2 (14.5 ounce) cans stewed tomatoes, undrained
1 pound skinless, boneless chicken thighs, cut up
1 (14.5 ounce) can reduced-sodium chicken broth
1 green sweet pepper, chopped
1 large onion, chopped
2 stalks celery, chopped
1 tablespoon Cajun seasoning
3 cloves garlic, minced
¼ teaspoon ground black pepper
¼ teaspoon cayenne pepper
1 pound fresh or frozen medium shrimp (thawed if frozen), peeled and deveined
4 cups hot cooked white or brown rice

Steps:

  • Line a 5- to 6-quart slow cooker with a Reynolds® Slow Cooker Liner.
  • Add tomatoes, chicken, broth, green pepper, onion, celery, Cajun seasoning, garlic, black pepper, and cayenne pepper to prepared slow cooker. Stir gently with wooden spoon or rubber scraper to combine.
  • Cover and cook on low for 6 hours.
  • Remove lid and stir in shrimp gently with a wooden spoon or rubber scraper. Cover and cook about 3 minutes more, or until shrimp is opaque. Serve over cooked rice.

1 lb Smoked Sausage (kielbasa, farmers sausage, garlic sausage, etc)
1 lb Shrimp (raw and shells removed (I left tails on for more flavor))
1 Onion (diced)
1 Green pepper (diced)
1 Hot pepper ((jalapeno, serrano, scotch bonnet, habanero, etc) (optional!!!))
3 ribs Celery (diced)
28 oz Diced tomatoes (28 oz)
3 tsp Garlic (minced)
2 C Chicken broth
1 Tbsp. Cajun spice (or more if you prefer)
1 tsp Thyme
1 tsp Oregano
1 1/3 C Rice (cooked)

Steps:

  • Combine all ingredients in the slow cooker, except for the shrimp and the rice.
  • Cook on low for 6 - 7 hours, stirring occasionally
  • In last hour of cooking, salt the shrimp lightly, and then add them to the crockpot
  • In the last half hour of cooking, add the rice and stir. Replace cover. You want the rice just to warm through and take on some of the cooking flavors.
  • Serve with crusty bread, and enjoy!

1/4 C Canola Oil (or Butter)
1/4 C flour
2 T Canola Oil ( or Butter)
2 Ribs of Celery
1 Lb Okra (sliced up)
1 Qt Chicken Broth
1 Onions (chopped)
1 can Diced Tomatoes (with juice)
3 Cloves of Garlic
2 T Worcestershire Sauce
Cajun/Creole Seasoning (to taste)
1 T Old Bay Seasoning
1 Lb Large Raw Shrimp (Peeled; deveined)
12 Oz Crawfish
6 oz lump crab meat
Cooked white rice

Steps:

  • In a large skillet or browning crock pot (we used our Ninja) add 1/4 cup of oil or butter and heat over medium high heat. (3-5 minutes)
  • Add flour and continually stir until flour browns to the color of peanut butter (about 20-25 minutes)
  • In a separate skillet heat 2 Tbsp oil.
  • Add okra, garlic, onions and celery to oil and saute until all veggies are wilted and onions are clear.
  • Add veggies and flour and oil/butter mixture together in your slow cooker and stir.
  • Stir in chicken broth.
  • Add worcestershire sauce, tomatoes, and Old Bay seasoning and stir well.
  • Cover and cook for 3 hours on HIGH
  • Add seafood and cook for 30 minutes on HIGH until shrimp is opaque.
  • Add creole/cajun seasoning to taste.
  • Serve over cooked rice.

