One-Bowl Chocolate Cake Batter image

2 cups all-purpose flour
1 3/4 cups granulated sugar
1/4 cup packed light brown sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
3 large eggs
1 cup whole milk
1/2 cup vegetable oil
1 tablespoon distilled white vinegar
2 teaspoons pure vanilla extract
1/4 cup hot tap water

Steps:

  • Mix the flour, granulated sugar, brown sugar, cocoa powder, baking soda, salt and baking powder in a large bowl with a mixer on low speed until combined. Add the eggs, milk, vegetable oil, vinegar and vanilla. Increase the speed to medium and beat until smooth, about 2 minutes. Beat in the hot water until smooth.
  • Turn this one-bowl chocolate cake batter into three different desserts.
  • Layer Cake:
  • Brush two 9-inch round cake pans with vegetable oil, line with parchment, then brush with more oil and dust with flour.
  • Divide the batter between the pans; tap against the counter to remove any air bubbles.
  • Bake at 350 degrees F until a toothpick inserted into the centers of the cakes comes out clean, 40 to 45 minutes. Let cool 15 minutes in the pans, then turn out onto racks to cool completely; discard the parchment.
  • Sheet Cake:
  • Line a 9-by-13-inch baking dish with foil and brush with vegetable oil.
  • Pour the batter into the pan; tap against the counter to remove any air bubbles.
  • Bake at 350 degrees F until a toothpick inserted into the center of the cake comes out clean, 40 to 45 minutes. Let cool completely in the pan.
  • Cupcakes:
  • Line 30 muffin cups with paper liners.
  • Pour the batter into the muffin cups, filling them about halfway. Tap the pans against the counter to remove any air bubbles.
  • Bake at 350 degrees F until a toothpick inserted into the centers of the cupcakes comes out clean, 20 to 25 minutes. Let cool 5 minutes in the pans, then remove to racks to cool completely.

This is my husband's favorite recipe. Someone brought this to my Grandpa's funeral in 1968, and I've been making it since. The dark fudge cake over the hot pudding is delicious served with whipped cream or ice cream. This is very rich and will be loved by chocolate lovers!

  • Stir in milk and butter until smooth.
  • Fold in walnuts until just combined.
  • Spread batter evenly in the prepared baking pan.
  • Mix 1/4 cup cocoa and brown sugar in a small bowl; sprinkle mixture on top of the batter.
  • Pour hot water over the batter.
  • Bake in the preheated oven until the center of the cake is almost set, about 45 minutes. Brown sugar, cocoa, and hot water will combine to form a chocolate sauce that will settle to the bottom of the cake during baking.

2 cups (260g) all purpose flour
2 cups (414g) sugar
3/4 cup (85g) natural unsweetened cocoa powder
2 tsp baking soda
1 tsp salt
2 large eggs
1 cup (240ml) buttermilk
1 cup (240ml) vegetable oil
1 1/2 tsp vanilla
1 cup (240ml) hot water
2 1/2 cups (560g) butter, room temperature
9 cups (1035g) powdered sugar
2 tsp vanilla extract
1 cup (114g) natural unsweetened cocoa powder
4-5 tbsp (60-75ml) water/milk
6 oz (1 cup | 169g) semi sweet chocolate chips
1/2 cup heavy whipping cream

Steps:

  • Prepare three 8 inch cake pans with parchment paper circles in the bottom, and grease the sides.
  • Preheat oven to 300°F (148°C).
  • Add all dry ingredients to a large bowl and whisk together.
  • Add eggs, buttermilk and vegetable oil to the dry ingredients and mix well.
  • Add vanilla to hot water and add to mixture. Mix well.
  • Divide batter evenly between cakes pans and bake for 30-33 minutes, or until a toothpick comes out with a few crumbs.
  • Remove cakes from oven and allow to cool for about 10 minutes, then remove to cooling racks to cool completely.
  • Make frosting while cakes cool. Beat the butter in a large mixing bowl until smooth.
  • Slowly add 4 cups (460g) of powdered sugar and mix until smooth.
  • Add vanilla and half of the water or milk and mix until smooth.
  • Add another 5 cups (575g) of powdered sugar and mix until smooth.
  • Add cocoa and mix until smooth.
  • Add remaining water or milk until the frosting is the right consistency.
  • Once cakes are cool, remove cake domes from top with a large serrated knife. See my tips on how to level a cake and how to stack a cake.
  • Place first layer of cake on cake plate. Spread about 1 cup of frosting on top in an even layer.
  • Add second layer of cake and add another cup of frosting on top in an even layer.
  • Add final layer of cake on top and frost the outside of the cake. Feel free to use my tutorial for frosting a smooth cake.
  • To make the chocolate ganache, add the chocolate chips to a medium sized bowl (see my tips on making chocolate ganache).
  • Heat the heavy whipping cream just until it begins to boil, then pour it over the chocolate chips. Allow it to sit for 2-3 minutes, then whisk until smooth.
  • Drizzle the chocolate ganache around the edge of the cake, then pour the remainder of the ganache on top of the cake and spread evenly. I like to use a squeeze bottle for drizzling around the edges. See my tips on making a chocolate drip cake.
  • Allow the ganache to firm up a bit, then pipe the remainder of the frosting around the top edge of the cake and pipe a border around the bottom. I used Ateco tip 844.
  • Add a few sprinkles to the cake, if desired, then serve. Cake is best when well covered for 3-4 days.

