This recipe came from the desire to make a pot roast, but all I had on hand was a London broil. I made this on the fly, and it turned out great. My wife took the leftovers to work and everyone wanted the recipe. I hope you all like it.

2 tablespoons vegetable oil, or as needed
1 (2.5 pound) London broil, cut into thirds
1 teaspoon Creole seasoning, or to taste
2 cups beef broth
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup red wine
1 onion, sliced
1 (16 ounce) package baby carrots
3 potatoes, quartered, or more to taste

Steps:

  • Scatter sliced onion in the bottom of a slow cooker, then alternately layer carrots and potatoes.
  • Heat oil in a large skillet over medium heat and season London broil with Creole seasoning. Sear beef in hot oil until well browned, 3 to 5 minutes per side. Transfer meat the slow cooker.
  • Pour beef broth, cream of mushroom soup, and red wine into the skillet used to cook the beef and bring to a simmer. Scrape any brown bits from the bottom of the skillet with a spatula. Pour broth mixture over beef.
  • Cook on Low for 8 to 10 hours or cook on High for 6 hours.

Steps:

  • Place the London broil in a slow cooker; add the garlic, mushroom soup, water, basil, oregano, and salt; cover; cook on low 6 to 7 hours.

2 lb London broil
1 pkg ranch style dressing mix
1 pkg au jus gravy mix
6 medium pepperoncini peppers
1/2 stick butter, cut up
8 medium red potatoes, whole

Steps:

  • 1. Spray bottom and sides of a 6 quart oval Crock Pot with cooking spray to make clean up easier.
  • 2. Place London broil in the bottom of Crock Pot.
  • 3. Sprinkle the ranch dressing mix on the meat. Spread it around so it covers the top.
  • 4. Sprinkle the au jus mix on the meat. Spread it around so it covers the ranch mix.
  • 5. Remove stems and place the pepperoncini on top of the powdered mixes.
  • 6. Add the cut up butter to the top of the mixes.
  • 7. Add the potatoes around the outer edge of the meat. They do not have to sit on the bottom. DO NOT ADD ANY LIQUID!!!!
  • 8. Cover and cook for 4 hours on high or 8 hours on low.
  • 9. Remove potatoes. Cut meat into serving pieces and stir into sauce in bottom of Crock Pot. Return potatoes to pot. Serve

This is some thing that I just threw together tonight and it turned out really good. I paired it with the Mexican rice recipe and it was wonderful.

2 16 oz jars Newman's Own Bandito Chunky Salsa Peach
2 cans Low Fat Cream of Mushroom Soup
1 c. Chopped Green Peppers (bell peppers)
1 packet McCormic Reduced Sodium Taco Seasoning

Steps:

  • Start by pouring one can of soup in the crock pot, add 1/2 can of water and mix water in with soup.
  • Place London broil on soup and pour the other can of soup along with the jars of salsa on top of meat.
  • Turn crockpot on high and cook for 6 hours.
  • Half way through cooking remove meat from crockpot and shread meat, add taco seasoning, and green peppers.
  • Mix everything together and add meat back to the crockpot.
  • Let cook for another 2 -3 hours.
  • Makes 8 ~ 1 cup servings