1/3 cup cooking oil
1/3 cup all-purpose flour
1 large onion, diced
2 bell peppers, diced (Red, Green or Yellow)
1 -2 jalapeno pepper

1 lb andouille sausages or 1 lb chorizo sausage
1 lb shrimp (optional)
1 1/2 lbs chicken
4 garlic cloves
1 tablespoon oregano

Steps:

  • Make a roux: Combine cooking oil and all-purpose flour in a small saucepan and heat on medium low for 15 to 20 minutes stirring regularly until it turns a chocolatey brown. Black lumps means you've burned it ;).
  • Meanwhile dice your vegetables and place them in the slow cooker.
  • Slice the sausages into discs and fry them until golden brown, add to slow cooker.
  • Cube the chicken and fry until no pink remains, add to slow cooker.
  • Pour roux over contents of slow cooker.
  • Add 4 cups of chicken stock to slow cooker.
  • Add spices to slow cooker, stir well.
  • Cook on low for 8 hours or high for 5 hours.
  • Optionally add cooked shrimp and heat for an additional 20-30 minutes.
  • Serve over a bed of rice prepared as per it's package instructions.

2 cups frozen cut okra
1 large onion, chopped

1 can (14.5 ounce size) diced tomatoes, undrained
1 package (12 ounce size) frozen shelled deveined cooked medium shrimp, rinsed

Steps:

  • In small saucepan, combine flour and oil; mix well. Cook, stirring constantly, over medium-high heat for 5 minutes. Reduce heat to medium; cook, stirring constantly, about 10 minutes or until mixture turns reddish brown. Place flour-oil mixture in 3 1/2 to 4 quart Crockpot.   • Let the roux cool.

SEAFOOD GUMBO (CROCK POT)

This is a classic Creole recipe. There are many different opinions about what it should contain, okra of file powder (made from dried sassafras leaves) being the only constants. This version, although simple, is unconventional since it is not thickened with a well cooked roux. It is absolutely delicious nonetheless.   • TIP: Large cans of tomatoes come in 28 oz. (796 mL) and 35 oz (980 mL). In this recipe use the 28 oz. (796 mL) size. If you are using the 35 oz. (980 mL) size, drain off 1 cup liquid before adding to recipe.
  • Okra, a tropical vegetable, is a great thickener for broths and sauces, but becomes unpleasantly sticky when overcooked. Choose young okra pods, 2 to 4 inches long, that don't feel sticky to the touch, which means they're too ripe. Gently scrub the pods, cut off the top and tail and slice, if desired.
  • Look for Serrano chilies in Asian grocery stores or well stocked supermarkets. They are long and thin, usually green, but sometimes red, and about the size of a baby finger. (The green variety has been described as a "skinny jalepeno.").
  • MAKE AHEAD: This dish can be partially assembled the night before it is cooked. Combine ingredients in Step 1 and refrigerate overnight. The next day, continue with Step 1 as directed. For added convenience, prepare the okra, green pepper and chili peppers. Combine in a bowl, cover and refrigerate overnight. CROCK POT GUMBO

I love Gumbo and I love my crock pot. I decided to see if I could make a good version utilizing the crock pot so I could do other things while it was cooking. This version passed the spouse test! Feel free to experiment with your seasonings - especially the crushed red pepper. Add some cayenne if you like it hotter. Just remember...you can always add more, but it's hard to make it less spicy if you over-do it. If you don't do shellfish, just omit it and add more chicken and sausage. To save a little time, get your water boiling for the chicken breast and cook it while you are stirring the roux.

1/2 cup butter
1/2 cup flour
1 lb frozen mixed vegetables, gumbo mix (should include celery, onion, bell pepper, corn and okra)
1 (28 ounce) can tomatoes

1 large boneless skinless chicken breast
1/2 lb crawfish tail meat
1/2 lb shrimp, shells removed
3 ounces andouille sausages, cut into bite size pieces

Steps:

  • Put the tomatoes and frozen vegetables in the crock pot on high heat.
  • Make a roux by melting the butter and flour in a large skillet and stir constantly until roux is a light caramel color (about 20 minutes) on medium heat - do not burn the roux! Lower heat is better, but will take longer. Add the cooked roux to the crock pot.
  • Add the bouillon cubes, water, crushed red pepper and bay leaves.
  • Boil the chicken breast in a pot of water on the stove until no pink remains, let cool and then shred the meat by hand and add to the crock pot.
  • Add the andouille sausage and let everything cook on high for about 4-5 hours.
  • About 45 minutes before you want to eat, add all the seafood to the pot and season to taste with salt, pepper, herbs and your favorite seasoning blend(s). Serve over hot, cooked rice and garnish with chopped green onion. Hot pepper sauce and gumbo file seasoning are optional and should be added to each bowl by the person who will be eating it.

