide whether I like these better warm out of the oven, or cooled the next day. Both ways are so indulgent!

½ cup cocoa powder
⅓ cup virgin coconut oil
6 eggs
1 cup white sugar
½ teaspoon salt
½ teaspoon vanilla extract
½ cup coconut flour, sifted
1 tablespoon semisweet chocolate chips, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Stir cocoa powder and coconut oil together in a saucepan over low heat until coconut oil has melted, about 5 minutes. Remove from heat and let cool.
  • Beat eggs, sugar, salt, and vanilla extract together in a bowl; stir in cocoa mixture. Whisk coconut flour into egg mixture until there are no lumps. Pour batter into prepared baking dish; sprinkle chocolate chips over top.
  • Bake in preheated oven until a toothpick inserted into the center come out clean, about 35 minutes.

I love sweet potatoes; I love brownies. So, why not?! This recipe was put out by the Wheat Foods Council. This could easily be halved and made in an 8"x8" pan.

1/2 cup butter or 1/2 cup margarine, softened
1 cup sugar
1/2 cup Splenda sugar substitute
5 egg whites
1 1/2 teaspoons vanilla extract
3/4 cup flour
1/2 cup oatmeal
1/2 cup baking cocoa
1/2 teaspoon baking powder
1 cup sweet potato, mashed
1/4 cup pecans, chopped

Steps:

  • Preheat oven to 350°F Grease a 9" x 13" baking pan.
  • Cream the butter and sugar.
  • Add the egg whites one at a time scraping the bowl and beating after each addition.
  • Fold in the rest of the ingredients except the pecans.
  • Spread batter in pan and top with pecans.
  • Bake about 30 minutes or until a toothpick incerted into the center of the brownies comes out clean.
