- In a well-greased 3-qt. slow cooker, combine the first 6 ingredients. Cook, covered, on low until oats are tender, 7-8 hours. Stir in peaches just before serving., Pressure cooker option: Decrease water to 3 cups. Add to a 6-qt. electric pressure cooker coated with cooking spray. Stir in oats, soy milk, brown sugar, salt and vanilla. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 4 minutes. Let pressure release naturally. Stir in peaches just before serving. Oatmeal will thicken upon standing. If desired, top with optional toppings.

- In a glass bowl, mix peaches, sugar, pumpkin pie spice, nutmeg, and oats.
- Add milk, water, and vanilla. Stir gently to mix.
- Place bowl inside slow cooker.
- Pour enough water outside the bowl (inside the slow cooker) to come halfway up the side of the bowl. You are creating a "double boiler" effect inside the slow cooker.
- Cover and cook on low for 8 hours.
- Serve immediately.

- If you would like smaller pieces of peaches, strain the juice into the slow cooker and cut the peaches into bite sizes. Otherwise, just dump the peaches with their juice straight into the slow cooker.
- Add the brown sugar, cinnamon and salt and lightly stir it into the mixture.
- Slowly stir in the milk.

- Place all ingredients in a 2 quart slow cooker. (If you want to make a smaller amount please use a smaller crock pot or crockette. This won't work in a 6 quart cooker).
- Cover and cook on LOW 6-8 hours.
- It might form a "crust" around the outside. Just scrape it down with a spoon and stir.
