KIELBASA, CABBAGE, AND ONIONS (LOW-CARB SLOW COOKER CROCK POT)

- Coat the slow cooker crock with cooking spray. Add all the ingredients except the kielbasa to the crock, tossing so that the cabbage is well-coated with the broth and seasonings. Top mixture with kielbasa.
- Cover and cook on LOW for 7 hours; give mixture a good stir, then cook 1 hour more.

SLOW COOKER RED CABBAGE
Dig out your slow cooker for this delicious red cabbage. Braised cabbage makes the perfect side dish for a festive lunch or roast dinner

- Heat your slow cooker to Low. Peel the outer leaves from the cabbage and discard. Quarter the cabbage, removing the tough stem, then thinly slice. Arrange a layer of the cabbage on the bottom of your slow cooker, then top with some of the onions, apples, zest, mixed spice, sugar and some seasoning. Continue to create layers until you have used up these ingredients. Season.
- Pour over the vinegar and cider and dot the butter on top. Cover with a lid and cook for 4-5 hrs until tender. Will keep in the fridge, covered, for up to three days or in the freezer for up to two months. Reheat in a pan or in the microwave.

CROCK POT RED CABBAGE AND ONIONS
Steps:
- Spray a 3- to 4-quart slow cooker with nonstick cooking spray.
- Combine cabbage, red onion, and garlic in the prepared slow cooker.
- In a small bowl, combine vinegar, sugar, salt, white pepper, and water. Stir well to dissolve the sugar and salt.
- Pour over the cabbage in the slow cooker.
- Cover and cook on low, stirring twice during cooking time, for 6 to 8 hours until cabbage is tender. Serve immediately.

CROCK POT BAKED SPICED RED CABBAGE WITH APPLES OR PEARS
A delicious recipe using red cabbage, fragrant spices & apples or pears; whilst this is happily cooking away, the spicy smell pervades the kitchen & indeed the rest of the house and heralds the start of my festive baking & freezing season - who needs expensive pot-pourries! Not only is this dish delectable to eat alongside turkey, pork, beef and hams in particular - but the colour is just gorgeous, a rich jewelled ruby red! This cabbage can be kept warm for long periods, reheated and also freezes very well, making it a very well behaved recipe!!

Steps:
- Discard outer leaves of the red cabbage and ut into quarters. Cut out the central woody root and then shred the quarters very finely. Place in a bowl. Cut the apples or pears into quarters, core them & then slice into fine dice and set aside in another bowl.
- Place peeled and diced onions into another bowl & make sure all the other ingredients are measured and to hand!
- If cooking in a conventional dutch oven or Le Creuset type casserole dish, turn oven on to 180 C or 360°F It can be cooked on top of the stove too.
- For cooking in the crockpot - take the inner crock out and start layering the ingredients: Red cabbage, then salt & pepper; Apples or pears, onions & garlic, then the spices & brown sugar;keep layering this way until everything has been used up.
- (If you would like it slghtly spicier, add a little more spices, but no more than 1 teaspoon per spice, as it will be too spiced & will detract from the apple/pear & red cabbage flavours!).
- Dot the top of the red cabbage with the butter and pour over the red wine vinegar.
- Season once more with salt & pepper and cook for 6 to 12 hours on High in the crockpot, until everything has broken down, is soft and it is a rich red colour.
- For conventional cooking - cook for about 2 - 2 1/2 hours at 180 C or 360°F I.
- It can be cooked on the stove top too; takes about 2 - 3 hours on a low heat, just a slow simmer.
- Pears can be used as well, and I sometimes add a handful of cranberries for a really festive touch!
CABBAGE AND SAUERKRAUT FOR THE CROCK POT
Meatless slow cooker side dish. If you're a meat person, throw in some cooked ham, bacon or sausage.

- Place chopped cabbage into crock pot. Place sauerkraut and onions over top.
- In a mixing bowl, combine all remaining ingredients and mix well. Pour into crock pot.
- Cover and cook on low for 4-6 hours, or until cabbage is as tender as you want.

Steps:
- In a large heavy saucepan, over medium heat, heat the oil then add onion and cook for 5 minutes or until softened.
- Stir in cabbage, garlic and apples.
- Cook, stirring frequently, for 5 minutes or until cabbage begins to wilt.
- Stir in stock, vinegar, sugar and bay leaf.
- Reduce heat, cover, and simmer, stirring occasionally, for 45 minutes or until cabbage is soft and liquid has evaporated.
- Remove bay leaf and season with salt and pepper to taste.

- Dissolve beef bullion in the hot water.
- Add the vinegar, brown sugar, salt and pepper. Mix until well dissolved.
- Quarter cabbage and remove core.

You can braise this on the stove top as well in the crock pot! This is a long cooking recipe to make a very tender texture. The braised red cabbage of Alsace, counterbalances the fattiness making pork, duck or a traditional Christmas goose a great to serve with it. Seasoned with apples, ginger, cinnamon, coriander and nutmeg. Try even some lavender in it!

- It will be full but will cook down to about 1/5.
- Cook for 5 hours on low.

Steps:
- Place onion and cabbage in bottom of crock pot, season with 1/2 teaspoon each of red pepper and garlic.
- Put pork roast on top of vegetables and season with the rest of the spices.
- Pour barbecue sauce over all.
- Cook on low for 6-8 hours.
- Take roast out of crock pot and shred with two forks.
- If you want a thicker sauce, put the temperature on high then mix the water and cornstarch and put it in the crock pot while you are shredding the pork.
- Eat on kaiser or Portuguese buns and enjoy!
