These were the most amazing cookies I have every tasted. They are "very" crispy. I will make this year-round, not just for Passover.

1 1/2 cups matzo meal
1 1/2 cups matzo farfel
1 1/2 cups sugar
1 cup raisins
1 cup walnuts
1 cup bittersweet chocolate chips
1 teaspoon cinnamon
3 large eggs
2/3 cup vegetable oil

Steps:

  • Mix together the first 7 ingredients.
  • Add the eggs and oil and mix together well.
  • The dough will seem dry and crumbly, but it will hold together when cooked.
  • Drop by tablespoons onto greased cookie sheet. Press lightly to hold together, if necessary.
  • Bake @ 350° for 15 minutes.

1/3 cup creamy natural peanut butter
1/3 cup packed light brown sugar
3 tablespoons vegetable oil
1 large egg white
1 ounce bittersweet chocolate, melted (about 2 small squares)

Steps:

  • Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking dish with aluminum foil with a 1-inch overhang on all sides. Spray lightly with baking spray.
  • Combine both flours, oats, wheat germ, chia seeds if using, salt and cinnamon in a medium bowl. Set aside.
  • Combine the peanut butter, brown sugar, vegetable oil and egg white in another medium bowl. Beat with a hand mixer until creamy, about 2 minutes. Add the dry ingredients and beat on low until a wet and sandy mixture that holds together when squeezed. Turn the dough out into the prepared pan and press into an even layer. Bake until golden, 25 to 30 minutes. Let cool completely. Drizzle with the chocolate. Let the chocolate harden and break into eighteen 2-inch even pieces.

¾ cup chopped walnuts
1 cup matzo cake meal
¼ teaspoon salt
½ cup potato starch
3 eggs
½ cup margarine, softened
1 ¼ cups white sugar
1 (12 ounce) bag chocolate chips

Steps:

  • Preheat oven to 275 degrees F (135 degrees C).
  • Spread the walnuts onto a baking sheet, and toast until the nuts start to turn golden brown and become fragrant, about 45 minutes. Watch the nuts carefully as they bake, they burn quickly. Once toasted, set the walnuts aside to cool to room temperature.
  • Raise oven temperature to 350 degrees F (175 degrees C). Line baking sheets with parchment paper. Whisk together the matzo cake meal, salt, and potato starch in a bowl.
  • In a large bowl, beat the eggs, margarine, and sugar together until smoothly combined. Stir the meal mixture into the wet ingredients until thoroughly combined, and mix in the chocolate chips. Drop the dough by spoonfuls onto the parchment-lined baking sheets.
  • Bake in the preheated oven until lightly golden brown, 10 to 15 minutes. Remove the cookies from the baking sheets as soon as they are removed from the oven; cool on baking racks.

1 teaspoon ground cinnamon

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.

I found this really tasty recipe on an online forum. It could not be easier to throw together (dough can be mixed by hand) and tastes much better than the usual Passover cookies. Dough can be frozen and recipe can be halved. Recipe makes 4 dozen small cookies on 2 cookie sheets.

1/2 teaspoon salt
1 teaspoon vanilla sugar or 1 teaspoon vanilla extract
1 cup sugar
3 cups ground nuts (walnuts, almonds, etc., you can combine different types)
coconut (optional)

Steps:

  • Beat eggs eggs, salt, and vanilla.
  • Add sugar, nuts, and coconut, if using. The mixture will be thick.
  • Drop onto a greased pan by small spoonfuls. Bake at 350°F for 15 minutes or until golden. Let harden before removing from pan.

1 1/3 cups passover brown sugar
1/2 cup granulated sugar
1 tablespoon passover vanilla sugar
3/4 cup unsalted butter (1 1/2 sticks) or 3/4 cup margarine (1 1/2 sticks)
2 eggs
1/2 teaspoon salt
1 cup matzo cake meal
1 cup potato starch
2 cups chocolate chips

Steps:

  • N. B. Can replace the chocolate chips with chopped pecans and the granulated sugar with an additional 1/2 cup of brown sugar if you want to make pecan sandies.
  • In a large mixing bowl, cream the brown, granulated and vanilla sugars with the butter or margarine.
  • Blend in the eggs.
  • Stir in the salt, cake meal and potato starch.
  • Fold in the chocolate chips.
  • Chill the dough for 1 hour or overnight for chewy cookies, do not chill if you prefer thin, crisp cookies.
  • Preheat the oven to 350°F.
  • Line 2 baking sheets with parchment paper.
  • Scoop out generous teaspoonfuls of dough or roll marble sized balls.
  • Place on the baking sheets, leaving room for the cookies to spread.
  • Press down a little if using chilled dough.
  • Bake for 12 to 15 minutes- watch carefully- then cool on the baking sheets for 20 to 30 minutes or place the baking sheets in the fridge to hasten cooling.
  • Remove the cookies to a platter using a metal spatula.

2 tablespoons margarine
1 ½ tablespoons potato starch
¼ teaspoon baking powder
2 eggs
⅔ cup white sugar
1 teaspoon vanilla extract
1 ⅔ cups chocolate chips
2 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease baking sheets.
  • Melt bittersweet chocolate and margarine together in the top of a double boiler over barely simmering water, stirring frequently and scraping down the sides with a rubber spatula, about 5 minutes. Remove from heat and cool.
  • Combine potato starch and baking powder in a bowl.
  • Beat eggs, sugar, and vanilla extract together in a separate large bowl with an electric mixer on medium speed until light and fluffy, about 5 minutes.
  • Fold the cooled chocolate mixture, potato starch mixture, chocolate chips, and walnuts into egg mixture until just combined.
  • Drop spoonfuls of batter onto the prepared baking sheet.

  • Put oven rack in middle position and preheat oven to 375°F. Line a large baking sheet with parchment paper.
  • Coarsely chop 1 cup pecans and set aside. Pulse remaining 1/2 cup pecans in a food processor with sugar, potato starch, salt, and cinnamon until finely ground (be careful not to pulse to a paste), then stir into egg whites. Stir in remaining cup chopped pecans.
  • Drop 1/2 tablespoons of batter 2 inches apart on baking sheet and bake until cookies are lightly browned and slightly puffed, 15 to 17 minutes.
