1 tablespoon vegetable oil
2 pounds lean ground chicken
Kosher salt
4 cloves garlic, minced
1 medium onion, finely diced
1/4 cup chili powder
2 teaspoons ground cumin
1/4 teaspoon ground cinnamon
Pinch ground clove
1 cup low-sodium chicken broth
One 15-ounce can no-salt-added pinto beans
One 15-ounce can no-salt-added cannellini beans
One 28-ounce can no-salt-added diced tomato
6 sun-dried tomatoes, finely chopped
1 tablespoon minced chipotle in adobo
2 teaspoons molasses
2 teaspoons Worcestershire sauce
Freshly ground black pepper
4 sliced scallions, for garnish
Lime wedges, for garnish
Reduced fat sour cream, for garnish, optional

Steps:

  • Heat 1 teaspoon of the oil in a large nonstick skillet over high heat. Add half of the ground chicken and 1/2 teaspoon salt, cook, breaking the meat apart with a wooden spoon, until browned, about 4 minutes. Transfer the chicken to a 4- to 6-quart slow cooker insert. Repeat with the remaining chicken using another 1 teaspoon of oil and another 1/2 teaspoon of salt.
  • Turn the heat down to medium and add the remaining 1 teaspoon of oil to the skillet. Add the garlic and onions, stirring and scraping up any browned bits in the pan, until the onions soften, about 5 minutes. Add the chili powder, cumin, cinnamon and clove, and stir constantly for 1 minute to cook the spices. Pour in the chicken broth and scrape the bottom of the pan. Transfer to the slow cooker, along with the pinto and cannellini beans and their bean liquid, the diced tomatoes, sun-dried tomatoes, chipotle, molasses, Worcestershire sauce, 2 teaspoons salt and some black pepper. Cover and cook on the low setting for 6 hours.
  • Serve with scallions, lime wedges and sour cream, if using.

1 small Sweet Onion (- thinly sliced)
1 large Red Bell Peppers (- thinly sliced)
1 ½ Cups Pineapple
1 Cup Shredded Carrots
1 Pound Dried Lo Mein Noodles
1 Cup Sweet Chili Sauce
3 TBS Low-Sodium Soy Sauce
3 cloves Garlic (- minced)
2 tsp Fresh Ginger (- grated)

Steps:

  • Season chicken thighs generously with salt and pepper. Transfer chicken to the bottom of the slow cooker insert.
  • Make the sauce: In a medium bowl, whisk together the ingredients for the sauce (sweet chili sauce, soy sauce, garlic and ginger). Pour the sauce over the chicken.
  • Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours, or until chicken is tender enough to shred.
  • Shred chicken: Remove the chicken from the slow cooker to a clean work surface. Shred or slice the chicken and return it back to the slow cooker, along with any juices or sauce that has accumulated on the work surface.
  • Add vegetables: Add in the onion, bell pepper, pineapple and carrots. Stir to combine. Cover and cook on HIGH for 15-20 minutes, or until the vegetables are tender.
  • Meanwhile, cook lo mein: Boil and drain lo mein noodles according to package directions. Either add the noodles to the slow cooker and stir well to coat, or transfer noodles to serving bowls and top with sweet chili chicken.
  • Serve immediately garnished with sesame seeds and green onions.

1/3 cup white wine or chicken broth
1/4 cup olive oil

  • In a large bowl, whisk the first seven ingredients until blended. Pour 1-1/2 cups marinade into a large resealable plastic bag. Add chicken; seal bag and turn to coat. Steps:

  • Add chicken to the bottom of your crockpot.
  • Whisk the Sweet Chili Sesame Sauce ingredients together in a medium bowl. Pour over chicken.

  • Shred chicken in the crockpot and add 1 1/2 tablespoons cornstarch mixed with 1/4 cup water to the crockpot. Stir contents around. Cook on high for 20-30 minutes until sauce thickens. 2 lbs lean ground beef
1 large yellow onion, (finely chopped)
3 cloves garlic, (finely minced)
2 (14.5 oz) cans diced tomatoes with green chilies*

1/2 cup beef broth
2 Tbsp chili powder
2 1/2 tsp ground cumin
2 tsp paprika
2 tsp unsweetened cocoa powder
1 tsp granulated sugar

1 (15 oz) can dark red kidney beans, (drained and rinsed)
1 (15 oz) can light red kidney beans, ( drained and rinsed)

Steps:

  • Heat olive oil in a large and deep non-stick skillet over medium-high heat.
  • Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
  • Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
  • Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
  • Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
  • Cover with lid and cook on low heat for 5 - 6 hours.
  • Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.

Steps:

  • Gather the ingredients.
  • Dice chicken or cut it into strips. Put chicken pieces in slow cooker along with onion, bell pepper, garlic, drained and rinsed beans, tomatoes and tomato sauce, corn, chili powder, cumin, oregano, salt, pepper, and bay leaf. Stir to blend ingredients.
  • Cover and cook on high for 1 hour, then cook on low for 3 to 4 hours longer, or until chicken is cooked and tender. Optionally, you can simply cook on high for 3 to 4 hours.
  • Remove bay leaf.
  • Spoon chili into bowls and garnish with sour cream or shredded cheese and chopped fresh cilantro, if desired.

5 Slices thick sliced, hardwood hickory smoked bacon
1 Whole red bell pepper, chopped
1 Whole green bell pepper, chopped
3 Ribs of celery, chopped
1 Small, Whole Yellow Onion Diced
1 Whole Jalapeno Pepper
1 tsp Worcestershire sauce
2 10.5 oz cans Can Diced Tomatoes
1 can Pinto Beans
1 Can Kidney Beans
4 tbsp Chili Powder
1 tbsp dried oregano
1 tsp White Sugar
2 tsp Cumin
1 tsp smoked paprika
3 tsp Garlic Powder
1 tsp Basil
½ tsp Cracked Black Pepper
½ tsp cayenne pepper
1 tsp Lawry's seasoned salt
3 oz Tomato Paste
1 cup Beef Broth

Steps:

  • Step 1 Start off by getting your veggies ready first. Roughly chop the green pepper, removing the seeds along with the celery.
  • Step 2 Now seed a jalapeno, remember the seeds and membrane give the heat so remove more for lower heat less for higher heat chili. Now peel and dice the onion.
  • Step 3 In an iron pan on the stove you'll want to cook off the bacon, once done remove and drain on a paper towel. Now cook the veggies in the fat for about 5 mins or till soft and translucent. Drain as much of the left over fat off, now cook the ground beef in the same pan, use the back of a spatula to keep breaking the meat down while it fully cooks.
  • Step 4 Measure and mix all the spices in a small bowl
  • Step 5 Now it's time to put everything together in our slow cooker aka crockpot. Combine the beef consommé or beef stock with the tomato paste and stir together. Add the Worcestershire sauce along with your spices and blend all that together. Taste and adjust if needed. Add the tomatoes with the juice from the cans, add the beef and veggies, chop and add the bacon. Cover and cook on low for about 6 hours!
