2 medium carrots, cut into 1-inch pieces
1 medium onion, cut into 1-inch pieces
2 garlic cloves, minced
2 teaspoons olive oil
1 teaspoon dried parsley flakes
1 teaspoon pepper
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon rubbed sage
1/2 teaspoon chili powder
1 broiler/fryer chicken (4 to 5 lbs.)

Steps:

  • Place carrots and onion in a 6-qt. slow cooker. In a small bowl, mix garlic and oil. In another bowl, mix dry seasonings., Tuck wings under chicken; tie drumsticks together. With fingers, carefully loosen skin from chicken breast; rub garlic mixture under the skin. Secure skin to underside of breast with toothpicks. , Place chicken in slow cooker over carrots and onions, breast side up; sprinkle with seasoning mixture. Cook, covered, on low 4-5 hours or until a thermometer inserted in thigh reads at least 170°., Remove chicken from slow cooker; tent with foil. Discard vegetables. Let chicken stand 15 minutes before carving., Freeze option: Cool chicken pieces and any juices. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally and adding a little broth or water if necessary.

1 whole chicken (about 3lbs.)
1 tablespoon paprika
1 teaspoon EACH: garlic powder, onion powder, salt, and pepper
½ teaspoon EACH: oregano and chili powder
1 tablespoon tapioca starch or cornstarch

Steps:

  • Make a ring out of aluminum foil and place this in the bottom of your crockpot and place the chicken on top.
  • Mix the paprika, garlic powder, onion powder, salt, pepper, oregano, and chili powder together in a small bowl then sprinkle them over the chicken. Put the lid on the crockpot and set it on high for 4 hours or low for 8 hours. (see notes)
  • Remove the chicken from the crockpot. Pour the liquid in the pot into a small frying pan and bring it to a boil. Whisk the tapioca starch with 1 tablespoon of cold water and add it to the pan. Whisk until the gravy thickens.

Tender, juicy, fall off the bone roasted chicken has never been easier!

1 whole chicken
1/4 cup melted butter
2 teaspoons seasoned salt
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon white pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
1/2 teaspoon garlic powder

Steps:

  • Rinse your chicken and pat it dry with paper towels. Tie the legs together with kitchen twine.
  • Sprinkle a small amount of the seasoning inside the chicken.
  • Brush with the melted butter and then thoroughly coat the outside of the chicken with the remaining seasonings.
  • Place 5-6 small foil balls into the bottom of your slow cooker and then place the chicken on top of the balls so it's suspended above the bottom of the crockpot.
  • Cover and cook on high 4-5 hours or on low for 6-8 hours or until the chicken is cooked through to a minimum temperature of 165 degrees when tested.

1 large onion, peeled and cut into thick slices
2 carrots, halved lengthways and chopped
1 small or medium chicken
2 tbsp butter, softened
1 bay leaf

Steps:

  • Preheat the slow cooker if necessary. Put the onion and carrot in the base of the stock pot to form a protective layer to sit the chicken on, and add 100ml boiling water. Gently ease the chicken skin away from the breast. Stir some salt and pepper into the butter and push the butter under the skin. Put the bay leaf in the cavity of the chicken and sit on top of the onion and carrot.
  • Cook on low for 5 hrs, then check that the chicken is cooked by wiggling the wing - it should feel very loose. Tip the chicken up so any liquid inside flows out, then cook on high for 30 mins. If the chicken isn't cooked through after the initial time, cook for another hour, then turn the heat up. If you want the skin to be browned, grill it for a couple of minutes (make sure your slow cooker insert is flameproof if you keep it in the pot, or transfer it to a roasting tin).
  • There will be some gravy in the base of the dish with the veg, tip everything through a sieve and press the veg gently to make sure you get every last drop. Serve the veg on the side, if you like.

I'm going to be using this a *lot this fall and winter. Two and a half hours in the old crock pot followed by a 10-minute broil gives me perfectly roast chicken every time

Number Of Ingredients 7

1 chicken (about 3 lbs give or take)
1/2 cup red wine or 1/2 cup white wine
3 garlic cloves, peeled
1/2 small white onion
1 celery, cut in half
1 carrot, cut in half
1 dash herbes de provence, thyme or 1 dash herbs, combination of your choice

Steps:

  • Crumple three pieces of aluminum foil and place in the middle of your slow cooker.
  • Add wine, garlic, onion, celery and carrot.
  • Place chicken on top of aluminum foil. (You may have to push the chicken down a bit so it'll all fit in there!).
  • Sprinkle chicken with herbs, salt and pepper.
  • Set slow cooker to high and cook for 1/2 hour per pound.
  • When ready, stick a meat thermometer into leg to ensure it is done. Transfer chicken to a roasting pan and set oven to 500º Fahrenheit.
  • Roast for 8-10 minutes, or until skin is golden brown.
  • Serve with roast root vegetables, mashed potatoes, or anything else you'd like!
  • The best part of this recipe? After your done cooking everything, you'll have a considerable amount of jus left over from the chicken. Whisk it with some cornstarch for a truly delicious gravy, or save it in your fridge or freezer for at-the-ready soup stock when you need it in a pinch. (It's so much better than bouillon.).

1/4 cup unsalted butter
1 medium onion, chopped
3 stalks celery, chopped
1 (4 ounce) can sliced mushrooms, drained
4 cups seasoned stuffing mix
2 tablespoons dried parsley flakes
1/2 teaspoon sage
1 dash fresh ground pepper
4 -8 fluid ounces chicken broth or 4 -8 fluid ounces water
1 teaspoon unsalted butter

additional dried parsley flakes

Steps:

  • Rinse the chicken well and pat dry; remove any excess fat.
  • In a skillet, melt ¼ cup butter; sauté the onion, celery, and mushrooms until tender.
  • Toss in the stuffing mix, 2 tablespoons parsley flakes, sage, pepper and broth.
  • Stir until the stuffing is thoroughly moistened.
  • Loosely stuff the chicken with the dressing.
  • If you like, truss the chicken to keep its shape.
  • Put the remaining dressing in a lightly oiled crock pot.
  • Place the chicken on top of the dressing.

2 tablespoons hard margarine or 2 tablespoons butter
1 cup chopped onion
1/2 cup chopped celery
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon dried parsley flakes
1/4-1/2 teaspoon poultry seasoning (or to your own taste)
4 cups day old bread, cubes
3 1/2 lbs roasting chickens
2 teaspoons liquid gravy browner

Steps:

  • Stuffing: Melt butter or margarine in frying pan.
  • Add onion and celery.
  • Saute until soft.
  • Remove from heat.
  • Mix in salt, pepper, parsley, and poultry seasoning.
  • Add bread cubes.
  • Toss well.
  • Wrap mixture in foil, leaving an opening at the top.
  • Chicken: Brush chicken with gravy browner, this is a must.
