Steps:
- Grease an 8x8 inch square baking pan. Set aside.
- Combine sugar, cocoa and milk in a medium saucepan. Stir to blend, then bring to a boil, stirring constantly. Reduce heat and simmer. Do not stir again.
- Place candy thermometer in pan and cook until temperature reaches 238 degrees F(114 degrees C). If you are not using a thermometer, then cook until a drop of this mixture in a cup of cold water forms a soft ball. Feel the ball with your fingers to make sure it is the right consistency. It should flatten when pressed between your fingers.
- Remove from heat. Add butter or margarine and vanilla extract. Beat with a wooden spoon until the fudge loses its sheen. Do not under beat.
- Pour into prepared pan and let cool. Cut into about 60 squares.

Steps:
- Line 9-inch square pan with Reynolds Wrap® Aluminum Foil, with ends of foil extending over sides. Bring sugar, butter and evaporated milk to full rolling boil in 3-qt. saucepan on medium heat, stirring constantly. Cook 4 min. or until candy thermometer reaches 234°F, stirring constantly. Remove from heat.
- Add chocolate and marshmallow creme; stir until melted. Add nuts and vanilla; mix well.
- Pour into prepared pan; spread to cover bottom of pan. Cool completely. Use foil handles to lift fudge from pan before cutting into 1-inch squares.

CLASSIC HOT FUDGE
Steps:
- Combine the chocolate, heavy cream, butter, corn syrup, brown sugar, cocoa powder and salt in a small saucepan over medium heat. Cook, stirring often, until the chocolate is melted and smooth, about 5 minutes. (Do not simmer or the chocolate may scorch and taste bitter; reduce the heat if needed.)
- Remove from the heat and stir in the vanilla. Let cool slightly. Refrigerate up to 1 week; reheat in a small saucepan over low heat or microwave in 30-second intervals, thinning with more heavy cream if needed.
- Use milk chocolate instead of semisweet along with 1/3 cup creamy peanut butter; increase the heavy cream to 1 cup and the brown sugar to 1/4 cup. Stir in 1/2 cup chopped salted roasted peanuts at the end.
- Use half semisweet and half milk chocolate along with 2/3 cup butterscotch chips; increase the butter to 6 tablespoons.
- Add 1/3 cup seedless raspberry jam with the chocolate. Replace the butter with coconut oil and omit the corn syrup and brown sugar. Use coconut extract instead of vanilla.
- Add 1/3 cup cherry jam with the chocolate. Omit the corn syrup and brown sugar. Use 1/2 teaspoon almond extract instead of vanilla.
- Add 1/3 cup orange marmalade and 1/2 teaspoon chipotle chile powder with the chocolate. Omit the corn syrup and brown sugar. Add 1/4 teaspoon orange extract with the vanilla.
- Use milk chocolate instead of semisweet along with 1/3 cup chocolate-hazelnut spread and 1 tablespoon instant espresso powder. Omit the corn syrup, brown sugar and vanilla. Stir in 2 tablespoons hazelnut liqueur at the end.

Steps:
- Butter a 9x9 dish and set it aside.
- Combine sugar and evaporated milk in a medium-sized saucepan.
- Before turning burner on, prep other ingredients and put them by the stove for easy access to add once the sugar mixture is finished boiling.
- Turn burner on to medium-high. Bring evaporated milk and sugar to a boil, stirring constantly.
- Once at a full boil, set timer for 5 minutes, turn heat down slightly but keep it at a full boil, stirring constantly. Make sure to stir all the way to the bottom of the pan.
- After five minutes, remove from heat. Quickly add the remaining ingredients--butter, chocolate chips, marshmallows, vanilla, and nuts, if desired. Stir briskly until everything is blended together.
- Pour into prepared 9x9 pan. Don't scrape the grainy-looking top edges of the fudge into the pan. Scrape that little bit out onto a separate plate, or just leave it in the pan.
- If only putting nuts in half of the fudge, sprinkle them onto half of the fudge. Then, gently use your finger or a butter knife to press the nuts down into the fudge.
- Let fudge cool completely before cutting and serving. You can let it cool for a few hours on the counter. To speed up cooling time, put it in the fridge.
- Fudge will stay good for up to 2-3 weeks kept in an airtight container or Ziploc bag in the fridge.
TRADITIONAL VANILLA FUDGE

- Lightly grease and fully line a 20cm (8in) square cake tin.
- Place 300ml (½ pt) double cream, 100ml (3½floz) milk, 100g (3½oz) butter, 300g (10½oz) caster sugar and 150g (5oz) light muscovado sugar into a large heavy-based pan. Place over a low heat. Stir constantly until the butter has melted and the sugars have dissolved.
- Increase the heat under the pan slightly to allow it to gradually come to the boil whilst stirring all of the time. Simmer the mixture, whilst continuing to stir, until it reaches 116°C(241°F) (soft ball stage).
- Once the required temperature has been reached, remove the pan from the heat and leave it undisturbed to cool down to 110°C(230°F). This will only take a couple of minutes.
- Add the vanilla and beat the mixture with the wooden spoon vigorously until the fudge has thickened and has lost its shine.
- Pour the mixture into the prepared tin. Smooth it into the corners. Set aside to cool at room temperature for two or three hours.
- Once fully cold and firm remove the fudge from the tin. Use a sharp knife to slice the fudge into bite sized pieces.

- Butter and line a 20cm square cake tin with baking parchment. Put the butter, condensed milk, sugar and milk in a large saucepan over a low heat. Stir continuously until the sugar dissolves.
- Increase the heat and bring to the boil. Bubble for 10 mins, stirring all the time until the mixture reaches 115C on a sugar or probe thermometer. Remove from the heat and leave to cool to 110C. Add the vanilla, then beat in a stand mixer or with an electric hand whisk until it cools to 60C. This will help break up any large sugar crystals. The fudge should be thick and matte-looking.
- Spoon the fudge into the prepared tin and press down with a spoon to smooth the surface. Leave to set, then cut into squares. Will keep for up to three weeks in an airtight container.

Let the brownies cool completely in the pan before cutting them into squares.

- Place chocolate chips, bittersweet chocolate and the SWEETNED CONDENSED milk in a double boiler over hot,but,not boiling water.

- Stir in the syrup and butter until combined and add condensed milk, continuously stirring until the mixture comes to a boil.

When the mixture forms a firm but soft ball that can be squeezed flat when taken out you have the correct consistency. - Remove the pot from the heat and whisk in the vanilla essence until the mixture thickens.
- Pour into a greased baking tray and allow to cool and set.