2/3 cup (57 grams) Dutch-process cocoa, (sifted)
2 teaspoons instant espresso powder*
1 cup boiling water
1 3/4 (222 grams) cups all-purpose flour
1 cup (200 grams) granulated sugar
1/2 cup (100 grams) packed light brown sugar
1 teaspoon salt
1 teaspoon baking soda
1 cup (227 grams) sour cream, (at room temperature)
1/2 cup vegetable oil*
4 large eggs plus one egg yolk, (at room temperature)
1 tablespoon white vinegar
2 teaspoons vanilla extract
2/3 cup (133 grams) granulated sugar
4 large egg whites
1/4 teaspoon salt
3 sticks (340 grams) unsalted butter, (cut into 12 pieces and at room temperature)
12 ounces (340 grams) semisweet chocolate, (melted and cooled slightly)
1 teaspoon vanilla extract

Steps:

  • In a medium heatproof bowl add the chocolate, cocoa powder, and espresso powder. Pour hot water over mixture. Cover and let stand for 5 minutes. Whisk mixture gently until smooth then set aside to cool.
  • Meanwhile, preheat the oven to 350°F. Butter and flour two 8-inch round cake pans.
  • In a small bowl, whisk together the flour, sugars, salt, and baking soda.
  • Whisk sour cream, oil, eggs, egg yolk, vinegar, and vanilla into the cooled chocolate mixture until smooth. Stir in the flour mixture until smooth, being careful not to overmix. Batter will be thin.
  • Pour the batter into the prepared pans and bake for 35 to 40 minutes, or until a cake tester or toothpick comes out clean. Cool in the pans for 30 minutes, then carefully turn them out onto a cooling rack to cool completely.
  • Combine the sugar, egg whites, and salt in the bowl of a stand mixer. Set bowl over a saucepan filled with 1-inch of gently simmering water. Whisking gently and constantly, heat mixture until sugar is dissolved and mixture is slightly thickened and foamy and registers 150°F on a candy thermometer or a digital thermometer, about 3 minutes.
  • Fit stand mixer with whisk attachment (not the paddle attachment) and beat the egg white mixture on medium speed until slightly cooled and thickened, about 2 minutes. Add the butter, 1 piece at a time, until smooth and creamy. If the mixture looks curdled, that's okay. Just keep beating until it becomes smooth. If the butter becomes too warm and greasy, refrigerate the bowl for 10 to 15 minutes then continue to beat until smooth.
  • Add chocolate and vanilla and mix until combined. Increase speed to medium-high and beat until light, fluffy, and well combined, about 30 seconds, scraping down the sides of the bowl as necessary.
  • Place one cake layer on a cake turntable or cake stand. Spread an even layer of frosting all of the cake layer, pushing it out over the edge just slightly. Place the other cake layer upside-down on top of the frosting so that the top of the cake is nice and flat. With an offset spatula, spread the remaining frosting evenly all over the cake, smoothing the edges. Serve or cover and store in the fridge for up to 2 days. Let come to room temperature for an hour before serving.

