COUNTRY-FRIED PORK NUGGETS

- Preheat a deep-fryer or heavy-bottomed pot, with enough canola oil to come halfway up the sides of the pot, to 375 degrees F.
- In a medium-sized bowl, mix together the chives, jalapenos, shallots, garlic, white wine vinegar, and mustard. Season with salt and pepper, to taste. Set aside.
- Season the pork with salt and pepper, to taste. In a medium-sized bowl, whisk the buttermilk and egg together. In a large bowl, combine the flour, paprika, cayenne, salt and pepper, to taste. Coat the pork on all sides in the buttermilk. Drain the pork from the buttermilk and add the chunks to the flour. Toss the pork in the flour insuring all of the pork is coated evenly. Shake off excess flour. Working in batches, deep-fry the nuggets until cooked through and crisp, about 3 to 4 minutes. Remove the pork from the fryer to a paper towel lined platter to drain. Transfer the pork to a serving platter and serve with jalapeno mustard.

- 1. PREP/PREPARE
- 2. AWESOME SAUCE
- 3. Gather your ingredients.
- 4. Add all of the sauce ingredients to a small saucepan, over medium-low heat.
- 5. Stir the mixture, and bring it up to a light simmer.
- 6. To make the slurry, mix the arrowroot (or cornstarch), and water together in a small bowl.
- 7. Add the slurry to the saucepan, and simmer for an additional 5 minutes.
- 8. Cover the saucepan, and then reduce the heat enough to just keep the sauce warm.
- 9. Chef's Tip: If your stovetop has a warm setting, use it.
- 10. THE PORK BITES
- 11. Gather your ingredients.
- 12. Combine the flour and pepper in a large plate, or breading pan. Whisk the eggs with the 2 tablespoons of water, and place in another pan. Add the breadcrumbs to a third pan.
- 13. Coat a piece of pork in the flour.
- 14. Shake off the excess, and then coat in the egg wash.
- 15. Shake off the excess, and then press into the panko breadcrumbs.
- 16. Place on a parchment-lined baking sheet, fitted with a wire rack.
- 17. Repeat for the remaining pork, and allow them to rest for 15 minutes.
- 18. Place a rack in the middle position, and preheat the oven to385f (195c).
- 19. Place the pork bites in the preheated oven, and allow them to bake until fully cooked and beginning to brown, about 25 to 30 minutes.
- 20. Chef's Note: Keep an eye on them, and make sure they don't turn from golden brown to burnt brown.
- 21. Remove from the oven, and toss with the sauce.
- 22. PLATE/PRESENT
- 23. Serve on a bed of rice for a nice light meal.
- 24. Pile on a plate, and serve as an appetizer.
- 25. Garnish with some sliced green onions, and toasted sesame seeds. Enjoy.

CRISPY PORK BELLY
Thanks to social media, food bloggers, and celebrity chefs with too much time on their hands, pork belly was/is all the rage. It's a common sight on menus across the land, and you can't channel-surf past a food show without seeing it. It also helps that people are no longer terrified to eat a little fat.

- Preheat oven to 200 degrees F (95 degrees C).
- Season pork belly all over with smoked paprika, salt, and black pepper. Wrap pork in parchment paper; wrap a second time in aluminum foil, and a third time in another sheet of aluminum foil. Place pork packet in a baking dish.
- Roast in the preheated oven until tender for 6 hours. Let cool in wrappings to room temperature; place cooled packet in refrigerator and chill for 8 hours or overnight.
- Unwrap chilled meat. Save any rendered fat that falls away when unwrapping pork.
- Cut meat into 6 equal-size portions. Cut 1/8-inch by 1/8-inch slashes in the fat-side of the pork. Season with salt.
- Heat 2 tablespoons reserved pork fat in a skillet over medium heat. Place pork belly, fat side down, in hot fat; cook until well-browned on all sides and heated through, 5 to 10 minutes. Transfer pork belly to a plate, drizzle with olive oil and season with pepper.

EASY, CRUNCHY PORK CHOPS
This is a different way to cook pork chops that is really easy and extremely yummy. Adapted from a Nigella Lawson recipe

- Trim the fat off the pork chops.
- Lay the chops between 2 pieces of plastic wrap and, using a mallet or a rolling pin beat them until their thickness is reduced by half.
- Beat the egg and place in shallow wide bowl.
- Add the mustard, oregano, thyme,salt and pepper.
- On a large plate, combine the breadcrumbs and the Parmesan.
- Press each of the pork chops into the egg mixture, coating both sides.
- Then put the chops into the bread crumbs, covering them evenly.
- Place them on a cooling rack to dry slightly while you heat the oil in a large frying pan until it sizzles if water is dripped into it.
- Cook the pork chops until they are a deep golden color, about 5 to 7 minutes on each side (depending on how thin they are).

- Beat egg and then add next five ingredients. (Add additional spices and hot sauce if desired if these are not for the kids). Mix well.
- Add ground pork and mix well. Divide into 4 equal portions and shape into 10 1/2 inch long roll. Place on wax paper lined baking sheet. Freeze until firm-approx. 2 hours.
- Roll out 1/2 of the puff pastry on a floured surface to a 10 inch square. Keep remaining pastry chilled. Cut square into 2 equal rectangles. Place 1 pork roll at the edge of the long side of 1 rectangle. Brush seem with beaten egg and roll up. Brush top with beaten egg then cut into 1 inch slices and arrange slices on baking sheet.
- Repeat with remaining pastry and filling.
- Bake at 400°F for 20-25 minutes or until golden.
- Freezes great!

SAUCY PORK BITES
Tender pork bites swirled among a creamy, tasty sauce ready to be tossed upon a mound of potatoes, pasta or rice for a quick and easy meal. Serve this with green beans, broccoli or a salad. This recipe comes from the Augusta Chronicle and Kelly Calloway. You can use bits of pork sold at your grocery store or cut up a tenderloin. A little finely chopped rosemary would be a good addition to the sauce as would sauteed sliced mushrooms. You can also substitute chicken or beef bites too. - Combine flour, garlic salt and pepper on a plate. Toss pork cubes in flour mixture until coated.

CRUNCHY BAKED PORK CHOPS
Panko breadcrumbs are Japanese style crumbs. They are made with whole wheat and are lighter, larger and crispier than normal crumbs. They make a delicious crispy coating for these chops.

- Preheat oven to 350 degrees.
- In shallow dish, mix breadcrumbs, garlic, parsley, tarragon, salt and pepper.
- In another dish, beat egg with mustard.
- Place flour in third dish.
- Dredge each pork chop in flour, dip in egg mixture and then breadcrumb mixture, covering completely and patting so crumbs adhere.
- Place chops on baking sheet.
- Place in oven and bake until chops are cooked through (170 degrees), about 30 minutes, depending on thickness of chops, turning once.
- Serve with mushroom or country gravy, mashed potatoes and either apple sauce or baked apples.
