4-6 boneless, skinless chicken thighs
3 teaspoons minced garlic
1/2 cup soy sauce
1/3 cup honey
1/2 cup ketchup
1 teaspoon dried basil
1 1/2 teaspoons sriracha
1 1/2 teaspoons red pepper flakes
Cooked rice, for serving
Green onions, if desired

Steps:

  • Place chicken thighs in bottom of slow cooker.
  • In a medium bowl, mix together soy sauce, honey, ketchup, garlic, basil, sriracha and red pepper flakes. Pour mixture over chicken.
  • Cook on LOW for 4-5 hours, checking for doneness at 4 hours.
  • Serve chicken over rice and use remaining sauce to garnish. Top with green onions if desired.

3 garlic cloves, minced
¼ teaspoon crushed red pepper
1 tablespoon grated ginger or 2 teaspoons powder
Zest and juice of 1 lime
2 tablespoons brown sugar
¼ cup extra virgin olive oil, I used Colavita
1 large Spanish onion, sliced
2 tablespoons cider vinegar
½ cup raisins
1 cup diced mango (frozen works!)
8 chicken leg or thigh pieces
Kosher salt
Freshly ground black pepper

Steps:

  • Combine garlic, red pepper, ginger, lime zest and juice, brown sugar, evoo, onion, vinegar, raisins, mango, chicken, salt, and pepper in a reusable storage bag. Allow to marinate at least 4 hours or overnight. Preheat slow cooker to low. Transfer ingredients to slow cooker, cover, and cook for 4 hours. Serve with rice, potatoes and favorite vegetable. 2 boneless skinles chicken breasts (cubed, about 1.5 - 2 lbs total)
1 can pineapple chunks (15 oz, drained with juice set aside)
1/2 cup of pineapple juice
1/2 red pepper (cut into chunks)
1 tsp red pepper flakes (or less if you don't like the "spicy")
1 tsp salt
2 cloves of garlic (minced or pressed (or 2 tsp minced jarred garlic))
2 Tbsp chili sauce (either sweet chili or sirracha (depending on how hot you want it :))
1/4 cup sugar
3 Tbsp cornstarch + 1/2 cup cold water

Steps:

  • Place all ingredients in the slow cooker, except the cornstarch and water.
  • Cook on high for 4 hours (or medium for 6, or low for 8).
  • In a small sauce pan, whisk the cornstarch and water.
  • Heat sauce pan over medium heat while occasionally whisking.
  • Add 2/3 cup of the liquid from the slow cooker to the pan and whisk together until it thickens up.
  • Place thickened liquid into the slow cooker and stir in well.
  • Serve over white rice.

SLOW COOKER SWEET & SPICY CHICKEN (GF, DF)

3 lbs boneless, skinless chicken thighs
1 red bell pepper, seeded and sliced
1 yellow bell pepper, seeded and sliced
3 cups broccoli florets
2 cups all-fruit apricot jam
2 cloves garlic, minced
2 Tbsp coconut aminos
2 tsp dry mustard
2 tsp dried minced onion
2 tsp sea salt
1/2 tsp ground ginger
1/2 tsp red pepper flakes (use more for a spicier sauce)
2 Tbsp arrowroot powder (for thickening sauce)

Steps:

  • Cut chicken thighs into bite-size chunks and place into a 6-quart slow cooker.
  • Cut the veggies as noted above. Place in a bowl and refrigerate until ready to use, as noted below.
  • In a medium bowl, whisk together the apricot jam, garlic, soy sauce or coconut aminos, mustard, onion, salt, ginger, and red-pepper flakes. Pour over the chicken.
  • Cover and cook on low for 4 to 5 hours. Check chicken at the 4-hour mark, if it's not cooked through, continue cooking. Once the chicken is cooked through, add the sliced bell peppers and broccoli florets. Then, continue cooking on low until veggies are al dente (about 30-45 minutes).
  • Use a slotted spoon to remove chicken and veggies from slow cooker and place in a serving dish. Whisk in the arrowroot powder to thicken the sauce, if desired.
  • To serve, ladle the sauce over the chicken and veggies. Serve over basmati rice or cauli-rice.
  • To Freeze: Place the veggies into a freezer-safe container and freeze. Add the diced chicken to a separate freezer-safe container, top with the sweet-n-spicy sauce, and freeze.
  • To Prepare: Thaw the chicken mixture and veggies in the refrigerator overnight. When ready to cook, follow the instructions above beginning in Step 4. Easy and delicious!

1 1/2 cups brown sugar
1/3 cup water
1/3 cup soy sauce
1/4 cup Chinese vinegar
2 tablespoons sriracha
1 tablespoon minced garlic

1 tablespoon corn starch
1/4 cup water

Steps:

  • Mix brown sugar, water, soy sauce, vinegar, sriracha, garlic, and ginger together.

Steps:

  • Place chicken in a 4- or 5-qt. slow cooker.
  • In a large bowl, combine the tomatoes, enchilada sauce, garlic powder, paprika, salt, cumin and chipotle pepper; mix well and pour over chicken. Cover and cook on low for 3-4 hours or until chicken is tender.

  • Stir together the soy sauce, brown sugar, chili garlic paste, garlic, and ginger in the bottom of the slow cooker. Add the chicken and stir to coat the chicken completely.

