"SECRET'S IN THE SAUCE" BBQ RIBS

4-1/2 pounds pork baby back ribs
1-1/2 teaspoons pepper
2-1/2 cups barbecue sauce
3/4 cup cherry preserves
1 tablespoon Dijon mustard
1 garlic clove, minced

Steps:

  • Cut ribs into serving-size pieces; sprinkle with pepper. Place in a 5- or 6-qt. slow cooker. Combine the remaining ingredients; pour over ribs. Cook, covered, on low until meat is tender, 6-8 hours. Serve with sauce.

1 lb dried apricots
1 3/4 c sugar
3 1/2 c water

Steps:

  • 1. In a food processor, process the apricots until very finely chopped. (I use my pulse feature). Transfer to slow cooker. Stir in sugar and water.
  • 2. Cover and cook on high setting 2 1/2 hours, stirring twice, if possible. Uncover and cook on high, stirring occasionally, 2 hours longer, or until the jam has thickened.
  • 3. Ladle the jam into clean, hot canning or jam jars; seal according to the manufacturer's instructions with lids and ring bands. Process in a boiling water bath 10 - 15 minutes. Or let jam cool and store in refrigerator up to 3 weeks. For longer storage, freeze up to 3 months. I have frozen this, and works very well. Using my food saver.
  • 4. For Apricot - Orange Jam: Stir in 1 Tbsp grated orange zest at the end of the cooking time..

3 lbs pears (cored and sliced)
1/3 cup water
2 tbsp lemon juice
3 tbsp brown sugar

Steps:

  • Combine pears, water, lemon juice, and brown sugar in the slow cooker. Set to high for 4 hours.
  • When 4 hours has passed, blend the pear mixture with an immersion blender or mash until mostly smooth. Set to low for another 6 to 8 hours. The time will depend on how ripe the pears were initially. For overripe pears, 6 hours is plenty of time. Less ripe pears will likely take the full 8 hours.
  • Stir and transfer to a mason jar or airtight container. Store in the fridge for up to 2 weeks.

This super-convenient ham leaves your oven free for all the sides. For an easy variation on the glaze, try peach or pineapple preserves.

1/2 cup apricot jam
1/2 cup Dijon mustard
1/2 cup packed light brown sugar
Freshly ground black pepper
One 4- to 5-pound spiral-cut ham

Steps:

  • Whisk together the jam, mustard, sugar and 1/4 teaspoon black pepper in a small pot. Bring the mixture to a boil to melt the sugar, whisking occasionally. Reduce the heat to a simmer until the mixture thickens, about 2 minutes. Remove from the heat, and reserve.
  • Add 3/4 cup water to the insert of a 6-quart slow cooker. Place the ham in the insert on its side, and brush lightly with the glaze. Cover, and cook on low until the ham is hot throughout, 6 to 7 hours. Refrigerate the remaining glaze.
  • When the ham has about 10 minutes left to cook, reheat the glaze in a small saucepan over medium-low heat, stirring frequently.
  • Transfer the ham to a carving platter or serving dish, and brush with enough glaze to make a glossy, sticky coating. Slice, and serve with the remaining glaze on the side.

Steps:

  • In a food processor, chop the apricots finely.
  • Place in a crock pot with the sugar and water and stir.
  • Cover and cook on HIGH for 2 1/2 hours, stirring twice, if possible.
  • Uncover and cook on high, stirring occasionally, 2 hours more, or until it has thickened Ladle into clean, hot jam jars and seal.
  • Process in a boiling water bath for 10 to 15 minutes.
  • Or keep refrigerated for up to 3 weeks.
