Especially good on apple or peach pies. My original recipe says it make enough for 2 8-inch pies but a lot of times I use the whole thing on one 10-inch.

- In a large mixing bowl combine all the ingredients except the butter.
- Cut butter into mixture with a pastry blender until mixture resembles coarse bread crumbs.
- Spread crumbs over prepared fruit mixture of your favorite fruit pie.
- Do NOT add top crust.
- Bake as directed in your fruit pie recipe.
- If crumbs become too dark while baking, cover loosely with foil, but remove foil the last few minutes of bakings so the topping will crisp.
- Note: when using this topping there is no need to dot the fruit with butter, if your recipe calls for that.

- In a bowl, mix 1 1/2 cups flour, 3/4 cup light-brown sugar, 1/3 cup granulated sugar, and 1/4 teaspoon each salt and cinnamon.
- Cut 1 1/2 sticks chilled unsalted butter into pieces. With your hands, work in butter pieces, until large clumps form. Divide mixture in half; freeze in plastic storage bags.

- Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
- Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
- Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.

BERRY CRUMBLE PIE

- Make the crust: Pulse the flour, granulated sugar and salt in a food processor to combine. Add the shortening and pulse a few times until coarse crumbs form. Pulse in the butter until just combined with some pea-size pieces remaining. Pulse in the vinegar and 2 tablespoons ice water until the dough starts to come together but is still crumbly, adding up to 2 more tablespoons ice water if needed. - Heat oven to 350 degrees. Spread almonds on a baking pan. Bake until fragrant and golden, about 8 minutes. Set aside to cool.

GLUTEN FREE CRUMB TOPPING FOR PIES
When I make potted pies for my family I always used frozen sheets of puff pastry for the top. Now being gluten free I either use mashed potato or breadcrumb topping. Here's my version of the crumb topping. You can easily vary the amounts to suit your taste or use a different cheese. I usually make breadcrumbs out of GF bread that is becoming stale and freeze them for future use. The pie in the photo I am posting was heated for 30 minutes at 200C....for a longer period of time use a lower temp. The topping can also be placed under the griller to brown over an already cooked pie filling.

I love to serve finger foods at parties and get-togethers, and I wanted to do some tiny pies, but all I could find were recipes for regular muffin sized "mini" apple pies. So here's what I came up with for tiny bite-sized apple pies! I have successfully made these gluten free by checking ingredients and using a gluten free flour blend. Prep time includes 1 hour chill time for dough.

- Cream butter and cream cheese together. Once well combined, add flour and work into dough by hand or by mixer. Chill dough for about one hour.
- Meanwhile, make the filling by combining the apples, sugar, cinnamon, and nutmeg. Allow the apple mixture to sit and flavors to meld.
- Combine flour, brown sugar, and nutmeg into a small bowl, stirring well. Cut in butter until it resembles coarse crumbs.
- When dough is ready, preheat oven to 400°F.
- Divide dough into 24 small balls and press into the bottom and up the sides of the cups in a miniature muffin pan.
- Fill each crust with apple filling - this should rise a little above each cup, as the apples will settle a bit during baking. If you have extra juice in the bottom of the bowl when you've used up the apples, divide that up throughout the cups too.

- Cut Shortening into flour with a pastry blender or fork until well blended and particles are the size of small peas. Make a well in the center and pour in ice water. Toss together, being careful not to over work the dough. Shape into a flat disk and place on floured board. Roll out to about 2″ larger than inverted pie dish.
