GINGER DIJON SALMON

Ginger Dijon Salmon image

This recipe is quick, easy and sooooooo delicious. 5 minutes to prepare and 15 - 20 minutes to cook. Use fresh salmon for best results. Steaks or fillets can be used, however I like using the fillets - no bones.

Provided by Karen1961

Categories     Very Low Carbs

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 5

2 teaspoons olive oil
2 teaspoons ginger, freshly grated
1 tablespoon Dijon mustard
1 tablespoon honey
24 ounces salmon

Steps:

  • Spray baking sheet or pan with non-stick cooking spray.
  • Mix olive oil, ginger, dijon mustard and honey in small bowl or measuring cup.
  • Brush salmon with glaze, and place on baking sheet or pan.
  • Bake at 350 degrees for 15- 20 minutes, or until salmon flakes easily.
  • Note: If using a whole fillet (1/2 a salmon), cooking time may take a little longer, if using small, individual serving size fillets, cooking time may be a little shorter.

Provided by Ming Tsai

Categories     main-dish

Time 4h45m

Yield 4 servings

Number Of Ingredients 17

1/2 cup naturally brewed soy sauce
2 tablespoons garlic, minced
1 tablespoon ginger, minced
4 scallions, sliced
1/2 cup honey
2 tablespoons Dijon mustard
1/2 cup red wine
1/4 cup canola oil
4 pork tenderloins, silver skinned removed
1 Japanese eggplant, cut in half, lengthwise
1 zucchini, cut in thirds lengthwise
1 red bell pepper, cut in half, de-seeded
1 large red onion, peeled and cut into 1/2-inch slices
2 large sweet potatoes, skin on, washed and cut into 1/2-inch slices
1 fennel, de-cored, cut in thirds, lengthwise
Salt and black pepper, to taste
Canola oil, for cooking

Steps:

  • In a bowl, mix together the soy, garlic, ginger, scallions, honey, Dijon, wine and oil. Toss with pork to coat well and let marinate for at least 4 hours, refrigerated. Pull the pork out of the marinade. Place marinade in a small saucepan and bring to a boil and reduce by 25 to 30 percent. Meanwhile, in a large, hot saute pan coated lightly with oil, pan sear the pork until brown on all sides, about 10 to12 minutes total. Glaze the pork every 3 to 4 minutes with the reduced marinade. In a large bowl, mix together the eggplant, zucchini, pepper, onion, sweet potato and fennel. Toss lightly with oil, season and place on hot grill. Cook vegetables until done, chop into 1-inch pieces and check for flavor.
  • PLATING: On a dinner plate using an o-ring mold (3-inch diameter by 2 inches tall or a tuna fish can) fill with grilled veggies. Cut each tenderloin into 3 petit fillets and drizzle with reduced marinade.
  • WINE: Rosemont GSM, Australia

GINGER ALE - HONEY MUSTARD GLAZED HAM

Ginger Ale - Honey Mustard Glazed Ham image

The glaze on this recipe is sweet, tangy and delicious! This would be perfect for your holiday ham... it will be a big hit with guests!

Provided by Tiffany Ash

Categories     Other Sauces

Time 3h30m

Number Of Ingredients 5

8 1/2 lb ham
1 c ginger ale
3/4 c prepared mustard
1/2 c honey
1/2 c light brown sugar

Steps:

  • 1. Preheat oven at 350 degrees.
  • 2. I slow cooked an 8 1/2 lb ham in a shallow roasting pan for about 2 1/2 to 3 hours. I added just a cup of ginger ale to the shallow pan and tented the ham with foil.
  • 3. Prepare glaze: 30 minutes before ham is done cooking, make your glaze in a separate bowl, 3/4 cup of prepared mustard (French's, dijon... whatever your taste), 1/2 cup of honey and a 1/2 cup of light brown sugar.
  • 4. Take ham out of the oven and score the top and smother with glaze. Put back in the oven for at least 10 minutes and add more glaze if desired. Or, what I did was spoon the ginger ale juices back over the glazed ham. Let cook for another 10 minutes and should be ready to serve.
  • 5. As it shows in the picture, I made a side of garlic sour cream mashed potatoes and peas simmered in the ginger ale juice from the ham.
