Tender juicy meatballs in an easy tomato sauce requires very little prep and has amazing flavor!

Number Of Ingredients 12

1 ½ pounds lean ground beef
⅓ cup Italian bread crumbs
¼ cup onion (finely diced)
1 teaspoon Italian seasoning
1 egg
¼ cup parsley (fresh, chopped)
¼ cup parmesan cheese
24 ounces pasta sauce
2 cloves garlic
14 ounces crushed tomatoes (canned)
28 ounces diced tomatoes (canned, undrained)
1 teaspoon Italian seasoning

Steps:

  • Spray slow cooker with cooking spray.
  • Combine all meatball ingredients in a bowl. Using a tablespoon, form 24 meatballs. Place uncooked meatballs in the bottom of the slow cooker.
  • Combine all sauce ingredients in a large bowl. Pour over meatballs and cook on high for 3-4 hours.
  • Serve over pasta.

This meatloaf is a breeze to make, holds together and slices nicely- a problem I have had with meatloaves in the past. It is a sure winner from my mother-in-law, who is a fabulous cook. Feel free to experiment with Ro-Tel tomatoes or other ingredients.

2 eggs, beaten
3/4 cup milk
3/4 cup dry breadcrumbs
1 (1 ounce) envelope dry onion soup mix
2 lbs lean ground beef

Steps:

  • To remove loaf when done, line crock with wide strip of aluminum foil, coming up sides of crock.
  • In a large bowl combine eggs, milk, bread crumbs, and soup mix. Mix well, then add meat. Mix thoroughly, then shape into a rectangle or oval that won't touch sides of crock. Place in crock. Cover and cook on low for 6 hours or high for 3 hours.

Our favorite meatloaf recipe does great in the slow cooker. Made with familiar flavorings that have stood the test of time, this meatloaf is as classic as it gets. And it's about as easy as it gets, too-just toss together the ingredients, set your loaf in a foil-lined slow cooker and forget it! Your meal will be ready in 3 to 4 hours, and you don't need to be stuck in the kitchen in the meantime. And lucky you if there are leftovers-we love using this for meatloaf sandwiches the next day!

1 1/2 lb lean (at least 80%) ground beef
1 cup milk
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 clove garlic, finely chopped, or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup

Steps:

  • Line 4 1/2- to 5-quart slow cooker with foil. Spray foil with cooking spray.
  • In large bowl, mix all ingredients except ketchup. Shape mixture into loaf, and place in center of slow cooker. Spread ketchup over top.
  • Cover; cook on Low heat setting 3 to 4 hours or until meat thermometer inserted in center of loaf reads 160°F. Remove meatloaf from slow cooker to serving platter. Cut into pieces to serve.
