- In a 3-qt. slow cooker, combine the first 12 ingredients. Cover and cook on low for 7-8 hours or until meat is tender. Discard bay leaves., In a small bowl, combine cornstarch and water until smooth; stir into stew. Add corn and peas. Cover and cook on high for 30 minutes or until thickened.

VEGGIE AND SEITAN CROCK POT STEW
I recently moved in with my fiancee, and while I was cleaning out the kitchen, I discovered a brand new, unopened Crock Pot. Heck yes. This is my first attempt at making delicious things come out of it. I went to the grocery store, bought things that I like to eat, and put them all in the Crock Pot. Feel free to make substitutions. I don't like a whole lot of spices and seasoning, so add more if you feel it's necessary. You could also substitute one type of veggie for another based on your tastes, add more seitan, whatever. This is great for anyone who may have too many leftover veggies in their fridge!

- Cook the pasta and drain it.
- Chop up the vegetables.
- Combine all ingredients in your Crock Pot.
- Cook on high for 4 hours, or on low for 8.

- Sautee the seitan in a little bit of olive oil first, if you'd like. If you're pressed for time, you don't need to, but it will give the seitan a bit of extra flavor if you do.

- Layer the potatoes, carrots, onion and celery in a 5-qt. slow cooker. Place flour in a large shallow dish. Add stew meat; turn to coat evenly. In a large skillet, brown meat in oil in batches. Place over vegetables., In a large bowl, combine the tomatoes, broth, mustard, salt, pepper, thyme and, if desired, browning sauce. Pour over beef. Cover and cook on low for 7-8 hours, or until the meat and vegetables are tender. If desired, sprinkle with fresh thyme before serving.

MY WILD IRISH SEITAN STEW

Steps:
- Heat oil in large stew pot over medium heat.
- Add onions and celery and cook until soft, about 5 minutes.
- Add potatoes, carrots, garlic, stock, wine, bay leaves.
- Bring to a boil and reduce heat to low and simmer for 15 minutes.
- Add tamari, kale, muchrooms, thyme, salt and pepper, and cook until vegetables are tender, another 15 minutes or so.
- Optional: While stew simmers, brown seitan pieces in a small pan wit some olive oil just to get some color. Set aside.
- Stir together the cornstarch and water, add to pot and bring stew back up to a slow boil.
- Stir for about 1 minute until thickened.
- Add seitan, reduce heat and simmer gently for another 10 minutes.
