600g plums, halved and stoned
50g golden caster sugar
4 tbsp cold water
2 cinnamon sticks

Steps:

  • Put 600g ripe plums, halved and stoned, in a large bowl, add caster sugar and cold water. Stir and add 2 cinnamon sticks.
  • Cover with cling film and pierce several times. Cook on high (900W) for 5-6 minutes.
  • Discard the cinnamon and serve warm.

  • Tip the dried fruit, orange juice and whole spices into a microwaveable bowl. Microwave on High for 4-5 mins, stirring halfway through until the juices become sticky and the fruits are plump.
  • Leave the compote to stand for a minute and serve in bowls with spoonfuls of yogurt or fromage frais.

Steps:

  • Place brandy, vanilla bean seeds and pod, prunes, apricots, and raisins in a medium saucepan with 2 cups water. Bring to a boil, then reduce to a simmer. Simmer fruit until liquid is reduced by about three-quarters. Serve warm over hot cereal.