MOM'S CHOCOLATE WATER CAKE

My mom passed away in 1991 and my sisters and I have wished we had some of her recipes. We really missed her water cake, fried corn, augratin potatoes and a few others. The other day my sister came across this recipe and scanned it to send me a copy. This is so good and though you put them in order of cake mix on the bottom and topping on top, once it bakes the pudding is on the bottom and cake on top. It is DELISH! Gonna save it here where I know I can find it if I loose my copy. Enjoy

3/4 cup shortening
3 1/4 mugs, plus 2 tablespoons unbleached flour
3 mugs sugar
1 1/2 teaspoons baking soda
5 heaping tablespoons cocoa
3 large eggs
Milk
1 1/2 teaspoons vanilla
1 1/2 mugs boiling water
1 (12-ounce) package semisweet chocolate chips
3 egg whites
1 1/2 cups superfine granulated sugar
1 1/2 pounds butter, room temperature
1 teaspoon vanilla
2 cups whipping cream
2 tablespoons butter
2 (12-ounce) packages semisweet chocolate chips.

Steps:

  • For the cake: Preheat the oven to 350 degrees. Prepare 2 (10-inch) cake pans, greased and floured, bottom lined with waxed paper. Cut the shortening into the dry ingredients. In a large coffee mug, place 3 eggs. Fill the mug the rest of the way with milk and add to the dry mix in the bowl. Then add another 1/2 mug of milk. Add the vanilla, and boiling water. Mix for 2 minutes on medium speed. Scrape down sides of bowl. Pour into prepared pans. Bake at 350 degrees for 45 to 55 minutes or until a cake tester comes out clean. Remove from oven and let cool in pan for 15 minutes. Remove from pans, remove waxed paper and let cool completely.
  • For the filling: In a double boiler melt the chocolate, remove from boiler and put aside. In the double boiler place the 3 egg whites and sugar and cook over medium heat until warm to the touch and sugar is dissolved. Place mixture in large mixing bowl and beat until cool. Add the melted chocolate. When cool, add the butter and vanilla. Mix until fluffy. Use the mixture as a filling and first layer of frosting on the cake. Place the cake with the buttercream in the freezer for 1/2 hour to firm up before covering with the ganache.
  • For the ganache: In a saucepan mix and bring to a simmer the whipping cream and butter. Add in the chocolate chips and stir until smooth. Let sit until cool. Frost cake with the ganache.

Our really easy chocolate cake recipe is perfect for birthdays. It's so moist and fudgy and will keep well for 4-5 days. For buttercream quantities, instead of ganache, use our cake calculator. Each serving provides 477 kcal, 6.5g protein, 56g carbohydrates (of which 40g sugars), 25g fat (of which 10.5g saturates), 2.5g fibre and 0.6g salt.

225g/8oz plain flour
350g/12½oz caster sugar
85g/3oz cocoa powder
1½ tsp baking powder
1½ tsp bicarbonate of soda
2 free-range eggs
250ml/9fl oz milk
125ml/4½fl oz vegetable oil
2 tsp vanilla extract
250ml/9fl oz boiling water
200g/7oz plain chocolate
200ml/7fl oz double cream

Steps:

  • Preheat the oven to 180C/160C Fan/Gas 4. Grease and line two 20cm/8in sandwich tins.
  • For the cake, place all of the cake ingredients, except the boiling water, into a large mixing bowl. Using a wooden spoon, or electric whisk, beat the mixture until smooth and well combined.
  • Add the boiling water to the mixture, a little at a time, until smooth. (The cake mixture will now be very liquid.)
  • Divide the cake batter between the sandwich tins and bake in the oven for 25-35 minutes, or until the top is firm to the touch and a skewer inserted into the centre of the cake comes out clean.
  • Remove the cakes from the oven and allow to cool completely, still in their tins, before icing.
  • For the chocolate icing, heat the chocolate and cream in a saucepan over a low heat until the chocolate melts. Remove the pan from the heat and whisk the mixture until smooth, glossy and thickened. Set aside to cool for 1-2 hours, or until thick enough to spread over the cake.
  • To assemble the cake, run a round-bladed knife around the inside of the cake tins to loosen the cakes. Carefully remove the cakes from the tins.
  • Spread a little chocolate icing over the top of one of the chocolate cakes, then carefully top with the other cake.
  • Transfer the cake to a serving plate and ice the cake all over with the chocolate icing, using a palette knife.

2 envelopes instant hot chocolate mix
2 cups heavy whipping cream

2-3 cups mini marshmallows

Steps:

  • Bake the cake in a 9 x 13 inches dish according to directions listed on the box.
  • When the cake is baked, using the handle of a wooden spoon poke the cake, making the holes about an inch apart. Do not poke it all the way to the bottom just about 2/3 of the height.
  • Place 2 cups of marshmallow fluff in a microwave-safe bowl and add 2 Tablespoons water. Microwave in a 20-seconds interval and stir until smooth.
