1/2 cups butter (softened)
1.5 cups brown sugar (packed)
15 oz can of pumpkin
3 eggs
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoons baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
20 oz can of apple pie filling
chopped pecans (to taste)
12 oz container of thawed frozen whipped topping

Steps:

  • Mix together your butter and brown sugar with an electric mixer on low.
  • Once that is well blended, add your pumpkin and egg and beat until it is all mixed together.
  • Grab another bowl and sift together your flour, baking powder, baking soda, cinnamon and salt.
  • Add your flour mixture to your butter mixture slowly and beat for approximately 2 minutes.
  • Spray your slow cooker with a non-stick cooking spray.
  • Spread your apple pie filling evenly in the bottom of your slow cooker.
  • Pour your cake batter over your pie filling and sprinkle with nuts.
  • Cover and cook on high for around 1-1/2 hours. It is done when it can pass the toothpick test.
  • Serve it up with a dollop of whipped topping and enjoy.

1 1/4 cups packed brown sugar
1 cup canned pumpkin (not pumpkin pie mix)
3/4 cup fat-free cholesterol-free egg product
1/3 cup vegetable oil
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
Ice cream, if desired

Steps:

  • Spray 3 1/2- to 6-quart slow cooker with cooking spray. Spoon pie filling into cooker; spread evenly.
  • Beat remaining ingredients except ice cream with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter over pie filling.
  • Cover and cook on High heat setting 1 hour 30 minutes to 2 hours or until toothpick inserted in center comes out clean. Serve with ice cream. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

1 c canned solid pumpkin
3/4 c fat free cholesterol-free egg product
1/3 c vegetable oil
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp baking soda
ice cream

Steps:

  • 1. Spray a 3 1/2 to 6 quart slow cooker with cooking spray. Spoon pie filling, spread evenly. Beat remaining ingredients except ice cream with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter over pie filling. Cover and cook on High heat setting 1 hour and 30 minutes to 2 hours or until toothpick inserted in center comes out clean. Serve with ice cream.
  • 2. NOTE: Other pie filling and complimentary spices may be used also. Also try whole cranberry sauce and blueberry pie filling combined and instead of apple pie filling and pumpkin. and use complimentary spices.

6 granny smith apples, peeled, cored and sliced
1 cup oatmeal
1 cup brown sugar
1/3 cup flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon vanilla
1/2 cup butter or 1/2 cup margarine, melted
1/2 cup pecans (optional)

Steps:

  • Mix oatmeal, sugar, flour, pecans and spices in a small bowl.
  • Stir melted butter and vanilla into mixture until it is crumbly.
  • Put half of the sliced apples in crock pot and spoon half of oatmeal mixture on top.
  • Cover with remaining apples and top with the rest of the crumb topping.
  • Cook on high about 2 1/2 hours.

  • In a large bowl, whisk together pumpkin puree, ½ cup pure maple syrup, spices, and salt until well combined. Stir in apple slices. Transfer the mixture to your slow cooker insert.
  • In a medium bowl, stir together oats, white whole wheat flour and cinnamon. Use your fingertips to work the butter into the oat mixture until the mixture clumps together and the butter pieces are small. Stir in the ¼ cup maple syrup. Crumble the topping evenly over the filling in the slow cooker.
