CRUNCHY HONEY GARLIC PORK CHOPS
I made these crunchy honey garlic pork chops the other night and they are a big hit with my family and friends.

Steps:
- 1. Whisk the eggs and 4 tablespoons water in a shallow dish.
- 2. Mix the flour, salt, pepper and garlic powder in another shallow dish.
- 3. Dip the chops in the flour, then over into the egg, then back over into the flour mixture again.
- 4. This is what puts the extra crispy coating on the chops.
- 5. Be sure to get plenty of flour on this last coating, then shake them a little and place in a pan with about a half inch of oil.
- 6. Be sure the oil is hot, but not too hot or the chops will cook too fast. You need to get it good and hot and then turn to about medium.
- 7. Cook for about 6 minutes on each side. Try not to turn more than twice or your breading will come off.
- 8. Remove from the pan to a 9x13 baking dish.
- 9. Saute the garlic a little in the butter. Add the honey, soy sauce, brown sugar, cayenne and garlic.
- 10. Bring to a boil then reduce to low and simmer for about 5 minutes. Watch this carefully because it will foam and might boil over.
- 11. Pour 1/2 of the glaze over the pork chops. Flip them over and pour the other 1/2 over the other side.
- 12. Place uncovered in a preheated 350 oven for about 20-25 minutes. This sets the glaze and finishes them to be sure they are cooked through.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Season pork chops with salt, pepper, and garlic powder. Heat olive oil in a skillet over medium heat. Brown pork chops 3 to 4 minutes per side. Transfer to the prepared baking dish.
- Whisk honey, brown sugar, soy sauce, garlic, and butter together in a bowl and pour over the pork chops in the baking dish.
- Bake in the preheated oven for 25 minutes. Remove from oven and let pork chops sit in the baking dish 5 minutes more to soak up juices.
- Serve pork chops topped with extra sauce.

GARLIC & HONEY PORK CHOPS
When you know you're going to have a hectic week, you're tired of BBQ sauces and Shake 'n Bake, but you want something a "little more" without having to forage for bizarre ingredients, this is the marinade to turn to. Let chops marinate overnight then quickly broil or grill and presto: yummy dinner without a lot of fuss. A "quickie" will work; pop 'em in the marinade in the morning and serve by dinnertime.

- Combine all ingredients in a plastic zipper bag and refrigerate for a day (quickly putting everything together first thing in the morning is easy and works well).
- At cooking time, drain chops and reserve some of the marinade for basting, then either preheat a grill with medium-hot coals or preheat your broiler; depending on the thickness of your pork chops, total cooking time should take 12 to 15 minutes, turning once and basting with the reserved marinade a couple of times early on.

- Trim the fat off the pork chops.
- Lay the chops between 2 pieces of plastic wrap and, using a mallet or a rolling pin beat them until their thickness is reduced by half.
- Beat the egg and place in shallow wide bowl.
- Add the mustard, oregano, thyme,salt and pepper.
- On a large plate, combine the breadcrumbs and the Parmesan.
- Press each of the pork chops into the egg mixture, coating both sides.
- Then put the chops into the bread crumbs, covering them evenly.
- Place them on a cooling rack to dry slightly while you heat the oil in a large frying pan until it sizzles if water is dripped into it.
- Cook the pork chops until they are a deep golden color, about 5 to 7 minutes on each side (depending on how thin they are).

HONEY GARLIC PORK
My friend Wendy introduced me to Honey Garlic Pork Chops at an amazing Chinese restaurant in town, Sea Garden. They are absolutely so delicious--I had to come home and try to recreate them. This is as close as I can get.

Steps:
- Heat oil in a large (twelve to fourteen inch) heavy-bottomed skillet over medium-high heat.
- When oil is hot, add pork pieces, being careful not to crowd. (If skillet is too crowded, it won't cook properly. Split the pork into two batches, if needed. There should be space between the pieces, so that liquid can evaporate).
- While cooking, season pork with red pepper flakes, salt and pepper.
- Saute pork, turning occasionally, until pork pieces are nicely browned and turning crisp on all sides.
- Add garlic and continue to stir until fragrant, approximately one or two minutes.
- (If the pork was split into batches, combine the cooked meat and garlic before going to next step).
- Turn heat down to medium; add honey to pork.
- Stir well, continue to cook for two to three more minues until honey has coated pork well and has slightly thickened (and darkened).
- Enjoy!
