CHICKEN BAKED IN CORNFLAKE CRUMBS

Steps:
- Preheat the oven to 350 degrees F. Line a cookie sheet with aluminum foil and spray the foil with cooking spray.
- Shake the hot sauce into the buttermilk and pour into a shallow dish. Place the cornflake crumbs in another shallow dish. Dip each piece of chicken in the buttermilk, and then roll it in the crumbs. Place the coated chicken pieces on the cookie sheet and sprinkle with salt and pepper.
- Bake the chicken until the crust is golden brown and the meat is no longer pink at the bone, about 1 hour. Check this with the point of a sharp knife. Remove the pieces from the pan and serve while the chicken is warm.
CRUMB-COATED CHICKEN THIGHS
I clipped this recipe out of a magazine a few years ago. I have never tried this recipe, but it sounds yummy!

- In a larger resealable plastic bag combine first seven ingredients. Add chicken a few pieces at a time, and shake to coat. Place chicken on baking sheet coated with nonstick cooking spray. Bake, uncovered, at 400 for 20 minutes. Turn chicken pieces; bake 15-20 minutes longer or until juices run clear.

- Preheat oven to 350°.
- Rinse chicken and pat dry.
- Place Ritz crackers in the blender and blend until finer than breadcrumbs.
- Melt butter completely (I microwave it).
- Dip chicken in melted butter.
- Coat chicken in Ritz crumbs and place on baking sheet.
- Bake for 45 minutes.
TOMATO & CRISPY CRUMB CHICKEN

- Heat oven to 190C/fan 170C/gas 5. Split the chicken breasts almost in half and open out like a book. Place in a non-stick roasting tin. Whizz the bread into crumbs in a food processor, then mix with the herbs. Mix the tomatoes with the garlic, vinegar and tomato purée. Spread the sauce over the chicken, sprinkle with the crumbs, then bake for 20-25 mins until the chicken is tender.
- While the chicken is cooking, boil the frozen beans for 3-5 mins until just tender. Serve the chicken, sprinkled with parsley, on a bed of beans.

- Season chicken breasts as desired (I used salt, pepper, and garlic powder) and place them in pressure cooker or slow cooker with chicken stock. Cook according to appliance directions (they took 20 minutes in my pressure cooker.) When chicken is cooked, remove from stock and place in a large bowl. Use 2 forks to shred chicken. Set aside.
- Preheat oven to 425 degrees F. Line a baking sheet with a large sheet of aluminum foil and fold the sides up to form short walls to hold in the juices. Place the strawberries in a single layer and roast for 15-20 minutes.
- While berries are roasting, combine remaining ingredients in a medium sauce pot set over medium-high heat, stirring well to combine. Bring mixture to a boil, then reduce to a simmer.
- When strawberries are out of the oven, stir them in to the sauce pot. Simmer for 20-25 minutes, stirring occasionally to prevent sticking, until sauce is thick and coats the back of a spoon.