  • Place the chicken in the slow cooker then add the rest of the ingredients. Start with 3 tablespoons hot wings sauce and add more at the end of cooking if you aren't sure how hot you want it.
  • Cook on low for 6-7 hours or on high 4-6 hours. When chicken can shred easily, remove to a cutting board and shred. Mix the chicken back in the crockpot and allow to cook 30 more minutes. Taste and add additional hot wings sauce, brown sugar salt, pepper if desired.**
  • Transfer chicken to a strainer and drain off any excess liquid.

1/2 teaspoon ground ginger
1/2 teaspoon red pepper flakes
1 cup sugar
1 cup white vinegar
1 cup chicken broth
6 tablespoons soy sauce
a pinch of red pepper flakes
1 teaspoon Simply Asia Sweet Ginger Garlic seasoning
2 tablespoons apricot jam or jelly
1 tablespoon corn starch
1 tablespoon water

Steps:

  • Add the chicken breasts to the slow cooker. Pour coconut milk over top, add ginger and ½ teaspoon red pepper flakes and stir until chicken is coated and spices are mixed in. Cook on low for 5 hours (*see post above for altering cook times).

1 small Sweet Onion (- thinly sliced)

1 Cup Shredded Carrots
1 Pound Dried Lo Mein Noodles
1 Cup Sweet Chili Sauce
3 TBS Low-Sodium Soy Sauce
3 cloves Garlic (- minced)
2 tsp Fresh Ginger (- grated)

Steps:

  • Season chicken thighs generously with salt and pepper. Transfer chicken to the bottom of the slow cooker insert.
  • Make the sauce: In a medium bowl, whisk together the ingredients for the sauce (sweet chili sauce, soy sauce, garlic and ginger). Pour the sauce over the chicken.
  • Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours, or until chicken is tender enough to shred.
  • Shred chicken: Remove the chicken from the slow cooker to a clean work surface. Shred or slice the chicken and return it back to the slow cooker, along with any juices or sauce that has accumulated on the work surface.
  • Add vegetables: Add in the onion, bell pepper, pineapple and carrots. Stir to combine. Cover and cook on HIGH for 15-20 minutes, or until the vegetables are tender.
  • Meanwhile, cook lo mein: Boil and drain lo mein noodles according to package directions. Either add the noodles to the slow cooker and stir well to coat, or transfer noodles to serving bowls and top with sweet chili chicken.
  • Serve immediately garnished with sesame seeds and green onions.

2 pounds ground beef (I used 80-20)
1 large onion (diced)
1 red bell pepper (diced)
1 green bell pepper (diced)
5 garlic cloves (minced)
2 large jalapeno peppers (minced (remove the seeds and veins for less heat...leave them for more heat))
1/4 cup chili powder
3 tablespoons ground cumin
2 tablespoons ground cayenne pepper (Or more if you like a lot of heat!)
2 tablespoon crushed red pepper
6 ounce jar of chopped sweet peppers and juice
1/2 cup packed light brown sugar
1 - 28 ounce can tomato sauce
1 - 28 ounce can crushed fire roasted tomatoes (I use Muir Glen Organic)
salt and pepper to taste

Steps:

  • In a large frying pan, brown the ground beef until no longer pink and transfer to the slow cooker using a slotted spoon. Drain off all but two tablespoons of fat and add the onions to the pan.
  • Cook the onions over med-high heat until they begin to soften. Add the peppers to the onions and sauté until softened. Add the garlic and jalapeno peppers, cooking for one minute longer. Transfer the mixture to the slow cooker with the beef.
  • Add the chili powder, cumin, cayenne pepper, crushed red pepper, sweet peppers and juice to the beef mixture and stir to combine.
  • Add the brown sugar, tomato sauce and crushed tomatoes stirring thoroughly to be sure all the ingredients are incorporated. Season with salt and pepper to taste and cook in the slow cooker on high for 3-4 hours or low for 5-6 hours.
  • Serve with your favorite chili toppings, we love greek yogurt, sour cream, shredded cheddar, green onions, and pickled jalapenos...just to name a few.

Steps:

  • Pull cooked chicken meat apart with two forks to shred. Remember to save half of the meat for tomorrow's Indian chicken wraps!
  • Assemble salad by topping the shredded romaine with the corn and pumpkin seeds. Toss with dressing and season to taste with salt and pepper.

8 chicken thighs
1/2 cup or 120ml water
1/4 cup, firmly packed or 50g brown sugar
1 thumb-size piece fresh ginger - about 50g, peeled and grated
3 cloves garlic, peeled and minced
5 tablespoons soy sauce
3 tablespoons Datil Fire hot sauce or your favorite hot sauce, to taste
3 tablespoons honey
2 tablespoons cornstarch
1 teaspoon dark soy for color, Kitchen bouquet or similar works too if you can't find dark thick soy.

Steps:

  • Mix all of the sauce ingredients together, stirring well to dissolve the sugar and the cornstarch.
  • Put the chicken thighs in the slow cooker, skin side down.
  • Pour the sauce over the top. Cover the slow cooker tightly.
  • Cook on high for 1 1/2 hours.
  • Turn the chicken thighs over, give the sauce a stir and cover again. Cook for an additional 1 1/2 hours.
  • Serve over rice (white or brown) with lime wedges, plus additional garnishes.
  • Lime sections - a good squeeze of lime elevates this dish. Don't skip the lime.
  • Crushed red pepper flakes - for more heat, if desired
  • Sesame seeds
  • Toasted sesame oil - just a drizzle
  • Chopped cilantro