1/2 cup Gold Medal™ all-purpose flour
1 teaspoon Cajun seasoning
1 teaspoon dried thyme leaves
3 cups beef stock, warmed
1 can (14 oz) diced tomatoes
4 cups cooked white rice
1/4 cup chopped green onions (4 medium)

Steps:

  • Spray 6-quart slow cooker with cooking spray.
  • Heat 10-inch skillet over medium heat. Drizzle with olive oil, and add sausage. Cook about 7 minutes, stirring occasionally, until sausage lightly browns; spoon into slow cooker. In same skillet, add onion, bell pepper and celery. Cook until crisp-tender, stirring occasionally; add to slow cooker. In same skillet, add chopped chicken. Cook until no longer pink, stirring occasionally; add to slow cooker. Add okra to slow cooker.
  • In heavy or cast-iron skillet, heat vegetable oil over medium-low heat. Using whisk, beat in flour; add Cajun seasoning and thyme. Continue to beat and cook 15 to 20 minutes, making roux that is brown and smells very nutty. Add beef stock, and beat well with whisk. Heat to boiling, beating constantly. Cook until thickened; add to slow cooker.
  • Add diced tomatoes to slow cooker; stir well. Cover; cook on Low heat setting 6 hours.
  • Serve gumbo with rice. Garnish with green onions before serving.

3 tablespoons all-purpose flour
3 tablespoons vegetable oil
1/2 pound smoked sausage (cut into 1/2 inch slices)

1 1/2 cups sliced frozen okra
1 cup chopped onion
1/2 cup chopped green bell pepper

Steps:

  • Gather the ingredients.
  • With the tip of a sharp knife, make a shallow cut down the back of each shrimp. Peel the shrimp, remove the dark veins.
  • Rinse the shrimp under cold running water.
  • Bring a small saucepan of lightly salted water to a boil. Add the shrimp and cook for about 2 minutes, or until they are pink and opaque.
  • Drain and transfer the shrimp to a bowl. Cover and refrigerate.
  • To make the roux, wipe the saucepan out with a paper towel and add the flour and oil, mixing well. Place the saucepan over medium heat.
  • Cook for 8 to 10 minutes until the mixture turns a light reddish-brown. Stir constantly to prevent scorching. If the roux is turning dark too quickly, reduce the heat to medium-low.
  • Transfer the roux to the crock pot.
  • Add all the gumbo ingredients but the shrimp to the crockpot. Cover and cook on low for 7 to 9 hours.
  • Add the cooked shrimp to the gumbo and mix well. Cover and continue to cook on low for 15 to 20 minutes.
  • Meanwhile, cook the rice in the chicken stock or water, following the package directions.
  • Serve the gumbo over the hot cooked rice along with crusty French baguettes , cornbread , or biscuits .

1 onion (chopped)
1 green pepper (chopped)
3 stalks celery (chopped)
1 lb boneless chicken breast
1 lb andouille sausage (or skinless smoked)
1 lb shrimp (raw, peeled)
1 dash Tabasco sauce
salt
pepper
file powder

Steps:

  • Roux:.
  • Fry bacon and set aside on paper towels.
  • Reserve 6 tbs. bacon grease.
  • In a skillet on low heat, add 4 tbs. of bacon grease, flour and cajun seasoning.
  • Brown flour slowly, stirring constantly, until dark copper brown. Be careful not to burn flour.
  • Gumbo:.
  • Transfer roux to crock pot.
  • Lightly saute garlic, onion, celery and green pepper in 2 tbs. of bacon grease and add to crock pot.
  • Crumble bacon and add to crock pot.
  • Brown chicken, cube and add to crock pot.
  • Slice sausage and add to crock pot.
  • Add 8 cups of hot water to crock pot and stir until water and roux are blended.
  • Cook on low heat for 6-8 hours.
  • Just before serving add shrimp to crock pot and cook until shrimp turn pink.
  • Serve over cooked rice and sprinkle lightly with file powder.
